MAMA'S ANGEL HAIR PIE (SPAGHETTI PIE) FOR TWO
This is a nicely scaled down dish for two, can be scaled up too. Using angel hair pasta makes the "crust" special. From TOH. It also freezes well before baking

Steps:
- Cook pasta according to package directions, drain.
- In a small bowl combine the pasta, egg and parmesan cheese. Press onto the bottom and up the sides of a 7 inch pie plate or shallow 2 cup round baking dish coated with non stick spray. Set aside.
- Crumble sausage into a small skillet, add onion. Cook until no longer pink, drain. Stir in tomato sauce, sour cream and italian seasoning. Spoon into crust.
- Bake uncovered at 350 for 15-20 minutes or until heated through. Sprinkle with mozzarella, bake until cheese melts and serve immediately.

EASY SPAGHETTI BAKE
A co-worker gave me the basic recipe and I made a few changes to make it super easy. It has been a pot luck favorite. I prefer Angel Hair pasta but regular spaghetti noodles can be used. Also, using Italian Sausage instead of hamburger or Mexican blend cheese instead of cheddar may make this recipe more to your tastes. As my grand kids say, "This is yummy grandma". Steps:
- Break pasta into 2 inch pieces and cook according to package directions.
- Drain and rinse with cold water.
- In a large bowl mix eggs, Parmesan cheese, sour cream & cottage cheese.
- Add pasta and mix thoroughly.
- Put pasta mixture in a lightly greased 9X13 pan.
- Mix spaghetti sauce and cooked hamburger.
- Spread on top of the pasta mixture.
- Bake in 375 degree over for 30-45 minutes until hot and set in the middle.
- Sprinkle with grated cheese and bake another 10 to 15 minutes or until cheese is melted.

Bake at 350° for 10 minutes., Meanwhile, in a skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink; drain. Stir in pasta sauce and seasonings. Bring to a boil. Reduce heat; cover and simmer for 10 minutes., Between two pieces of waxed paper, roll out cream cheese into a 7-in. circle. Place in crust. Top with spinach and meat sauce. Vegetarian Spaghetti....I use angel hair pasta, personal preference. I've served this using two cans of black beans, but I prefer the mix of cannellini and black beans, although the contrast is better with the black beans.

- Cook the pasta according to the package directions; drain well. Set aside, and keep warm.
- Meanwhile, drain the capers, reserving 1 1/2 tbsp liquid. Set aside.
- While the pasta is cooking, cook the onion and the next 3 ingredients in oil in a large saucepan over medium high heat, stirring constantly. Just as the veggies are getting tender, add the garlic, stirring constantly for 45 more seconds.
- Add the reserved capers and liquid, tomatoes, and next 6 ingredients. Bring to a boil; reduce the heat and simmer, uncovered for 30 minutes, stirring the mixture occasionally.
- Remove the pasta to a serving platter. Spoon the tomato/veggie mix over the pasta. Sprinkle with cheese.

PUFF PASTRY-WRAPPED ANGEL HAIR PASTA PIE
There's a savory surprise in this deep-dish pie -- pasta -- which mingles with links of Italian sausage, red sauce, spinach and cheese. The whole thing is encased in puff pastry, so no need to make garlic bread.

- Preheat the oven to 375 degrees F. Bring a large pot of generously salted water to a boil. Cook the pasta until still slightly crunchy and undercooked, about 2 minutes. Drain and set aside.
- Wipe out the pot, add the oil and heat over medium-high heat. Add the sausage, onions and garlic and cook, flipping the sausage and stirring occasionally, until the sausage is browned and the onions are soft and starting to brown, about 8 minutes. Stir in the tomato paste and cook until fragrant, about 1 minute. Add the crushed tomatoes, 1/2 cup water, 2 teaspoons salt and a few grinds of pepper and bring to a boil. Reduce to a simmer, cover and cook until the sauce starts to thicken and the sausage is cooked through, about 25 minutes. Remove the sausage from the pan and set aside. Add the pasta to the pan and stir to coat.
- Meanwhile, coat a 9-inch nonstick springform pan with cooking spray. Roll out 1 puff pastry sheet to a 13-inch square. Transfer it to the prepared pan, pressing it into the bottom and up the sides and allowing the excess pastry to hang over the rim. Spread half of the pasta mixture in the pan. Arrange the sausage on top of the pasta around the rim of the pan to create a ring. Evenly spread the spinach in the middle of the sausage ring. Top with the mozzarella, then the rest of the pasta mixture. Place the second pastry sheet on top of the pasta and pinch the edges of both the bottom and top pastry together to seal, then trim the edges. Cut a slit in the center of the puff pastry to allow the steam to escape.
- Bake until the pastry is browned and puffed on top, about 1 hour and 30 minutes. Let cool for 30 minutes before serving. Remove the pan and cut into wedges.
GREEK LEMON CHICKEN WITH ANGEL HAIR PASTA
A delicious one dish casserole. It's special enough for special events like bridal showers or graduation. It's an amazing dish! A local caterer uses this recipe and I found out it was in Creme de Colorado Cookbook. but I have never found it online. I've adjusted it slightly from their version to make it even better. After being asked for this recipe many time, I decided to post it.

- In a bowl, combine all marinade ingredients. Pound chicken breasts slightly and place in shallow casserole or in plastic zip-lock bag, and cover with marinade. Refrigerate for up to 12 hours.
- Discard marinade. Heat oil in skillet and saute chicken until tender. Slice and set aside.
- In a saucepan, melt 2 T butter; blend in flour and salt to create a roux. Add mustard and slowly add milk, stirring constantly until thick and smooth. In small bowl, mix egg yolk, lemon peel and lemon juice together. Whisk a small amount of roux into egg mixture. Then whisk egg mixture into roux and bring to a gentle boil. Remove from heat and add dill and parsley. When parsley wilts, stir in sour cream.
- Add 1/2 cup butter, 3/4 cup of the egg sauce and feta cheese to cooked pasta; stir well. Place in greased 9X13 casserole, and top with sliced chicken breasts, remaining sauce and Muenster cheese. Broil until cheese is golden.
