1 ¾ cups all-purpose flour
2 cups white sugar
¾ cup unsweetened cocoa powder
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
2 eggs
1 cup strong brewed coffee
1 cup buttermilk
½ cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans or one 9x13 inch pan.
  • In large bowl combine flour, sugar, cocoa, baking soda, baking powder and salt. Make a well in the center.
  • Add eggs, coffee, buttermilk, oil and vanilla. Beat for 2 minutes on medium speed. Batter will be thin. Pour into prepared pans.
  • Bake at 350 degrees F (175 degrees C) for 30 to 40 minutes, or until toothpick inserted into center of cake comes out clean. Cool for 10 minutes, then remove from pans and finish cooling on a wire rack. Fill and frost as desired.

3/4 c cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt

1 c strong black coffee, cooled
1 c buttermilk

CHOCOLATE FROSTING
1/2 c margarine, softened
2 oz melted unsweetened chocolate, cooled
3 c powdered sugar
3 Tbsp milk
2 tsp real vanilla extract

Steps:

  • 1. Combine flour, sugar, cocoa, baking soda, baking powder, and salt in a large mixing bowl or stand mixer.
  • 2. Add eggs, coffee, buttermilk, oil, and vanilla. Beat at medium speed for two minutes. The batter will be thin.
  • 3. Pour batter into a greased and floured 9x13 pan or two 9 inch cake pans.

Steps:

1 cup Dutch-process cocoa powder
1 cup boiling water
2 cups granulated sugar
1 3/4 cups all-purpose flour (see Cook's Note)
2 teaspoons baking powder
1 teaspoon fine salt
1 cup whole milk
2 large eggs
1 tablespoon pure vanilla extract
1 1/2 cups heavy cream
3/4 cup Dutch-process cocoa powder, sifted
8 ounces semisweet chocolate, chopped
1 teaspoon espresso powder
1 teaspoon pure vanilla extract
Pinch fine salt
2 tablespoons unsalted butter
1/3 cup confectioners' sugar, sifted
2 cups mini marshmallows (about 4 ounces)
Cooking spray
1 or more candy spiders or 2 candy eyes, for decorating

Steps:

  • For the cake: Position an oven rack in the center of the oven and preheat to 350 degrees F. Line the bottom of two 9-inch round cake pans with parchment and grease the parchment and the sides of the pans with oil.
  • Stir together the cocoa powder and boiling water in a small bowl and let sit to bloom for 5 minutes (this step intensifies the chocolate flavor in the cake).
  • Whisk together the granulated sugar, flour, baking powder and salt in a large bowl. Whisk together the bloomed cocoa, oil, milk, eggs and vanilla in a medium bowl. Pour the cocoa mixture into the sugar mixture and stir until smooth (the batter will be thin). Divide the batter evenly between the prepared cake pans. Whisk in the confectioners' sugar until incorporated. Let the frosting cool completely.
  • To assemble: Put 1 cake, bottom-side up, on a serving plate or cake stand. Spread about 1 cup of the frosting over the top but not all the way down the side. Top with the other cake, bottom-side up, and frost the top and sides with the remaining frosting.
  • For the spider web or mummy decoration: Microwave the marshmallows in a microwave-safe medium bowl until they swell and are soft enough to stir, about 1 minute. Let sit a few minutes until cool enough to touch. Spray your hands with cooking spray. For a spider web, pick up a tablespoon-sized blob of the melted marshmallow and stretch it over and around the cake; repeat so that the strings of marshmallow crisscross one another in many directions, and continue until you have what looks like a spider web. For a mummy, stretch the marshmallow so that all the strings on the top of the cake run in the same direction, leaving a small gap between strings for the mummy's eyes to peek out. Garnish with a candy spider or several candy spiders for the web cake or candy eyes for the mummy cake.

1/2 cup unsweetened cocoa powder
1 teaspoon espresso powder
1/4 teaspoon ground cinnamon
4 eggs, separated and at room temperature
1 3/4 cups powdered sugar
1/2 cup unsalted butter, melted and cooled
1 teaspoon vanilla
2 1/2 cups whole milk, at room temperature
Additional powdered sugar, if desired

Steps:

  • Heat oven to 325°F. Line 8-inch square pan with cooking parchment paper, and grease with butter or cooking spray.

