This is the best dessert for the early fall when the sweet and firm apples are just in season. Use the best quality cinnamon you can get and get it from a spice merchant or even a store where you can get it bulk; it does make a difference. Within ten minutes of going in the oven the scent will fill the house and neighbors you loaned things to years ago will return them just to invite themselves in and wonder aloud if there is any left (Note: there isn't). Optional accompaniments would be caramel sauce, ice cream, and whipped cream.

6 apples - peeled, cored, and sliced
2 tablespoons white sugar
½ teaspoon ground cinnamon
1 cup brown sugar
¾ cup old-fashioned oats
¾ cup all-purpose flour
1 teaspoon ground cinnamon
½ cup cold butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Toss apples with white sugar and 1/2 teaspoon cinnamon in a medium bowl to coat; pour into a 9-inch square baking dish.
  • Mix brown sugar, oats, flour, and 1 teaspoon cinnamon in a separate bowl. Use a pastry cutter or 2 forks to mash cold butter into the oats mixture until the mixture resembles coarse crumbs; spread over the apples to the edges of the baking dish. Pat the topping gently until even.
  • Bake in preheated oven until golden brown and sides are bubbling, about 40 minutes.

3/4 cup Gold Medal™ all-purpose flour
3/4 cup old-fashioned oats
1/2 cup packed brown sugar
1/2 teaspoon ground cinnamon
1/2 cup cold butter, cut in pieces
6 cups chopped (3/4-inch pieces) peeled tart apples (6 medium)
1/2 cup granulated sugar
2 tablespoons Gold Medal™ all-purpose flour
1/2 teaspoon ground cinnamon
1 teaspoon lemon juice

Steps:

  • Heat oven to 375°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray.
  • In medium bowl, mix 3/4 cup flour, the oats, brown sugar and 1/2 teaspoon cinnamon until blended. Cut in cold butter, using fork or pastry blender, until mixture is crumbly. (Do not overmix.) Set aside.
  • In large bowl, mix Filling ingredients until well coated. Spread evenly in baking dish. Sprinkle streusel over top.
  • Bake 30 to 35 minutes or until topping is golden brown and juices are bubbling along edges.
  • Cool at least 20 minutes before serving.

¾ cup maple syrup
½ cup all-purpose flour
½ cup rolled oats
½ cup brown sugar

I found this recipe on the back of the Country Choice Organic Oven Toasted Oats container. I followed all of the directions except I used a 9X13 in baking pan and added 1/8 cup of ground flax meal for extra fiber. My kids couldn't tell the difference and LOVED it! A very yummy source of whold grain fiber. It states that you can substitute peaches or pears for the apples but the next time I am going to try comblining fruits.

6 cups peeled thinly sliced organic apples (substitute peaches or pears for the apples) or 6 -8 medium apples (substitute peaches or pears for the apples)

- streusel filling:
- 1 1/2 cups flour
- 3/4 cup sugar
- 3/4 cup packed brown sugar
- 1/4 tsp. salt
- 2 sticks cold unsalted butter, diced, 16 tbsp.
- 3/4 cup old fashioned rolled oats
- 3/4 cup chopped pecans
- filling:
- 3/4 cup dried cranberries
- 3/4 cup brandy, boiling
- 4 lb. granny smith apples, peeled, cored and cut into 1/2 inch thick slices, about 9 apples
- 3/4 cup pure maple syrup
- 2 tbsp. fresh lemon juice
- 2 tbsp. flour
- 3/4 tsp. ground cinnamon
- 1/4 tsp. salt

Steps:

  • Preheat oven to 350. For streusel, whisk together 1 1/2 cups flour, sugar, brown sugar and 1/4 tsp. salt in bowl. Cut butter into flour mixture using a pastry blender til butter is pea sized
  • Mix oats and pecans into flour mixture with your hands til thoroughly mixed. Cover and refrigerate
  • For filling, soak cranberries in brandy, covered, til plumped, 20 minutes. Drain brandy and save for another use. Toss together apples, plumped cranberries, maple syrup, lemon juice, 2 Tbs. flour, cinnamon and 1/4 tsp. salt in large bowl. Transfer apple mixture to a 9 x 13 three quart baking dish. Cover apples with streusel and bake til apples are tender, about 50 minutes. Let apple crisp rest on cooling rack 30 minutes before serving. Serves 8
