1 tablespoon vegetable oil
1/4 cup peanut butter
3 tablespoons fresh lime juice
1 tablespoon tamari soy sauce
1 tablespoon finely minced ginger
1 clove garlic, finely minced
1 tablespoon white sugar
1/2 English cucumber, sliced thin
1 small red onion, sliced thin
6 cups mixed salad greens
1 (11 ounce) can mandarin orange segments, drained,reserve juice
1/4 cup chopped peanuts

Steps:

  • In a small saucepan over medium low heat whisk together the oil, peanut butter, 3 Tablspoons mandarine orange juice, lime juice, tamari sauce, ginger, garlic and sugar.
  • Continue to whisk until sugar is dissolved.
  • Remove from heat.
  • In a large bowl toss together the sliced cucumber, onion, salad greens and orange segments.
  • Add the salad dressing and toss well.
  • Sprinkle with the peanuts and serve.

6 cups chopped romaine lettuce
1 cup shredded red cabbage
1 cup thinly sliced carrots
1 cup sliced cucumbers
3 scallions, sliced
1/4 cup honey roasted peanuts, roughly chopped
3 mandarin oranges, peeled, separated into slices and halved crosswise (if you have time and patience you can peel the mandarin slices)
1 Tbsp. rice vinegar
2 Tbsp. sunflower oil
1 Tbsp. brown sugar
1 tsp. orange marmalade
1 tsp. chili-garlic sauce
1 tsp. fresh lemon juice
salt and pepper

Steps:

  • In a large mixing bowl, combine the salad ingredients. Toss with dressing; season with salt and pepper as needed and serve immediately.

I was inspired to make this salad after viewing the recipe by CaliforniaJan at food.com. I tweaked the recipe to my liking, and used dry roasted peanuts instead of salted peanuts, but I think you could also use cashew halves or sliced almonds. I also used the mandarin oranges that come in those individual 4 ounce plastic sealed...

SALAD INGREDIENTS:
2 bunches of lettuce (iceberg, romaine, or red leaf)
1/2 c salted peanuts, divided (l used dry roasted)
2 (11 oz.) cans, mandarin oranges, drained
SALAD DRESSING:
3/4 c granulated sugar
6 Tbsp vegetable oil
1 tsp dry mustard
1/4 tsp salt
6 Tbsp red wine vinegar
2 Tbsp diced white onion, or red onion
2 tsp poppy seeds
ADIITIONAL ADD INS:
dried cranberries (optional)

Steps:

  • 1. Tear lettuce into bite-size pieces, and distribute among individual salad bowls.
  • 2. Drain the indiviual bowls of mandarin oranges, then equally divide among the salad bowls.
  • 3. Top each salad bowl, with some of the peanuts.
  • 4. If desired, top each bowl with some of the dried cranberries.
  • 5. To make the dressing: In a bowl, jar, or glass measuring cup, add the salad dressing ingredients; stir well with a spoon.
  • 6. Pour the dressing over the individual salad bowls, and serve.
