1 cup white sugar
1 egg
1 tablespoon butter
1 tablespoon apricot jam
1 tablespoon white vinegar
2 teaspoons ground ginger
1 teaspoon baking soda
1 cup milk
1 cup all-purpose flour
1 cup milk
½ cup butter
½ cup white sugar
¼ cup water

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease and flour a 9-inch cake pan.
  • Combine 1 cup sugar, egg, and 1 tablespoon butter in a large bowl; beat with an electric mixer until creamy. Beat in apricot jam, vinegar, ginger, and baking soda. Add 1 cup milk and flour; beat until batter is smooth.
  • Pour batter into the prepared pan.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 35 minutes.
  • Combine 1 cup milk, 1/2 cup butter, 1/2 cup sugar, and water in a saucepan over medium heat 5 minutes before pudding is done baking. Bring to a boil and stir until smooth. Pour hot sauce over pudding and let it sink into the pudding.

30 ml Apricot Jam
30 ml Butter
5 ml Vinegar
125 ml Milk
310 ml Cake Flour
5 ml Bicarbonate Soda
1 ml Salt
250 ml Sugar

Steps:

  • Heat the oven to 180°C Beat the eggs and sugar until light and fluffy. Beat in the apricot jam
  • Melt butter in a small pot on medium heat and add the vinegar and milk Sift the flour, bicarb and salt together and add to the creamed mixture alternately with the milk. Pour into a deep round dish or an ovenproof casserole dish that takes about 2 litres
  • Bake at 180°C for 45 minutes until the top is nicely browned
  • Sauce: Bring the butter, cream, sugar and water to the boil and simmer, add star anise, vanilla essence and golden syrup and stirring all the time for 5 minutes. Remove from the stove. Pour over the hot baked pudding.
  • Be Creative: Use Amarula Cream for Sauce. For Brandy Pudding: add 100 ml chopped Mixed Nuts (Walnuts), 100 ml Dates (Stone and Chopped) and 50 ml Glazed Cherries to the batter. add 100 ml Brandy to the Sauce.

This is more delicious than the sum of its parts! It's a real traditional oldie. RETESTED ON 22 Oct 07: After reading the reviews, I have just made this again. I cut down a little on the sugar in the sauce (it was 5 oz originally), but it should actually be a sweet pudding!! The sauce was quite enough to moisten the entire pudding -- it should not be dripping with sauce, as you can see in the photographs. Do not serve immediately, but let it stand, keeping warm, to give the sauce a chance to soak in properly. Real cold-weather comfort food. It's rich, so a little goes a long way, and this pudding yields up to 6 servings. This winter you must try this!

6 1/2 ounces sugar (3/4 cup, 200 ml, or 180 g)
2 large eggs
1 tablespoon apricot jam
5 ounces all-purpose flour (150 g)
1 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon butter (a generous tablespoon)
1 teaspoon vinegar
1/3 cup milk
3/4 cup fresh cream (200 ml)
3 1/2 ounces butter (100 g)
3 -5 ounces sugar (90 - 150 g)
1/3 cup hot water (90 ml)
2 teaspoons vanilla essence

Steps:

  • Preheat oven to 350 deg F/180 deg Celsius. (NOTE: I find my convection/fan oven very hot. I baked the pudding at 170 deg C and had to turn it down to 160 deg C/325 deg F for fear the pudding might burn. You know your oven -- Adjust accordingly).
  • Grease an oven dish. I used a 7 x 7 x 1 1/2 inch Pyrex dish. (18 x 18 x 4 1/2 cm)
  • Beat or whip the sugar and eggs. It's quickest in a food processor, or use electric beaters. Beat until thick and lemon coloured, then add the jelly (jam) and mix through.
  • Melt the butter (don't boil) and add the butter and vinegar to the wet mixture.
  • Sieve, or simply mix together: the flour, soda and salt.
  • Add this mixture with the milk to the egg mixture in the processor or mixing bowl. Beat well.
  • Pour into an oven-proof dish and bake until pudding is brown and well-risen -- depending on your oven and oven dish this will be between 30 - 45 minutes. (Mine was done in 30 minutes this time).
  • In a pot, melt together the ingredients for the sauce, and stir well.
  • Pour it over the pudding as soon as it comes out of the oven.
  • Leave to stand awhile before serving. Serve warm. Because it's rich it does not really need enhancement, but if you want, serve with vanilla ice cream.

