1/3 cup brown sugar, firmly packed
1/4 cup granulated sugar
1 teaspoon ground cinnamon
3/4 cup Fisher Macadamia Halves and Pieces
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter, softened
1 cup granulated sugar
2 eggs
1 teaspoon vanilla extract
1 cup sour cream

Steps:

  • Preheat oven to 350°F Lightly spray 8-inch square baking pan with no-stick cooking spray; set aside.
  • For topping, combine sugars, cinnamon and macadamia pieces; set aside.
  • For cake, in medium bowl combine flour, baking soda, baking powder and salt.
  • In large mixing bowl cream butter and sugar using electric mixer. Add eggs and vanilla extract; mix until blended. Alternately add flour mixture and sour cream to butter mixture, mixing until just combined.
  • Spread half of cake mixture in pan. Sprinkle half of topping over cake mixture; repeat with remaining cake mixture and topping.
  • Bake 40 to 45 minutes or until toothpick inserted in center is clean when removed. Remove to cooling rack; cool completely. Cut into squares to serve.

1 2/3 cups Gold Medal™ all-purpose flour
3/4 cup packed brown sugar
1/3 cup butter or margarine, softened
1 cup milk
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
1/4 cup English toffee bits
1/4 cup flaked coconut
1/4 cup chopped macadamia nuts

Steps:

  • Heat oven to 350° F. Grease bottom and sides of 9-inch or 8-inch square pan with shortening.
  • In large bowl, beat all ingredients except toffee bits, coconut and nuts with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Stir in 2 tablespoons of the toffee bits. Pour into pan. Sprinkle remaining 2 tablespoons toffee bits, the coconut and nuts over batter.
  • Bake 32 to 35 minutes or until toothpick inserted in center comes out clean. Cool completely, about 1 hour.

1 1/3 cups macadamia nuts
1/2 cup flour
1 teaspoon baking powder
6 large eggs (separated)
3/4 cup superfine sugar
1 teaspoon vanilla extract
1 cup dark brown sugar
1 cup half-and-half
4 teaspoons unsalted butter
1 1/4 cups whipping cream (whipped)

Steps:

  • CAKE.
  • Preheat oven to 350*.
  • Butter a 10" round cake pan.
  • In food processor combine nuts, flour and baking powder. Pulse to chop nuts finely.
  • In large bowl, beat egg yolks and sugar together.
  • In another bowl, beat egg whites until stiff.
  • Fold whites into yolk mixture.
  • Fold in nut mixture.
  • Stir in vanilla.
  • Spoon into cake pan.
  • Bake 30 minutes until golden.
  • CARAMEL SAUCE.
  • In saucepan over medium heat, add sugar and half and half and stir until sugar dissolves.
  • Simmer gently without stirring until caramelized.
  • Remove from heat, stir in butter.
  • Let cool.
  • Drizzle over cake and top with whipped cream.

PASSION FRUIT MOUSSE WITH MACADAMIA NUT TOFFEE



Passion Fruit Mousse With Macadamia Nut Toffee image

This recipe was emailed to me by the Executive Chef Aaron Wright of the Canlis Restaurant in Seattle, Washington. After having this in the restaurant I just had to know how to re-create it for myself--so decadent and wonderful! This will take a little bit of time, but mostly because you need time for the mousse to chill, and for the toffee to cool.

1 3/4 cups passion fruit puree
3/4 cup orange juice (NO PULP)
2 teaspoons gelatin powder
3 cups heavy cream
1 1/4 cups sugar
1 1/2 cups sugar
1/2 cup water
1/4 cup honey
1/4 cup rum
2 cups macadamia nuts, toasted & chopped
4 ounces unsalted butter

Steps:

  • First prepare the mousse, as you will need to chill it for at least an hour before serving.
  • For the mousse:.
  • In a saucepan combine passionfruit puree, orange juice and gelatin.
  • Heat through until gelatin has been dissolved.
  • Remove from the heat and place in a bowl over and ice bath stirring constantly until the mixture starts to thicken.
  • While the mixture is cooling whip the heavy cream and sugar until stiff peaks form.
  • When the passionfruit has thickened add it to the whipped cream and mix throughly to combine.
  • Chill for at least an hour before serving.
  • For the mac nut toffee:.
  • In a heavy sauce pot combine all ingredients except the nuts.
  • Using a candy thermometer cook this mixture to 220 degrees.
  • Then add mac nuts and continue cooking until it reaches 300 degrees and immediately remove from the heat.
  • Pour on to a silpat lined half sheet pan. spread out evenly and allow to cool. When cool rough chop the toffee into small pieces.
  • The toffee can be stored in an airtight container for 4-5 days.
  • Before serving, lightly fold pieces of the macadamia toffee into the passionfruit mousse.
  • For an added touch, serve topped with whipped cream!

1/2 cup butter or margarine, softened
1 cup packed brown sugar
1/2 cup sugar
2 cups all-purpose flour
1 cup buttermilk
1 large egg, room temperature
1 teaspoon baking soda
1 teaspoon vanilla extract
3 chocolate English toffee candy bars (1.4 ounces each), chopped
1/4 cup chopped pecans

Steps:

  • In a mixing bowl, blend butter, sugars and flour; set aside 1/2 cup. To the remaining butter mixture, add buttermilk, egg, baking soda and vanilla; mix well. Pour into a greased and floured 13x9-in. baking pan. Combine chopped candy and pecans with the reserved butter mixture; sprinkle over coffee cake. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

1 cup butter
1 cup sugar
3 tablespoons water
1 tablespoon light corn syrup
1 teaspoon vanilla
1 1/2 cups white chocolate chips
1/2 cup chopped macadamia nuts, toasted

Steps:

  • Line a 15xl0xl-inch baking pan with foil, extending foil over edges of pan; set aside.
  • Butter the sides of a heavy 2-quart saucepan.
  • Melt the 1 cup butter in saucepan.
  • Add sugar, the water, and corn syrup.
  • Cook and stir over medium high heat until mixture boils.
  • Clip a candy thermometer to side of pan.
  • Reduce heat to medium; continue boiling at a moderate, steady rate, stirring frequently, until thermometer registers 290°F, soft-crack stage (about 15 minutes).
  • (Adjust heat as necessary to maintain a steady boil.) Watch carefully after 280 degrees F.
  • to prevent scorching.
  • Remove pan from heat; remove thermometer.
  • Stir in vanilla.
  • Pour candy into the prepared pan, spreading quickly to about 1/4-inch thickness.
  • (Toffee will not cover surface of pan.) Let candy stand for 2 to 3 minutes or just until set.
  • Sprinkle with white baking pieces.
  • Let stand for 1 to 2 minutes.
  • When baking pieces are soft, spread over candy.
  • Sprinkle with nuts, pressing lightly into melted white chocolate.
  • Chill in the refrigerator about 20 minutes or until firm.
  • Use foil to lift candy out of pan.
  • Break candy into pieces about 2 inches in size.
  • Store candy in a tightly covered container in the refrigerator for up to 3 weeks.
