Old-Fashioned Macaroni and Cheese image

Bring back the taste of days gone by with this ooey-gooey mac-and-cheese classic. A little ground mustard and hot pepper sauce give it just the right spice. -James Backman, Centralia, Washington

3-1/2 cups uncooked elbow macaroni (about 12 ounces)
1/4 cup butter, cubed
1/4 cup all-purpose flour
1 teaspoon salt
3/4 teaspoon ground mustard
1/2 teaspoon pepper
Few dashes hot pepper sauce
3-1/2 cups whole milk
5 cups shredded cheddar cheese, divided

Steps:

  • Cook macaroni in boiling water until almost tender; drain. Meanwhile, in a Dutch oven, melt butter. Stir in the flour, salt, mustard, pepper and pepper sauce until smooth. Cook for 1 minute or until bubbly. Stir in the macaroni, milk and 4 cups cheese. , Transfer to an ungreased 13x9-in. baking dish. Cover and bake at 350° for 45-50 minutes or until bubbly. Uncover; sprinkle with the remaining cheese. Let stand for 5 minutes before serving.

This is a spicy pasta dish that is very fast and easy to make. It's my variation of the dish found at Macaroni Grill. I usually serve this with an italian style salad, garlic shrimp, and either herb bread or french bread.

1/4 cup olive oil
3 cloves garlic, minced
2 cans Italian-style stewed tomatoes
1 teaspoon crushed red pepper flakes
16 ounces penne pasta
1/4 cup parmesan cheese

Steps:

  • In skillet, saute garlic in olive oil until garlic is lightly browned.
  • Add italian style stewed tomatoes and crushed red peppr.
  • Simmer for approx 20 minutes on low.
  • Cook pasta according to package directions.
  • When both arrabiata sauce and pasta are done, toss together.
  • Toss in cheese while sauce is hot so it will melt.

2/3 cup good olive oil
1 cup whole peeled garlic cloves (24 cloves)
2 (28-ounce) cans whole peeled San Marzano tomatoes
2 teaspoons whole fennel seeds, chopped
1 teaspoon crushed red pepper flakes
1/3 cup dry red wine, such as Chianti
Kosher salt and freshly ground black pepper
1/4 cup julienned fresh basil leaves, plus extra for serving
1 pound dry penne rigate, such as DeCecco
Freshly grated Parmesan cheese, for serving

Steps:

  • In a medium (10-inch) pot or Dutch oven, such as Le Creuset, warm the olive oil over medium-low heat. Add the garlic and cook for 10 to 12 minutes, tossing occasionally, until the garlic has softened and is lightly browned.
  • Meanwhile, drain the tomatoes, place them in a food processor fitted with the steel blade, and pulse until they're roughly chopped. With a slotted spoon, transfer the garlic to the food processor and pulse again to chop the garlic. Pour the tomato mixture into the pot with the olive oil, add the fennel, red pepper flakes, red wine, 1 tablespoon salt, and 1 teaspoon black pepper. Bring to a boil, lower the heat, and simmer for 30 minutes. Stir in the basil, taste for seasonings (it will be very spicy!), and keep warm over very low heat.
  • Meanwhile, bring a large pot of water to a full boil. Add 2 tablespoons kosher salt and the penne and cook according to the directions of the package.
  • Two minutes before the pasta is al dente, using a wire or spider strainer, lift the pasta out of the boiling water and add it to the sauce, along with 1/4 cup of the pasta water. Simmer for 2 to 3 minutes, until the pasta is al dente. Spoon the pasta into low shallow bowls, sprinkle with extra basil and Parmesan cheese, and serve hot.

Arrabiata means a hot, spicy dish with tomatoes. My boys love this dish and you can adjust just how spicy you like it. Good for those crisp fall evenings. I got this recipe out of our newspaper a long time ago.

1/2 lb penne pasta
1 tablespoon olive oil
2 cloves garlic
1 (16 ounce) can whole tomatoes, drained and chopped fine
1/4 teaspoon fresh coarse ground black pepper
1 teaspoon crushed red pepper flakes
3/4 cup pitted kalamata olive, chopped
1/2 teaspoon dried basil
3 tablespoons butter
3 tablespoons flour
1 1/2 cups milk
3/4 cup grated Fontina cheese
1/4 cup grated parmesan cheese, plus
2 tablespoons grated parmesan cheese

Steps:

  • Cook pasta in boiling, salted water until al dente.
  • In a medum skillet heat olive oil.
  • Saute garlic until golden.
  • Add the tomatoes and the peppers.
  • Simmer uncovered over medium heat for 5 minutes, until tomatoes are almost mushy.
  • Stir in olives and basil and set aside.
  • Melt butter in heavy saucepan.
  • Stir in flour.
  • Cook and whisk over medium heat for l minute.
  • Add milk all at once, whisking until smooth.
  • Cook and stir until thickened and bubbly.
  • Stir in fontina and 1/4 cup Parmesan cheese and remove from heat.
  • Stir until cheese melts.
  • Add salt to taste.
  • Stir in tomato mixture and stir well.
  • Drain macaroni.
  • Return to pasta pot and shake until all moisture evaporates.
  • Add sauce, sirring well to coat all the pasta.
  • Pour into a 9 by 13 inch baking pan.
  • Sprinkle with remaining Parmesan chees.
  • Bake at 400 degrees for 20 minutes, until golden brown.
