MAKE AHEAD FRENCH TOAST
We have made this French Toast for Christmas brunch for twenty four years! It originally came from the East Coast. If you like your French toast firmer, then cut back on the milk.

Steps:
- In a large bowl, whisk together eggs, milk, cream and vanilla. Dip bread slices into egg mixture and place in a lightly greased 9x13 inch baking pan. Refrigerate overnight.
- The next morning: Preheat oven to 350 degrees F (175 degrees C).
- In a small bowl, combine butter, sugar, maple syrup and pecans. Spoon mixture over bread.
- Bake in preheated oven until golden, about 40 minutes. Let stand 5 minutes before serving.

MAKE-AHEAD EGGNOG FRENCH TOAST
Steps:
- Place the bread in an ungreased 13x9-in. baking dish. In a bowl, whisk the eggs, eggnog, cinnamon and nutmeg. Pour over bread. Cover and refrigerate for 8 hours or overnight. , Grease a 15x10x1-in. baking pan with 2 tablespoons melted butter. Carefully transfer bread to prepared pan. Brush with remaining butter. , Bake, uncovered, at 400° for 10 minutes. Carefully turn slices over. Bake 10-15 minutes longer or until golden brown and slightly puffed. Dust with confectioners' sugar. Serve immediately.

EASY FRENCH TOAST CASSEROLE (MAKE AHEAD)
Great for Christmas morning as you make it the night before and pop it in the oven for about an hour. It's really yummy and SO EASY! There are a few other french toast casserole dishes here, but none quite like this one. My friend Kathy made this for a ladies brunch/book club and everyone loved it. I had to have the recipe!

Steps:
- The night before: Grease a 9x13 baking dish. Break up half the bread by tearing or cutting into 1 inch or so cubes.
- Scatter cubed cream cheese over the top.
- Top with the remaining bread, also broken or cut into cubes.
- Sprinkle with the cinnamon and the sugar.
- Pour maple syrup over the top (the real stuff always tastes better!).
- Pour the beaten eggs over the top next.
- Cover with foil and place in the fridge overnight.
- The next day: Preheat oven to 350°F
- Bake uncovered 45-60 minutes, depending on your oven and how mushy you like your french toast.
- Sprinkle with powdered sugar before serving.

- Spread bread cubes evenly in a greased 9x13-inch pan.
- Mix eggs, milk, sugar, cream, and vanilla together in a bowl. Pour evenly over the bread and and refrigerate, 8 hours to overnight.
- Mix flour, brown sugar, cinnamon, and salt for topping together in a medium bowl. Add butter and cut in with a pastry blender until mixture is crumbly. Refrigerate, 8 hours to overnight.

- In large, shallow dish, combine egg, cream, brown sugar, orange juice, and spices.
- Place bread in mixture; leave 5 minutes. Turn bread over; leave 5-10 minutes until all liquid is absorbed.
- (If preparing ahead of time, cover and refrigerate overnight.)
- Transfer bread to non-stick cookie sheet or cookie sheet lined with buttered foil.

Steps:
- Blend eggs, milk, pumpkin, sugar, vanilla and pumpkin pie spice in blender until well blended. Add cream cheese spread; blend until smooth. Pour into 13x9-inch dish. Dip both sides of each bread slice in egg mixture, then arrange on bottom of same dish, stacking if necessary to fit; cover. Refrigerate overnight.
- Heat oven to 400°F. Place bread slices in single layer on baking sheets sprayed with cooking spray, letting excess egg mixture drip back into dish before placing bread on baking sheets. Discard any leftover egg mixture.
- Bake 12 to 15 min. or until bread is puffed and golden brown, turning after 8 min.

It is originally from the November 2009 issue of Southern Living in an article by Marion McGahey about dishes you "mix up...in 30 minutes the night before for a stress-free meal the next day." - Cook jam in a small saucepan over medium heat 1 to 2 minutes or until it is melted and smooth, stirring once.
- Place half of the bread cubes in the bottom of a lightly greased 13x9 inch baking dish.
- Top with cream cheese cubes, and drizzle with melted jam.
- Top with remaining bread cubes.
- Whisk together eggs and next 3 ingredients. Pour over bread in the baking dish.
- Sprinkle the casserole with brown sugar.
- Chill for 8 to 24 hours.
- The next morning, preheat the oven to 325 degrees.
- Bake covered for 20 minutes. Uncover and bake 10 to 15 minutes more or until bread is golden brown and mixture is set. Serve with desired toppings.

- Spray a 13 x 9 inch baking pan with veggy spray.
- Cut the French bread into 6 slices, each, 1 1/2 inches thick.
- Using a small, sharp knife, cut 2 inch long slits in one side of each bread slice, cutting 3/4 of the way through the bread, to create a pocket.
- Spoon heaping 2 tablespoons of chips into the pocket of each bread slice, press to close.
- Place filled slices into prepared baking pan.
- Whisk together eggs, milk, cinnamon and vanilla in medium bowl.

OVEN FRENCH TOAST - MAKE AHEAD

- Cut 1 baguette into 1" slices and place in a single layer in a 13"x9" baking dish that you've greased with coconut oil. Top the bread with a mixture of 3 eggs, 1 cup milk, ½ cup brown sugar, ¼ tsp. nutmeg, and 1 tsp. almond extract (almond instead of vanilla unexpectedly blows people's minds and it helps bring out whatever nut you top it with). Refrigerate overnight so the bread absorbs all of the sweet, goopy liquid. In the morning, toast 6 oz. pecans at 350° for about 5 to 8 minutes until they're fragrant.
