Great dish, that can be used as a side, or even as a main dish. Give it a try. I adopted this recipe in the recipe adoption and I sure am glad that I did.

8 ounces bow tie pasta
1 teaspoon basil
3 tablespoons margarine, divided
1/4 teaspoon paprika
1 tablespoon unbleached flour
1/4 teaspoon black pepper
1/2 cup vegetable stock
2 cups broccoli florets
3/4 cup milk
1 medium sweet red pepper, chopped
1/2 cup cheddar cheese, Grated
1 cup mushroom, Sliced
1/2 cup parmesan cheese, Grated
2 scallions, sliced
1 tablespoon fresh parsley, Chopped

Steps:

  • Bring a large pot of water to boil; cook pasta until al dente.
  • While pasta is cooking, in med saucepan, melt 2 T of the margarine.
  • Remove from heat; add flour and stir until blended.
  • Whisk in stock and milk, stirring over med heat until mixture comes to a boil and thickens.
  • Reduce heat to low.
  • Stir in cheeses and seasonings.
  • Continue stirring until cheese is melted.
  • Remove from heat and set aside.
  • In a large skillet, melt remaining 1 T margarine.
  • Add remaining ingredients.
  • Cook vegetables, stirring constantly, for about 5 minutes, until tender/crisp.
  • Reduce heat to low.
  • When noodles are done, drain well.
  • Toss with vegetables; stir in cheese sauce.
  • Garnish with scallion curls.

1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 cup sour cream
1/4 cup milk
1 tablespoon dried minced onion
1/2 teaspoon salt
1/8 teaspoon pepper
2 packages (16 ounces each) frozen mixed vegetables, thawed
4 ounces elbow macaroni, cooked and drained
2 cups shredded cheddar cheese

Steps:

  • In a large bowl, combine the soup, sour cream, milk, onion, salt and pepper. Stir in the vegetables, macaroni and cheese. , Transfer to a greased 3-qt. baking dish. Cover and bake at 375° for 30-35 minutes or until bubbly.

Sneak vegetables into macaroni cheese, a popular family meal that becomes even more nourishing for kids with the addition of butternut squash, leeks and peas

150g butternut squash, cut into chunks
300g penne (we used Napolina 50% white 50% wholemeal)
40g butter
1 small leek, finely sliced (about 50g)
25g flour
600ml milk
100g frozen peas
175g mature Cheddar cheese (we used a vegetarian version)
1 slice day-old brown bread, blitzed into crumbs

Steps:

  • Heat oven to 200C/fan 180C/gas 6. Put the butternut squash in a steamer over boiling water. Steam for around 15-20 mins or until tender. Drain and then blitz in a food processor until smooth.
  • Cook the pasta according to the pack instructions.
  • Heat the butter in a medium saucepan, add the leek and cook for 2 mins. Stir in the flour and cook for 1-2 mins more. Take the pan off the heat and gradually whisk in the milk. Return to the heat and bring to the boil, stirring all the time. Simmer for 5 mins. Stir in the peas and bring back to a simmer. Take the pan off the heat and stir in the butternut squash, then 125g cheese.
  • Stir the pasta into the sauce and transfer to an ovenproof dish. Sprinkle over the remaining cheese and the breadcrumbs. Bake for 20 mins or until golden and bubbling.

8 ounces elbow macaroni, cooked
1 teaspoon olive oil
1 lb broccoli, but into flowerettes
1 teaspoon salt
6 ounces fresh Baby Spinach
2 teaspoons butter
1/2 onion, chopped
8 ounces mushrooms, sliced
2 tablespoons flour
1/2 teaspoon salt
pepper
2 cups milk
2 cups sharp cheddar cheese, grated
1 cup cream
1/2 teaspoon nutmeg

Steps:

  • In a large bowl, toss the macaroni with the oil.
  • Cook the broccoli with 1 teaspoons salt in boiling water for 2 minutes then drain well and rinse in cold water to stop the cooking.
  • Add broccoli and the spinach to the macaroni.
  • Melt butter in medium saucepan over medium heat, add onion and saute under tender.
  • Add mushrooms and cook 5 more minutes.
  • Sprinkle in the flour, stirring until blended.
  • Gradually add in milk and cook over medium heat, stirring constantly for 15 minutes.
  • Add 1 1/2 cups cheese, 1/2 teaspoons salt, cream pepper and nutmeg. Stir until cheese melts.
  • Fold this sauce into the macaroni then spoon everything into a lightly greased 13x9 inch baking dish.
  • Sprinkle with remaining 1/2 cup cheese.
  • Bake in a preheated 375 degree oven for 40 minutes.

ONE-POT BROCCOLI MAC AND CHEESE



One-Pot Broccoli Mac and Cheese image

In the time it takes to make boxed macaroni and cheese, you can have a homemade version that's creamy with lots of sharp Cheddar, studded with broccoli and doesn't require making a roux. Instead, the sauce is thickened by the pasta's starch: As the noodles cook in milk, the milk thickens to the consistency of cream and the pasta absorbs the seasonings. Here, that's garlic powder, but you could also use mustard powder, ground cayenne or grated nutmeg like in traditional mac and cheese. The broccoli pieces end up soft and sweet, but if you want more bite, add them halfway through cooking.

1 pound elbow macaroni
1 pound broccoli, stem and florets coarsely chopped
2 1/2 cups whole milk
2 teaspoons kosher salt, plus more to taste
1/2 teaspoon garlic powder
8 ounces coarsely grated sharp Cheddar (about 2 cups)
Black pepper

Steps:

  • In a large pot or skillet, combine the macaroni, broccoli, milk, salt and garlic powder. Add 3 cups of water, and stir to combine. (The pasta may not be fully submerged. That's OK!) Bring to an active simmer over medium-high. Reduce the heat to medium to gently simmer. Cook, stirring often to ensure even cooking and to keep things from sticking to the bottom of the pot, until the pasta is tender, and the liquid resembles heavy cream and coats the noodles, 8 to 12 minutes. If the liquid evaporates so much that you don't see any between noodles, add 1/2 cup water. Adjust the heat as needed to maintain a gentle simmer.
  • Remove from heat and stir in the Cheddar. Season to taste with salt and pepper. Eat!

Boost the veg in this family favourite - top spinach and cherry tomatoes with creamy mac 'n' cheese for a dinner that's rich in calcium and fibre

500ml skimmed milk
25g cornflour
220g macaroni
100g extra mature cheddar , grated (check the label for vegetarian)
25g Grana Padano or vegetarian altenative, grated
8 blocks frozen spinach , defrosted
220g ripe cherry tomatoes , halved

Steps:

  • Heat oven to 200C/180C fan/gas 6. Mix 3 tbsp of the milk with the cornflour and warm the remaining milk in a pan. Meanwhile, bring a pan of water to the boil, tip in the macaroni and cook for 6 mins, stirring occasionally.
  • To make the sauce, stir the cornflour mix into the warm milk and keep stirring over a low heat until thick and smooth. Remove from the heat and stir in most of the cheddar (leaving a little to sprinkle over at the end) along with the Grana Padano and pepper to taste.
  • Drain the macaroni well, then stir into the sauce. Squeeze the excess moisture from the spinach by pressing it into a fine sieve. Divide the spinach between four individual ovenproof dishes, followed by the tomatoes. Spoon the macaroni cheese over the veg, then finish with a sprinkle of the remaining cheddar. Bake for 15-20 mins or until the sauce bubbles and browns on top.
