From Raw Food Celebrations - Party Menus for Every Occasion by Nomi Shannon and Sheryl Duruz. It's due back to the library tomorrow and this looks good! The book says these cookies were meant to be dehydrated but taste good fresh too. "If you are not dehydrating the cookies, use dried coconut."

Steps:
- Put all ingredients into a blender and process until smooth.
- Shape into cookies and place on mesh dehydrator sheets.
- Dehydrate at 105 -115F for 8-10 hours, or until outside is dry and the cookie is chewy.
- NOTE: If you're not using a high-speed blender, blend the cashews first before adding the other ingredients. "Finely grind them".

Steps:
- Mix all ingredients (except the reserved pie filling & powdered sugar).
- Drop by tablespoon onto a non-stick cookie sheet.
- Bake at 350°F for 10 - 12 minutes or until done.
- Bottoms of the cookies should not get too dark--light brown is good.
- Let cookies cool completely.
- Mix powdered sugar with enough lemon pie filling to make icing yellow, or do like I do and add some yellow food coloring, then spread over the cooled cookie.
- ENJOY!
LEMON LUSCIOUS SNOW CAP COOKIES
These are melt in your mouth good and a one of a kind cookie. I always triple this recipe for potluck days since everyone grabs 2 handfuls.

Steps:
- Preheat oven to 350°.
- Cream butter and sugar.
- Add lemon zest, eggs and extract.
- Stir in flour and baking powder.
- Add nuts and coconut.
- Shape into 1 1/2" balls.
- Roll in powdered sugar and place on greased cookie sheets.
- Bake for 18 minutes until the edges are set.
- Cool a minute or two on cookie sheets, and remove to wire rack, and sprinkle powdered sugar over the tops as cookies continue to cool.

LUSCIOUS LEMON COOKIES
My Dad adores lemon. I created these to give to him as part of a tray of cookies for Valentine's Day.

Steps:
- 1. Preheat oven to 350. Line cookie sheets with parchment paper (do NOT spray with cooking spray)
- 2. Cream together softened butter and shortening stick.
- 3. Incorporate eggs one at a time until well blended, then add in vanilla and lemon extract.
- 4. Add cake mix and jello mix and mix well, scraping sides of mixer often.
- 5. Using two spoons or hands, drop by balls and then flatten onto parchment paper. Bake at 350 for 7 to 10 minutes, depending on your oven. Watch carefully at the end so they don't burn.
- 6. OPTIONAL: For even more lemon flavor, frost with lemon frosting.
