CREAMY SMOKED SAUSAGE MAC AND CHEESE



Creamy Smoked Sausage Mac and Cheese image

Number Of Ingredients 7

1 (13-ounce) package Kiolbassa Polish Smoked Sausage, sliced
1 (16-ounce) block sharp cheddar cheese
1 (1-pound) box elbow macaroni
4 cups milk
6 tablespoons unsalted butter
6 tablespoons all-purpose flour
1 1/2 teaspoons salt

Steps:

  • Lightly brown the sausage in a large skillet over medium heat. Remove from the pan and drain on paper towels. Set aside.
  • Grate the cheese on a box grater. Set aside.
  • Cook the pasta according to the package instuctions and drain. Set aside.
  • Pour the milk into a microwavable container and heat until warm - about 2 1/2 minutes.
  • In a large stock pot or dutch oven, melt the butter over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly. Gradually add the warm milk, whisking constantly until it has all been added. Cook, stirring very frequently to prevent scorching, until thick - about 5 minutes. Reduce the heat to low and gradually add the shredded cheese, stirring constantly until melted. Add the salt and mix well. Add the pasta and sausage to the pot and mix well. Add additional salt and pepper to taste. Serve immediately.

I found this smoked mac and cheese recipe years ago in a magazine, and kept adding and taking away ingredients until I found the perfect combination. You can bake it in the oven, but grilling or smoking the dish is the real way to go. -Stacey Dull, Gettysburg, Ohio

6 cups small pasta shells
12 ounces Velveeta, cut into small cubes
2 cups shredded smoked cheddar cheese, divided
1 cup shredded cheddar cheese
1 cup 2% milk
4 large eggs, lightly beaten
3/4 cup heavy whipping cream
2/3 cup half-and-half cream
1/2 cup shredded provolone cheese
1/2 cup shredded Colby-Monterey Jack cheese
1/2 cup shredded pepper jack cheese
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon smoked paprika
1/2 teaspoon liquid smoke, optional
Dash cayenne pepper, optional
8 bacon strips, cooked and crumbled, optional

Steps:

  • Preheat grill or smoker to 350°. Cook pasta according to package directions for al dente. Drain and transfer to a large bowl. Stir in Velveeta, 1 cup smoked cheddar, cheddar cheese, milk, eggs, heavy cream, half-and-half, provolone, Colby-Monterey Jack, pepper jack, salt, pepper, paprika and, if desired, liquid smoke and cayenne pepper., Transfer to 2 greased 13x9-in. baking pans; sprinkle with remaining 1 cup smoked cheddar cheese. Place on grill or smoker rack. Grill or smoke, covered, until a thermometer reads at least 160°, 20-25 minutes, rotating pans partway through cooking. Do not overcook. Let stand 10 minutes before serving; if desired, sprinkle with bacon.

1 lb macaroni, cooked
12 oz velvetta cheese, cubed
1 c cheddar cheese, shredded
1 c mozzarella cheese, shredded
1 c milk
salt & pepper to taste
1 pkg beef smoked sausage, cut into slices
1 tsp red pepper flakes
1 tsp garlic powder
1/2 stick butter, melted
1/2 c panko bread crumbs

Steps:

  • 1. In a large pot of salted water, cook macaroni. Rinse & drain toss with melted butter, place in a large casserole dish.
  • 2. Place all cheeses in a sauce pot, add milk and all seasonings. Cook on low - med heat until cheese melted, stirring often.
  • 3. Pour melted cheese sauce over macaroni and add sliced smoked sausage. Mix together
  • 4. Top with panko bread crumbs & place a few pats of butter over top if you like. Bake @350 degrees for about 45 minutes until bubbly. ENJOY!!!!

I was looking for something simple to fix for dinner and I wanted to clear some things out of my freezer and cupboards, so I came up with this. This recipe only uses 1/2 pound of meat for 4 servings. So I would also call this economical as well. The cooking time includes the time for cooking the pasta. Posted on March 16th, 2006.

1 cup uncooked pasta (I like to use spiral)
2 tablespoons canola oil
1/2 lb smoked sausage, thinly sliced (or you can use the same amount of chopped cooked ham)
1/4 cup chopped onion (I like to use sweet onion)
1 cup milk
1 tablespoon self-rising flour
2 ounces Velveeta cheese, cut into cubes
1/2 teaspoon salt (or to taste)
1/2 teaspoon ground black pepper (or to taste)

Steps:

  • Cook pasta according to package directions, drain and set aside.
  • Mix together flour and milk, set aside.
  • In a medium sized skillet over medium heat, add oil, sausage, and onion.
  • Cook until lightly browned.
  • Add pasta, milk, and Velveeta.
  • Stir until cheese is melted and pasta is well coated (if at this point you want it creamier and a little more milk), add salt and pepper.
  • Enjoy.
