CHICKPEA SALAD WITH LEMON, PARMESAN AND FRESH HERBS image

Number Of Ingredients 7

1 15oz can chickpeas, rinsed and drained
2 tbls chopped fresh basil
2 tbls chopped fresh Italian parsley
2 tbls fresh lemon juice
4 tsp olive oil
1 small garlic clove, pressed
1/3 cup freshly grated Parmesan cheese

Steps:

  • Combine rinsed and drained chickpeas, chopped fresh basil, chopped Italian parsley, fresh lemon juice, olive oil and pressed garlic in medium bowl. Add grated Parmesan cheese and toss gently to blend all the ingredients thoroughly. Season chickpea salad to taste with coarse koshe salt and freshly ground pepper.
