GRILLED CHICKEN WITH MANGO-RIESLING MARINADE



Grilled Chicken with Mango-Riesling Marinade image

This is a sweet marinade great for chicken. We use the chicken on top of a garden salad or wrapped in tortillas with hummus and veggies.

1 mango - peeled, seeded, and cubed
3 cloves garlic
⅓ cup water
2 tablespoons fresh lemon juice
2 tablespoons olive oil
½ cup dry Riesling wine
¼ teaspoon ground dried thyme
¼ teaspoon dried oregano
¼ teaspoon dried cilantro
¼ teaspoon onion powder
8 (6 ounce) skinless, boneless chicken breast halves

Steps:

  • Place mango, garlic, water, lemon juice, olive oil, and Riesling into a blender. Season with thyme, oregano, cilantro, and onion powder. Blend until smooth.
  • Pour 2/3 of the marinade into a resealable plastic bag. Add the chicken breasts, seal, and mix until chicken is coated. Place in the refrigerator to marinate 5 to 6 hours. Store the remaining marinade in a sealed container.
  • Preheat an outdoor grill for medium-high heat.
  • Remove chicken breasts from marinade, shake off excess, and discard remaining marinade. Grill chicken until no longer pink in the center, about 10 minutes per side. Brush chicken with the reserved marinade during the final 5 minutes of cooking.

2 tablespoons minced ginger
2 garlic cloves, minced
1/4 cup rice wine vinegar
1/2 cup lime juice
2 tablespoons brown sugar
1/4 cup oil
1 tablespoon sesame oil
1 -2 tablespoon chopped cilantro
2 lbs large shrimp, peeled and deveined
1 bunch scallion, cut into 1-inch lengths
1 large red bell pepper, cut into 1-inch dice and blanched
1 firm mango, peeled and cubed

Steps:

  • In a large bowl, whisk together ginger, garlic, rice wine vinegar, lime juice, brown sugar, oil, sesame oil, and cilantro. Add the shrimp. Toss to coat shrimp; cover and refrigerate for 1 hour.
  • Remove shrimp from marinade. Pour marinade into a small saucepan. Bring to a boil and boil for one full minute. Remove from heat.
  • Alternately thread shrimp, scallions, peppers and mango on skewers. Place skewers in center of cooking grate. Grill 4 to 6 minutes until shrimp turn pink and opaque, turning once halfway through grilling time, basting with reserved marinade. Serve warm over rice.

2-inch piece fresh ginger, peeled
1/4 cup fresh mint, chopped
1/4 cup fresh cilantro, chopped
1 tablespoon cumin seed, toasted and crushed
1/4 cup cider vinegar
1 shallot, roasted
1 garlic clove, roasted
1/3 cup olive oil
1/2 teaspoon kosher salt
1/4 teaspoon cracked black pepper
1 pound medium shrimp, peeled and deveined

Steps:

  • In a blender, pulse together all ingredients. Puree mixture for 30 seconds. Pour into a plastic zip-lock bag, add shrimp and marinate for 1 hour in the refrigerator.

2 racks pork spareribs (about 6 1/2 pounds)
1 cup dry Sherry
1/2 cup soy sauce
1/4 cup oriental sesame oil
1/4 cup mango chutney
2 tablespoons honey
2 green onions, finely chopped
1 tablespoon finely chopped peeled fresh ginger
4 large garlic cloves, minced
1 teaspoon cayenne pepper

Steps:

  • Arrange rib racks in large roasting pan. Whisk all remaining ingredients in bowl. Pour marinade over ribs, turning to coat. Cover; chill overnight, turning ribs once.
  • Position 1 oven rack in top third of oven and 1 rack in bottom third of oven; preheat to 300°F. Drain ribs; reserve marinade. Transfer marinade to saucepan; bring to boil. Remove from heat. Place each rack of ribs on large rimmed baking sheet. Place 1 baking sheet on each rack in oven. Bake ribs until tender, basting with 1/4 cup marinade every 20 minutes and covering edges of ribs with strips of foil to protect from burning if necessary, about 3 hours total. Cut between bones to separate ribs. Transfer to platter; serve.

Simple and good. Add hot pepper to kick it up. Can make with papaya instead of mango......then you get more digestive juices that tenderize so well.