1-1/2 cups sugar
1/4 cup apricot preserves
2 tablespoons butter, melted
1 can (13.66 ounces) coconut milk
2 teaspoons vanilla extract
2 teaspoons white vinegar
2 cups all-purpose flour
1-1/4 teaspoons baking soda
1 teaspoon salt
1 cup canned coconut milk
1/2 cup butter, melted
1/2 cup sugar
2 tablespoons apricot preserves
1/2 teaspoon coconut extract
2 medium mangoes, peeled and chopped
1/4 cup sweetened shredded coconut, toasted
1 container (8 ounces) frozen whipped topping, thawed

Steps:

  • In large bowl, beat eggs, sugar, apricot preserves and butter until combined. Add coconut milk, vanilla and vinegar; stir to combine (batter will be thin). In another bowl, whisk flour, baking soda and salt. Gradually stir flour mixture into batter just until moistened. Transfer to a greased 5-qt. slow cooker. Cook, covered, on high until a toothpick inserted in cake comes out with moist crumbs, 2-1/2 to 3 hours., Meanwhile, for sauce, whisk together coconut milk, butter, sugar, apricot preserves and extract until smooth. Poke holes in warm cake with a skewer or chopstick. Pour mixture evenly over pudding; let stand to allow pudding to absorb sauce, 15-20 minutes. Serve with chopped mango, coconut and a dollop of whipped topping.

1 cup plus 3 tablespoons cake flour
1 teaspoon baking soda

Sauce
1/2 cup heavy cream, whipped
1 cup heavy cream
3 ounces unsalted butter
3/4 cup sugar
1/4 cup milk

Steps:

  • Preheat oven to 350 degrees. Butter a shallow 6-cup baking dish.
  • Beat the sugar, egg, butter and jam together until pale and fluffy.
  • Slowly beat in the flour, baking soda, milk, vinegar and vanilla until completely blended.
  • Pour into the baking dish, and bake for 20 to 25 minutes, until the pudding begins to pull away from the sides of the dish and a toothpick inserted in the center of the pudding is clean.
  • Combine the sauce ingredients in a saucepan, and heat only long enough to melt the butter.
  • Pour the sauce over the pudding as it comes out of the oven, and allow it to be absorbed. Serve the pudding warm with softly whipped cream.

2 teaspoons bicarbonate of soda
2 teaspoons vinegar

250 g butter

Steps:

  • Beat the eggs and sugar until light and creamy.
  • Add the apricot jam to this mixture and beat inches
  • Add the flour, bicarbonate soda and salt and beat.
  • Melt the butter in the microwave and add the vinegar.
  • Add to the egg mixture and while beating add the milk.
  • (mixture is very runny).
  • Pour into a dish 25cm x 30cm.
  • Bake at 350 deg c for about 1 hour.
  • While it is baking boil all the sauce ingredients for 10 minutes in the microwave on high stirring occasionally.
  • When the cake is cooked stab all over with a skewer. Pour over the sauce and allow to soak inches Serve with either fresh cream or custard.

875 ml flour
15 ml baking soda
45 ml apricot jam
45 ml olive oil
15 ml vinegar
6 eggs
375 ml milk
salt
500 ml sugar
500 ml cream
375 ml water
125 g butter
60 ml amarula liqueur

Steps:

  • Pudding: Mix eggs and sugar till spongy.
  • Dissolve the baking soda in the vinegar.
  • Add the vinegar, apricot jam, oil and milk and mix through.
  • Sift in the flour and a pinch of salt and mix until you have a smooth batter.
  • Pour into buttered muffin pans and bake at 180C for 25-30 minutes.
  • Syrup/Frosting: Place all ingredients in a pot and boil for 3 minutes.
  • Add Amarula and pour over the malva pudding to soak.
  • Serve pudding warm with syrup/frosting and toasted almonds or berries.

1 1/2 tsp grated orange zest
3/4 c granulated sugar
1 Tbsp unsalted butter, room temperature
4 Tbsp apricot jam
1 tsp vinegar
3/4 c milk
1 c all-purpose flour
1 tsp baking soda
1/2 tsp salt
AMARULA SAUCE:
6 Tbsp melted butter
3/4 c heavy cream
1/2 c caster sugar (or super-fine sugar)
2 1/2 oz amarula liqueur

Steps:

  • 1. Preheat oven to 350°F. Grease 8-inch square cake pan; set aside.
  • 2. Add eggs, orange zest, sugar, butter and jam to a large bowl, and beat until light and fluffy. Add vinegar and milk, and beat just enough to incorporate into the batter.
  • 3. In another bowl, sift together the flour, baking soda and salt. Gradually fold the flour mixture into the egg mixture. The mixture might be a little runny, that's OK.
  • 4. Pour batter into prepared cake pan. Bake at 350°F for 25 to 30 minutes or until a toothpick insert in center comes out clean.
  • 5. While cake is baking, prepare the Amarula sauce. Combine the butter, cream and sugar in a saucepan over low heat for about 4 to 5 minutes, and stir until the sugar is dissolved and the sauce has thickened. Remove saucepan from heat, and stir in the Amarula liqueur.
  • 6. When the pudding is done baking, remove it from the oven and slowly pour the Amarula sauce over the pudding while it's still hot, letting the pudding get saturated with the sauce.
  • 7. Serve hot, with fresh custard (or whipped cream or vanilla ice cream) on the side.

