MANGO MADNESS BUNDT CAKE
Light and luscious; just in time for summer! Mango is my fav tropical fruit so I wanted to try a mango bundt. Started w/ a cake mix, added some lemon for a bit of tang and covered with a light mango syrup which soaks into the cake. Moist and magical!

- 1. FOR CAKE: Prepare standard bundt pan; set aside. Preheat oven to 325 degrees.
- 2. Combine dry cake mix, dry pudding mix, 1 cup mango juice, 1/2 cup vegetable oil, 4 eggs, and butter flavoring (optional) with electric mixer until well mixed. Do not over mix. Batter will be of medium consistency.
- 3. Pour batter into prepared pan. Bake at 325 degrees for 45-55 minutes or until cake tester comes out clean.
- 4. While cake is baking prepare your mango syrup: FOR MANGO SYRUP: Melt butter is saucepan or in microwave. Add sugar and cook until boiling to allow sugar to dissolve.
- 5. Remove from heat source and stir in 1/4 cup mango juice and lemon juice or extract. Syrup will not be thick.
- 6. Allow cake to cool in pan for 10 minutes. Poke holes in top (I used a chopstick). Slowly pour mango syrup over cake, taking care that syrup is soaking down into holes.
- 7. Allow cake to remain in pan for 5 minutes as syrup soaks in. Carefully turn cake out onto platter. OPTIONAL: May sprinkle coconut on top.

MANGO MADNESS SALAD WITH CARIBBEAN CHICKEN STRIPS

- Prepare the marinade according to directions on package. Add your slices of chicken and marinate in refrigerator for 15 min. Peel and chop your mangos set aside 1 1/2 cups for salad. In a food processor or blender add the remainder of mango,champagne vinegar, and cilantro. Pulse these ingredients and stream in olive oil until the desired consistency. Add sugar, salt and pepper to taste. Set aside, place your green on a large platter and slice red onion and scatter on top of greens along with your mango chunks. - 1. Pour a bit on Cointreau in to a small bowl. Dip rim of glass in to Cointreau. Dip in to sugar to coat the rim of the glass.
- 2. Place the Citron Vodka, Cointreau, Cranberry juice, Lime juice, and Mango syrup into a shaker with ice. Shake and pour into sugar-rimmed glass.Garnish by floating a slice of lime in drink. Enjoy!
- 3. Homemade Mango syrup Peal the mangoes. Slice off the fattest part, sometimes called the "cheek", of both sides of the mango. Chop mango in to small chunks. Add to a pan with sugar and water. Bring to a boil. Reduce to a simmer. Simmer until the mango is soft, and liquid becomes syrup. (About 15-25 minutes. ) Stir occasionally. Mash up mango. Strain and store liquid in a jar or bottle in fridge.

PINEAPPLE-MANGO KETCHUP RECIPE - CHILI PEPPER MADNESS
A recipe for homemade pineapple-mango "ketchup" made with spicy chili peppers, fresh fruit, tomato and seasonings. Use in place where you normally use ketchup, but it's also great as a sauce. Super easy to make.

- Heat oil in a large pan and cook down onion and peppers about 5 minutes.
- Add garlic and cook another minute.
- Add tomato paste and stir. Cook down a minute or two.
- Stir in the pineapple, mango and tomato. Cook it down about 15 minutes, or until the mixture is softened and begins to break down.
- Stir in the vinegar, cayenne, salt, pepper, and sugar. Cook another 5 minutes.
- Cool the mixture, then process it until smooth in a blender or food processor.
- You can serve it as is, or strain it through a fine sieve for more of a "ketchup" consistency.
- Store in airtight containers in the fridge.
