This bar cookie is an old fashioned favorite. Chocolate chips, nuts and coconut are set in a caramelized layer on top of a graham cracker crust.

Steps:

  • Heat oven to 350 degrees F (325 degrees for glass dish). Coat 13x9-inch baking pan with no-stick cooking spray.
  • Combine graham cracker crumbs and butter. Press into bottom of prepared pan. Pour sweetened condensed milk evenly over crumb mixture. Layer evenly with chocolate chips, coconut and nuts. Press down firmly with a fork.
  • Bake 25 minutes or until lightly browned. Cool. Cut into bars or diamonds. Store covered at room temperature.

2 large eggs
2 cups peanut butter
¾ cup semisweet chocolate chips
¾ cup dark chocolate chips
½ cup chopped raw pecans
½ cup chopped raw almonds
1 cup flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a 9x13-inch glass baking dish with parchment paper.
  • Mix sugar and eggs together in a bowl until smooth; stir in peanut butter until well blended. Pour peanut butter mixture into the prepared baking dish.
  • Bake in the preheated oven until cookie base is partly cooked, 8 minutes.

1/2 c butter melted
11/2 c graham cracker crumbs
1 c chopped nuts (pecans or walnuts)
1 c semi sweet chocolate morsels 6 oz
11/3 c flakes coconut 31/2 oz can toasted
1 can(s) eagle brand sweetened condensed milk

Steps:

  • 1. Spray pan with non stick spray. Pour melted butter into the bottom of a 13 x9x2 inch pan
  • 2. Sprinkle graham cracker crumbs evenly over butter and press down lightly. Sprinkle nuts evenly, scatter chocolate morsels over nuts then sprinkle the coconut evenly over the choc0late

This version starts with a thicker graham cracker cookie base. It's baked with an egg, a bit of brown sugar and some leavener, which makes it pleasantly dense and chewy and means that it cuts nicely and stands up well to the decadent toppings. Next, unsweetened flaked coconut and dark chocolate are layered with plenty of chopped pecans and condensed milk. The slightly bitter chocolate and toasty coconut tame the sweetness of the condensed milk, which caramelizes as it cooks, making the whole package well-balanced and full of flavor.

1/2 cup margarine or 1/2 cup butter, melted
1 (14 ounce) can sweetened condensed milk
1 1/4 cups seedless red raspberry preserves
1 1/3 cups flaked coconut
1 cup chopped pecans or 1 cup walnuts

Steps:

  • In a small bowl, combine crumbs and sugar. Add butter, Toss until combined. Press onto bottom of 13x9" baking pan.
  • Evenly drizzle the sweetened condensed milk over crumbs. Refrigerate for 10 minutes. Spoon preserves over top.
  • Sprinkle with coconuts and pecans. Bake at 350 degrees for 25-30 minutes or until lightly brown.
  • Cool completely and cut into bars. Store, loosely covered, at room temperature.

I got this from a business associate of DH who was raised in Canada. This is her Nana's recipe. A little different that the other Nanaimo bars on the 'zaar because it uses condensed milk. There is no baking envolved. Chill time is cook time.

1/2 cup butter, do not use margarine
1/4 cup brown sugar, packed
1/4 cup cocoa
1 egg, well beaten
2 cups graham cracker crumbs
1 cup coconut, shredded
1/2 cup pecans or 1/2 cup walnuts, finely chopped
14 ounces condensed milk
1/3 cup lemon juice, fresh
1/3 cup melted semisweet chocolate morsel

Steps:

  • In a saucepan melt the butter.
  • Stir in brown sugar, cocoa, egg, graham cracker crumbs, coconut and nuts.
  • Press into bottom of a 9x9 pan.
  • Combine condensed milk and lemon juice.
  • Mix together until well blended.
  • Spread onto cookie base evenly.
  • Drizzle with melted semi sweet morsels.
  • Refrigerate until firm, about 2 hours.

1 package (11 ounces) vanilla wafers
1/2 cup butter, melted
3 ounces cream cheese, softened
1 can (14 ounces) sweetened condensed milk
1/2 teaspoon pumpkin pie spice
1 can (15 ounces) solid-pack pumpkin
1 cup dried cranberries
1-1/2 cups sweetened shredded coconut
1 cup white baking chips
1 cup chopped pecans

Steps:

  • Preheat oven to 350°. Place wafers in a food processor; pulse until coarse crumbs form. Drizzle with melted butter; pulse until blended. Press into bottom of a greased 13x9-in. baking pan., In a large bowl, beat cream cheese, milk and pie spice until smooth. Beat in pumpkin; stir in cranberries. Pour over crust. Layer with coconut, baking chips and pecans., Bake 45-55 minutes or until golden brown. Cool in pan on a wire rack 10 minutes., Loosen sides from pan with a knife; cool completely. Cut into bars. Refrigerate leftovers.
