PINEAPPLE AND MANDARIN ORANGE DESSERT

I made this up myself to add fruit to my husband's diet. He is diabetic and this satisfy's his cravings for something sweet. Even non-diabetics enjoy this. It is quick and you can add drained cherries for more flavor or color!

1 can pineapple chunk, in own juice,drained
1 can mandarin orange segments, drained
1 (8 ounce) container Cool Whip Lite, thawed
1 (3 ounce) package instant pudding mix (vanilla and banana cream are the best)

Steps:

  • Mix pudding mix and cool whip together well, fold in drained fruit.
  • Chill for 2-3 hours before serving.
  • Great for diabetics!

1 cup hot water
1 (6 ounce) package orange Jell-O
1 cup orange juice
1 cup sour cream
1 pint Orange sherbet, slightly softened
1 cup pineapple tidbits, drained
1 (10 ounce) can mandarin orange segments, drained
1/4 cup maraschino cherry, drained and chopped
1/4 cup coconut, lightly toasted

Steps:

  • In a large mixing bowl add the hot water to the jello, stirring till dissolved. Stir in orange juice. Chill until mixture begins to thicken ( I chill it in a sink half full of ice cubes, about 20 minutes ).
  • Stir in sour ceam and sherbet, beat until thick and foamy. Fold in pineapple, mandarin orange segments and cherries. Pour into a lightly oiled 2 quart mold.
  • Chill for 8 hours.*.
  • Unmold, sprinkle with toasted coconut and serve.
  • * Chill time is listed as cook time.

1 (20 ounce) can pineapple tidbits (drained well)

1 (11.5 ounce) package fudge-striped cookies (I used Keebler)

Steps:

  • In a large bowl, mix together the dry pudding mixes and buttermilk.
  • Fold in the Cool-Whip.
  • Stir in the pineapple and mandarin oranges until incorporated.
  • Break cookies into bite-size pieces and gently fold into salad mixture.
  • Serve immediately.
  • If preparing ahead of time, add cookies right before serving.

I have substituted milk before and I think it still tastes delicious

1 cup boiling water
1/2 cup cold water
1 cup crushed pineapple in juice
1 cup mandarin orange, drained

1 cup low-fat plain yogurt

  • In square 8x8 dish, combine gelatin and boiling water and stir until gelatin is dissolved.
  • Add cold water, pineapple and Mandarin oranges.

6 vanilla wafers
1 cup whipped cream

  • In a bowl, blend the first 3 ingredients by hand.
  • In a buttered 8 inch square oven-prrof glass dish, place a layer of vanilla wafers.

2 cups crushed pretzels
3 tablespoons sugar
3/4 cup unsalted butter, melted
Filling
8 ounces cream cheese, softened
1 cup granulated sugar
8 ounces whipped topping
Topping
1 box (3 ounce) orange gelatin
1 can (10 ounce) DOLE Mandarin Oranges, drained
1 cup boiling water
1 cup cold water

Steps:

  • 1. Preheat oven to 350. Coat a 9x13 baking dish with nonstick spray. 2.In a medium bowl, mix together the pretzels, sugar, and butter. Press evenly into the bottom of the prepared baking dish. 3. Bake for 15 minutes, or until mixture is lightly toasted. Set aside to cool completely. 4. In a medium bowl, beat the cream cheese and sugar with a handheld mixer. Fold in the whipped topping until thoroughly combined. Spread evenly over the cooled pretzel layer. Refrigerate until set, about 30-40 minutes. 5. In another medium bowl, whisk together the orange gelatin powder with 1 cup boiling water. Stir until completely dissolved. Then whisk in 1 cup of cold water. Gently mix in the mandarin orange slices. 6. Pour mixture over the cooled cream cheese layer. 7. Refrigerate until completely chilled and set, about 3 hours. Slice and serve! Notes Spread the cream cheese mixture over the top of the pretzel crust completely to the edges so the gelatin won't leak through, which I didn't do!
