Time 1h

Number Of Ingredients 6

4 1/2-5 cups flour
2 T yeast
¼ cup sugar
4 tsps salt
2 1/2 cups warm water ((not too hot and not tepid))
2 T olive oil

Steps:

  • Pour 1/2 cup warm water into a small bowl and sprinkle with 1 tsp of the sugar. Sprinkle the yeast over the top and stir gently to combine. Set aside and allow yeast to work about five minutes while prepping the pans and ingredients in the mixer.
  • Grease two bread pans. (Glass or ceramic preferred.)
  • Combine 2 cups of the flour with the rest of the dry ingredients in mixer using dough hooks for a few seconds on low. (The salt in the flour will not harm the yeast.)
  • Pour yeast mixture and 1 cup warm water and olive oil over the ingredients in the mixer. Mix ingredients on slow speed.
  • With mixer on low, add 1 cup of warm water and then 2 cups of flour.
  • After ingredients are combined, turn mixer speed to medium. If dough is too wet and sticky add up to 1 cup flour 2 tablespoons at a time while mixer is running (or while kneading) till it comes away cleanly from the sides of the bowl. Dough should still be soft, stretchy and a bit sticky.
  • Mix for 5 minutes on medium. Dough should mix together and come away cleanly from the sides of the bowl during this time. Dough will be smooth at the end of mixing. Optional hand kneading: Turn dough out onto a clean, floured surface and knead turning it a quarter turn each time for 5-8 minutes till dough is smooth.
  • Oil or grease hands and remover dough from bowl onto clean and lightly-floured counter or silpat and knead it 4-6 times. This is a soft dough, but if it is too sticky too handle, knead in a bit more flour.
  • Divide dough evenly into two balls and shape into loaves and place in prepared pans.
  • Lightly cover loaves with plastic wrap or clean dish towel and sit in a warm place to rise till dough is about double in volume up to 30 minutes.
  • While dough is rising, heat oven to 400°.
  • Bake loaves for 15-20 minutes, till golden brown. Turn them out onto cooling rack. (And of course while it will slice better when it cools, it is irresistible when warm out of the oven, dripping with butter and honey. Enjoy.)

Time 1h5m

Number Of Ingredients 7

4 cups (1 lb, 1 oz or 482 g) all purpose flour, plus extra for dusting
2 cups (9 oz or 255 g) whole wheat flour
2 tablespoons (24 g) instant or active dry yeast
2 tablespoons (25 g) sugar
1 tablespoon (18g) kosher salt (if using table salt, reduce to 1 1/2 teaspoons (9g)
2 cups (480 ml) very warm water (about 120 degrees)
1/4 cup (60 ml) olive oil

Steps:

  • Mix the flours, yeast, sugar, salt, water, and olive oil in a large mixing bowl with a sturdy spoon until a shaggy dough forms, then knead until the dough comes together and becomes smooth, about 4 minutes by hand or machine.
  • Form a smooth dough ball. Return the dough to the bowl, cover with a clean tea towel, and let it rise in a warm place for 15-25 minutes.
  • Divide the dough in half and form into two tight dough balls or loaf shapes. You can place the balls or loaves directly on a rimmed baking sheet or in standard-size loaf pans. Press down slightly to flatten them, then dust a teaspoon of flour over each loaf, rubbing with your hands to distribute the flour. Slash the tops of the loaves three times.
  • Place the loaves on the middle rack of a cold oven with a pan of hot tap water on the rack below it. Close the oven, set the heat at 400 degrees, and set the timer for 40 minutes. It is imperative that you start this in a cold oven!
  • After 40 minutes, remove the bread from the oven and transfer the baking sheet to a cooling rack. Cool the bread completely before removing from the pan and slicing.

Number Of Ingredients 9

3 cups warm water (110 degrees F/45 degrees C)
2 (.25 ounce) packages active dry yeast
⅓ cup honey
5 cups bread flour
3 tablespoons butter, melted
⅓ cup honey
1 tablespoon salt
3 ½ cups whole wheat flour
2 tablespoons butter, melted

Steps:

  • In a large bowl, mix warm water, yeast, and 1/3 cup honey. Add 5 cups white bread flour, and stir to combine. Let set for 30 minutes, or until big and bubbly.
  • Mix in 3 tablespoons melted butter, 1/3 cup honey, and salt. Stir in 2 cups whole wheat flour. Flour a flat surface and knead with whole wheat flour until not real sticky - just pulling away from the counter, but still sticky to touch. This may take an additional 2 to 4 cups of whole wheat flour. Place in a greased bowl, turning once to coat the surface of the dough. Cover with a dishtowel. Let rise in a warm place until doubled.
  • Punch down, and divide into 3 loaves. Place in greased 9 x 5 inch loaf pans, and allow to rise until dough has topped the pans by one inch.
  • Bake at 350 degrees F (175 degrees C) for 25 to 30 minutes; do not overbake. Lightly brush the tops of loaves with 2 tablespoons melted butter or margarine when done to prevent crust from getting hard. Cool completely.

MAKE 6 LOAVES OF WHOLE WHEAT BREAD IN ONE HOUR!

Make 6 Loaves of Whole Wheat Bread in ONE hour! image

Categories     Side

Yield 6 loaves

Number Of Ingredients 8

14-18 cups whole wheat flour (freshly milled or store bought - I prefer to use half whole wheat flour and half all-purpose flour)
6 cups warm water (about 110 degrees F)
2 Tablespoons dough enhancer*
2 Tablespoons gluten*
2/3 cup vegetable oil (or canola, both work great)
2/3 cup honey
2 Tablespoons SAF yeast (requires no pre-dissolving)
2 Tablespoons salt

Steps:

  • If grinding your own wheat, begin there (I use a hard white winter wheat, but red wheat is good too. Grinding the wheat using a NutriMill only takes about 4 minutes and it only has one ingredient: wheat!).
  • With dough hook in place on your Bosch mixer, place water, dough enhancer, gluten, oil, honey, yeast, and 6 cups flour in the bowl. On the Bosch mixer, flip the switch over to "M" to incorporate.
  • Add another 7-8 cups of flour and salt and turn the speed on the mixer to "1".
  • Continue adding flour 1/2 cup at a time until dough cleans the edges of the bowl (takes just a minute or two).
  • Continue kneading dough on speed "2" for another 6-8 minutes.
  • Oil your hands and lightly oil a spot on a clean surface. Divide the dough into six equal portions and shape into loaves.
  • Put loaves into greased pans and let rise until double in size (about 20 minutes).
  • Bake at 350 degrees for 30-40 minutes (internal temperature should be about 195 degrees and the outside will be nice and golden).
