1 cup mandarin oranges, drained
1/2 cup chopped red onions
1 tablespoon orange marmalade
2 tablespoons red wine vinegar
1/3 cup extra-virgin olive oil, eyeball the amount
Salt and pepper

Steps:

  • Arrange spinach leaves on a large platter or individual salad plates. Top with mandarin sections and chopped red onion. Whisk together marmalade and vinegar. Stream oil into dressing while continuing to whisk.
  • When you are ready to serve, pour the dressing over salad and season with salt and pepper.

SALAD:
3/4 cup slivered almonds
4-1/2 teaspoons sugar

7 cups chopped fresh spinach
1-1/2 cups sliced celery
1-1/2 cups sliced green onion

Steps:

  • In a jar with a tight-fitting lid, combine the first five ingredients; shake well. Set aside. In a skillet, cook and stir the almonds and sugar over medium heat until sugar is melted and almonds are coated, 5-7 minutes. Spread on foil to cool completely., In a large salad bowl, combine the romaine, spinach, celery and onions. Add oranges and sugared almonds; toss gently. Shake dressing; drizzle over salad and toss to coat.

⅓ cup apple cider vinegar
¾ cup white sugar
½ red onion, coarsely chopped
½ teaspoon dry mustard powder
¼ teaspoon salt
½ cup vegetable oil

1 (10 ounce) can mandarin orange segments, drained
¼ cup toasted slivered almonds

Steps:

  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.

1 cup diced celery

  • Shake well and refrigerate for at least one hour to blend flavours.

1 Tbsp minced fresh parsley
2 sprig(s) spring onions, chopped including tops

DRESSING
1/4 c salad oil
2 Tbsp raspberry vinegar
2 Tbsp sugar

  • 1. Mix celery, parsley, and onions. Refrigerate.
  • 2. Drain mandarin oranges and put them in the refrigerator. (You can keep some of the juice to add to the dressing also if you wish.)

2 tablespoons sugar
1 tablespoon margarine
1 tablespoon orange juice
1/4 teaspoon cinnamon

1/4 cup white wine vinegar
1 tablespoon parsley flakes
1/2 teaspoon hot pepper sauce
1 cup sugared pecans

Steps:

  • For sugared pecans: combine sugar, margarine, orange juice, cinnamon and red pepper and cook to boiling. Boil for 1 minute. Add pecans and coat well. Bake on cookie sheet at 200 degrees for one hour stirring every 15 minutes. Cool completely and store in air-tight container.
  • For dressing: combine all ingredients and refrigerate for 1 hour.
  • For salad: combine ingredients, adding pecans and oranges last. Add dressing and gently toss.

Mandarin Orange Pretzel Salad Recipe image

2 cups pretzels sticks (broken into fourths)
1/2 cup butter (melted)
3 Tablespoons sugar
1 (8 ounce) package cream cheese
1 (8 ounce) package Cool-Whip (non-dairy whipped topping)
1 cup sugar
1 (6 ounce) box orange Jell-o
2 cups boiling water
4 (11 ounce) cans mandarin oranges (drained)

Steps:

  • Pre-heat oven to 350 degrees.
  • For the first layer, combine broken pretzels, melted butter and sugar. Stir together until well blended. Press in 9 x 13 inch baking pan and bake at 350 degrees for 7 minutes. Cool completely.
  • For the second layer, beat sugar and cream cheese together until smooth. Fold in Cool Whip.
  • Spread cream mixture over pretzel layer (be sure to seal the cream cheese layer against the sides of the pan so that the jello mixture will not be able to leak through when added).
  • For the Jell-o layer, mix orange Jell-o and boiling water together until Jello is completely dissolved. Add mandarin oranges and let cool until slightly set.
  • Pour Jell-o over cream cheese layer and refrigerate until firm.

1 head romaine lettuce, chopped
1 (10 ounce) can mandarin oranges, drained
5 ounces fresh mushrooms, sliced
3 tablespoons slivered almonds
3 tablespoons crumbled cooked bacon

Steps:

  • Place the onion, sugar, mustard, celery seed, and black pepper into a small bowl. Pour in the vinegar, and stir until the sugar has dissolved. Whisk in the olive oil until the dressing is thick. Cover, and refrigerate at least 3 hours.
  • To make the salad, toss the lettuce, oranges, mushrooms, almonds, and bacon together in a large bowl. Drizzle with the dressing, and toss again to coat.

2 (3.4 ounce) packages vanilla instant pudding
2 cups buttermilk
2 (8 ounce) packages Cool Whip
1 (20 ounce) can pineapple tidbits (drained well)
2 (11 ounce) cans mandarin oranges (drained well)
1 (11.5 ounce) package fudge-striped cookies (I used Keebler)

Steps:

  • In a large bowl, mix together the dry pudding mixes and buttermilk.
  • Fold in the Cool-Whip.
  • Stir in the pineapple and mandarin oranges until incorporated.
  • Break cookies into bite-size pieces and gently fold into salad mixture.
  • Serve immediately.
  • If preparing ahead of time, add cookies right before serving.