1 can(s) eagle brand sweetened condensed milk
1 large egg,beaten
1/2 c water
3/4 c flour
1/2 tsp baking soda

Steps:

  • 1. Break Mince Meat into small pieces and put in 2-quart saucepan .ADD WATER.Place over medium heat and stir untill lumps are thoroughly broken . Boil briskly 1 minute ,stiring constantly . Remove from heat and cool
  • 2. Add Nuts ,Candied Fruit,Condensed Milk,and Egg,blend well .Stirl in Flour and Baking Soda untill just blended.
  • 3. Pour mixture into a 9"x4"x3"loaf pan ,which has been greased ,waxed paper lined and greased again. Bake at 350 degrees .1 hour and 30 minutes or untill center spring back when lightly touched with finger and top is golden brown .I use the tooth pick test ....If a glass type baking dish is used ,reduce oven heat to 325

  • 9. Bake at 300 degrees for 1 hour and 45 minutes or untill toothpick inserted in center comes out clean.Cool 15 minutes turn out of pan and cool completely....
  • 10. To store ,wrap well in aluminum foil or freeze.... *You may add more raisins ,dates ,more nuts ,etc.....

1 3/4 cups flour
2 cups sugar
3/4 cup hershey cocoa
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 cup strong black coffee (or 2 teaspoons instant coffee mixed with 1 cup boiling water)
2 eggs
1/2 cup vegetable oil
1 teaspoon vanilla
1 cup buttermilk (1 CUP regular milk with 1 tbsp. vinegar added) or 1 cup sour milk (1 CUP regular milk with 1 tbsp. vinegar added)
1 cup chocolate fudge topping
1 tablespoon instant coffee
4 cups frozen non-dairy topping, thawed and divided (like cool-whip)

Steps:

  • CAKE:.
  • Combine dry ingredients in a bowl.
  • Add all the rest of the ingredients.
  • Beat at medium speed for 2 minutes.
  • Batter will be thin.
  • Pour into 2 greased and floured 9-inch cake pans.
  • Bake at 350° for 30-35 minutes until toothpick inserted in center comes out clean.
  • Cool on rack until ready to frost.
  • FROSTING:.
  • Prepare, bake and cool 2 9-inch round cake layers.
  • For layer filling, combine hot fudge and instant coffee granules in a medium sauce pan; heat until coffee crystals are dissolved.
  • Cool for 15 minutes and then fold into fudge mixture 2 cups of the whipped topping.
  • Refrigerate 30 minutes.
  • Place first cake layer on a serving plate and spread with 1 cup filling.
  • Top with second layer.
  • Add remaining 2 cups whipped topping to the remaining fudge mixture and mix well.
  • Frost top and sides of the cake with topping mixture.
  • Keep cake refrigerated.
  • TIP: Garnish with chocolate curls, chocolate coated coffee beans or grated chocolate.

Hey I live near Door County, how can I not have a few cherry recipes here? This cake is cool. The cherries sink to the bottom and the marshmallows melt and rise to the top for a glaze on this easy, tasty cake! *Note: I used a Betty Crocker Super Moist White cake mix for this. Other types of Cake mixes with pudding in the mix may require additional baking time. EDIT: The marshmallow flavor isn't really pronounced. It's the magic in how they rise up make everything come together.

4 cups miniature marshmallows (about 3/4 of a 10.5-ounce package)
1 (21 ounce) can cherry pie filling
1 (18 1/4 ounce) package white cake mix
1 1/4 cups water
1/3 cup vegetable oil
3 whole eggs

Steps:

  • Prepare cake mix. Beat cake mix, water, oil, and eggs in a large bowl on LOW speed for 30 seconds, then on MEDIUM speed for 2 minutes, scraping bowl occasionally. Set aside.
  • Spray a 13x9x2-inch baking pan with vegetable spray. Preheat oven to 350°F.
  • Sprinkle marshmallows evenly over the bottom of the pan. Pour batter over marshmallows.
  • Spoon cherry filling evenly over cake batter.
  • Bake in a preheated 350°F oven 30 to 40 minutes.
  • Top of cake will be bubbly and marshmallows will be sticky.
  • Let cool before serving.

