CUCUMBER-ELDERFLOWER SPARKLERS



Cucumber-Elderflower Sparklers image

2 Persian cucumbers
Finely grated zest and juice of 1 lime
3/4 cup elderflower liqueur (such as St-Germain)
Orange bitters
6 to 8 sugar cubes
1 750-ml bottle champagne or other sparkling white wine, chilled

Steps:

  • Grate the cucumbers on the large holes of a box grater into a medium bowl. Wrap the grated cucumber in a piece of cheesecloth or a clean kitchen towel and squeeze the cucumber juice into a pitcher; discard the grated cucumber. Stir the lime zest and juice, elderflower liqueur and 5 or 6 dashes orange bitters into the cucumber juice. Refrigerate until ready to serve, at least 30 minutes.
  • Drop a sugar cube into each flute and add a few dashes of orange bitters to each. Pour the champagne into the pitcher and stir. Pour into the flutes.

HONEYDEW, JICAMA AND CUCUMBER SANGRIA



Honeydew, Jicama and Cucumber Sangria image

Crisp, cooling honeydew melon, cucumber and jicama combine with the bright floral notes of gin, lime juice and triple sec in this refreshing summer sangria.

1/2 jicama, peeled and cut into 1/4-by-3/4-inch strips
1/4 honeydew melon, seeds and skin removed, halved crosswise, cut lengthwise into 1/4-inch-thick wedges
1 cup sugar
1/2 cup lime juice
One 750-milliliter bottle Riesling or other sweet white wine
1 cup gin, such as Hendrick's
1 cup triple sec, such as Cointreau
Two 12-ounce cans lemon-lime soda, such as Sprite
1/2 cucumber, halved crosswise, cut lengthwise into 1/4-inch-thick wedges

Steps:

  • Bring the sugar and lime juice to a boil in a small saucepan, stirring until the sugar has dissolved. Let cool, then transfer the syrup to a 3-quart pitcher.
  • Add the wine, gin, triple sec and soda to the pitcher, and stir to combine. Add the cucumbers, jicama and melon, and cover the pitcher with plastic wrap. Refrigerate the sangria for at least 4 hours up to overnight.
  • To serve, fill 8 glasses halfway with ice, then pour the sangria and fruit into each glass.

ROSé ELDERFLOWER SANGRIA

12 fresh mint leaves, plus additional for garnish
1 1/2 cups raspberries
1 1/2 cups sliced strawberries
One 750-milliliter bottle French rosé wine
3/4 cup elderflower liqueur
1 cup club soda, chilled

Steps:

  • To a large pitcher, add the mint leaves, raspberries, strawberries, wine and elderflower liqueur. Stir to combine. Chill in the refrigerator for 4 hours.
  • Add ice cubes to chilled wine glasses. Pour the sangria into the glasses and garnish with fresh mint leaves and macerated strawberries from the pitcher. Top the sangria off with club soda and serve.

4 1/2 teaspoons (3/4 ounce) cachaca
4 1/2 teaspoons (3/4 ounce) Pisco
4 1/2 teaspoons (3/4 ounce) St Germain (elderflower liqueur)
1/4 cup (2 ounces) semisweet white wine such as a Riesling or Gewürztraminer
1/8 teaspoon freshly squeezed lime juice plus 2 thin slices lime
1/4 cup (2 ounces) soda water
3 thin slices kiwi
3 thin slices apple
3 thin slices cucumber
3 green grapes, cut in half
2 fresh sage leaves
1 sprig fresh thyme

Steps:

  • Fill large wine glass with ice. Add cachaca, Pisco, St Germain, wine, and lime juice. Top with soda water and stir briefly. Add lime, kiwi, apple, cucumber, grapes, sage, and thyme to drink and serve immediately.
