Squash Casserole with French Onion Topping image

I grew up loving squash and when I married I found out not "everyone" is wild about squash! Soo, I found this recipe that not only my hubby likes, but so does our son. Now THAT's a Homerun at our house!

Number Of Ingredients 9

3 pounds yellow squash
1/2 cup c chopped sweet onion
1 1/2 tsp salt
1 can(s) reduced fat-cream of chicken soup
1- 8 oz pkg light sour cream
2 Tbsp real butter
1/4 tsp freshly ground pepper
1 c grated carrots (optional)
1 c french fried onions

Steps:

  • 1. Preheat oven to 350. Cut squash into 1/4 in thick slices;place in a Dutch oven. Add onion, 1 tsp. salt, and water to cover. Bring to boil over medium-high heat, and cook 5 mins. drain well, and pat squash dry w/ paper towels.
  • 2. Stir together grated carrots, other ingredientsexcept french fried onions in a large bowl'fold in squash mixture. Spoon into a lightly greased 2 qt. oval baking dish. Sprinkle French Fried Onions on top.
  • 3. Bake @ 350 for 30-35 minutes or until bubbly and golden brown, shielding with aluminum foil after 20 minutes to prevent excessive browning.