60 ml smooth apricot jam
250 g self-raising flour
1 pinch salt
1 teaspoon bicarbonate of soda
250 ml milk
2 teaspoons vinegar

250 ml evaporated milk
100 g unsalted butter
125 g demerara sugar
60 ml hot water
100 ml Amarula cream liqueur
150 ml whipping cream

Steps:

  • Preheat the oven to 180C/gas 4.
  • Butter a baking dish thoroughly.
  • To make the pudding; beat together the sugar and butter until smooth, light and fluffy, then add the egg and the jam beating until pale.
  • Sift together the flour, salt and bicarbonate of soda
  • Mix together the milk, vinegar and vanilla extract.
  • Fold the dry ingredients into the egg mixture. Then add the milk mixture a little at a time and stir together.
  • Pour into the buttered baking dish and cover lightly with buttered foil.
  • Bake for approx 35-45 minutes until firm.
  • To make the sauce; combine the evaporated milk, butter, demerara sugar and hot water in a pan. Heat, stirring continuously until the butter melts and the sugar has dissolved.
  • To make the Amarula cream; lightly whisk the whipping cream and then add the Amarula cream liqueur.
  • To serve; pour the sauce over the hot pudding and serve with the Amarula cream.

This version of the traditional South African malva-pudding cake comes from baker Umber Ahmad of Mah-Ze-Dahr. She makes mini puddings and uses dates pureed with cream in place of the usual apricot preserves.

3 large Medjool dates (2 1/2 ounces total), pitted and roughly chopped
2/3 cup heavy cream
1/2 cup unbleached all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup sugar
1 large egg
Scant 1/2 teaspoon kosher salt
1/4 teaspoons cider vinegar
1/2 cup whole milk
1/3 cup sugar
4 tablespoons unsalted butter, cut into pieces
Vanilla ice cream, for serving

Steps:

  • Cakes: Combine dates and cream; cover and refrigerate overnight.
  • Preheat oven to 375 degrees. In a small bowl, whisk together flour, baking powder, and baking soda until thoroughly combined. Strain dates through a fine-mesh sieve, reserving cream (you should have about 1/2 cup). Puree dates in a mini food processor or blender, adding 1 to 2 teaspoons water if needed, until completely smooth.
  • In the bowl of a mixer fitted with the paddle attachment, beat together sugar, egg, and salt onmedium-high speed until pale and thick, 2 minutes. Add date puree, then vinegar; beat well.Add half of milk, then flour mixture, then remaining milk, beating well after each addition.
  • Place 6 five-ounce ramekins on a rimmed baking sheet; divide mixture evenly among them (ascant 1/3 cup each). Bake, rotating once, until very dark brown and set, 25 to 30 minutes.
  • Filling: Meanwhile, in a small saucepan, bring sugar, butter, and 2 tablespoons water to a simmer. Whisk in reserved date cream and return to a simmer. Whisk until smooth; cover to keep warm.
  • Remove cakes from oven; cut a small slit in center of each with a paring knife. Working with onecake at a time, pour filling into slit, waiting until it is absorbed, then pouring more until cakeis completely saturated. Repeat with remaining cakes. Serve immediately, topped with ice cream.

  • Sieve together the flour, soda and salt. Melt the butter and add the vinegar. Add this mix as well as milk to egg mix in the bowl, alternately with the flour and mix well.
  • Pour into an oven proof dish and bake for 45-50 minutes.
  • In a pot, melt together the ingredients for the sauce. When the cake is halfway baked, take it out of the oven. Make holes in the cake and pour the sauce over the pudding. Return the cake to oven and continue baking for the remaining time.

1 teaspoon bicarbonate of soda

1 cup whipping cream (not whipped)
6 ounces butter
1 cup white sugar
1/2 cup hot water

Steps:

  • Beat the egg and sugar well in a mixer. Add the jam,
  • Sift flour, bicarbonate of soda, baking powder and salt.
  • Melt the butter add the vinegar and milk.
  • Add liquids to egg mixture alternately with the flour. Beat well .
  • Bake in a COVERED dish such as Corel at 350F for 45 minute to 1 hour. It is important to use a covered dish otherwise the sauce won't soak into cake.
  • Melt together the ingredients for the sauce and pour over the pudding as it comes out of the oven.
  • You will not beleive the taste! I never add whipping cream or Cool whip as it is quite rich the way it is.