6 tablespoons unsalted butter
3 large eggs, at room temperature, separated
3/4 cup granulated sugar
2/3 cup all-purpose flour (see Cook's Note)
1/8 teaspoon fine salt
1 1/2 cups milk
1 teaspoon vanilla extract
1 cup strawberries, sliced 1/4 inch thick
1 cup raspberries, halved lengthwise
1/2 teaspoon cream of tartar
Confectioners' sugar, for serving
Whipped cream, for serving

Steps:

  • Position a rack in the center of the oven and preheat to 325 degrees F. Line an 8-inch square metal baking pan with a 12-by-8-inch piece of parchment paper leaving an overhang on 2 sides.
  • Melt the butter in a small microwave-safe bowl in the microwave, about 1 minute. Brush the parchment paper with some of the melted butter, then flip it over and press it back in the pan. Brush the other side of the paper and the sides of the pan with butter.
  • Whisk the egg yolks and sugar vigorously in a large bowl until pale, creamy and thick, 1 to 2 minutes. Pour in the remaining melted butter and whisk until incorporated. Add the salt and all but 2 tablespoons of the flour, mixing until completely combined.
  • Heat the milk in a microwave safe bowl or measuring cup in the microwave until warm, about 1 minute. Slowly add the milk and vanilla to the egg yolk mixture, whisking constantly until well combined (the batter will be thin). Toss the berries with the reserved 2 tablespoons flour and gently stir into the mixture.
  • Beat the egg whites and the cream of tartar in a clean bowl with an electric mixer on medium speed in until stiff peaks form, about 2 minutes. Scrape the whites into the yolk mixture, gently breaking them up a little with a whisk. Using a whisk, gently stir and fold the mixture a few times to coat the whites with liquid while keeping as much volume as possible (the batter will not be homogeneous). Pour the batter into the prepared pan and gently smooth the top with a rubber spatula.
  • Bake until the top is browned and puffed and the cake is mostly set with a slight jiggle in the center, about 1 hour. Let the cake cool completely in the pan, about 2 hours.
  • To serve, dust the top of the cake with confectioners' sugar. Run a small offset spatula or thin knife around the edges of the pan to loosen. Use the parchment paper overhang to lift the cake from the pan and place it on a cutting board. Cut the cake into 9 squares and serve topped with whipped cream.

⅓ cup all-purpose flour
2 teaspoons instant espresso powder
¾ teaspoon sea salt
4 eggs at room temperature, separated
1 cup white sugar
1 tablespoon water
½ cup unsalted butter, melted
2 teaspoons vanilla extract
2 cups whole milk, lukewarm
1 teaspoon cream of tartar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease an 8-inch baking pan.
  • Whisk cocoa powder, flour, espresso powder, and salt together in a bowl.
  • Combine egg yolks, white sugar, and water in the bowl of a stand mixer. Beat on high speed until eggs are light and creamy, about 2 minutes. Reduce speed to low and add butter and vanilla extract. Increase speed to medium; beat until light and fluffy, about 1 minute. Reduce speed to low and add the cocoa mixture in 3 batches, mixing thoroughly after each addition and scraping down the sides of the bowl. Stir milk slowly into the batter until well combined. Pour chocolate batter into a separate bowl.
  • Clean and dry out bowl and beaters. Beat egg whites and cream of tartar together on high speed until stiff peaks form. Fold 3/4 of the egg white mixture into the chocolate batter using a spatula; pour back into the egg white bowl, folding mixture in slowly until batter is smooth but still light and fluffy. Pour batter into the prepared pan.
  • Bake in the preheated oven until edges are set and center still jiggles slightly, about 50 minutes. Let cake cool completely, at least 30 minutes.
