LOW FAT "CREAM" OF CAULIFLOWER SOUP



Low Fat

The "cream" comes from evaporated milk and blending the soup. Onion and garlic amounts can be varied to taste. Carrot may be added for colour. 1/4 cup of CheezWhiz or 2 oz grated tangy cheddar are also optional. Delicious, and so easy. Freezes well.

6 cups low-sodium chicken or 6 cups vegetable stock
2 tablespoons butter
2 medium onions, coarsely chopped
4 garlic cloves, sliced
1/4 teaspoon nutmeg, freshly grated
1 1/2 lbs cauliflower, trimmed and coasely chopped (about 1 large head)
1/2 cup evaporated milk
1/2 teaspoon pepper, fine ground

Steps:

  • In a large pot, melt the butter and add 1/2 cup of the stock.
  • Add onions, garlic and nutmeg. Cook, covered, stirring occasionally, until tender but not browned, 5-10 minutes.
  • Stir in the rest of the stock and the cauliflower.
  • Bring to a boil, reduce the heat and simmer until cauliflower is tender.
  • Puree until smooth and return to the pot.
  • Add evaporated milk, pepper and optional cheese.
  • Simmer briefly and ladle into warm bowls. Garnish with parsley or fresh dill or chives if preferred.

1 tablespoon flour (all-purpose or gluten-free)
1 medium head of cauliflower (chopped)
2 medium yellow onions (chopped)
4 cups broth (chicken or vegetable)
Salt and pepper to taste
Greek Yogurt ((shown))
Chopped walnuts ((shown))
Shredded cheddar cheese
Homemade croutons
Sliced green onions
Cooked and crumbled bacon

Steps:

  • In a medium saucepan, melt butter on low heat.
  • Add the flour and stir about 2-5 minutes until a lightly browned paste forms.
  • Add the broth, onions and cauliflower and bring to a boil over medium heat.
  • Mix well, reduce to over medium-low heat and simmer for 20-30 minutes, until the vegetables are tender.
  • Use an immersion blender to puree until smooth (or cool, move to a blender and blend until smooth).
  • Season with salt and pepper and add desired toppings.

I found this recipe on kraftfoods.com. It isn't too thick, but has really good flavor! This recipe is extremely quick and easy! You can also use the frozen broccoli and cauliflower blend that has carrots in it. Also, to make this recipe a little healthier, I use the Velveeta 2%.

1 (16 ounce) package frozen broccoli and cauliflower
2 (14 ounce) cans reduced-sodium fat-free chicken broth
12 ounces Velveeta cheese

Steps:

  • Place vegetables and broth in a pot and cover. Bring to a boil. Reduce heat & simmer 10 minutes or until vegetables are tender.
  • While everything is still in the pot, use a fork or potato masher to slightly mash the vegetables to desired consistency.
  • Cut the Velveeta into cubes. Stir into the pot.
  • Cook 5 minutes or until Velveeta is melted and soup is heated through, stirring frequently.

125 g margarine (soft)
1 1/2 cups sugar (300 grams)
2 whole eggs (120 grams)
1 egg white (35 grams)
4 tablespoons cocoa (stuffed - 80 grams)
3 1/2 cups prepared chocolate pudding (Swiss Miss Low-Fat - 400 grams)
2 cups self rising flour (280 grams)
75 g natural applesauce

Steps:

  • Preheat oven to 390 degrees F. (180 C).
  • Grease baking pan with a little bit of the margarine.
  • Mix the rest of the margarine with sugar and 1 whole egg until mixture is unified.
  • Gradually and alternately add: flour, cocoa, 1 whole egg, pudding, flour, cocoa, apple sauce, pudding -- and so on, until all mixes up nicely to a homogeneous mixture.
  • Pure into greased baking pan (square or round) and bake for about 30 minutes, or until cake is ready: dry and bouncy to touch.
  • When the cake is ready I take it out of the oven and cover-seal it with aluminum foil until cools. This ensures the crust keeps moist.
  • To decorate, I use chocolate syrup, usually Hershey's (w/0g fat)- and spread it all over as if it was frosting. It's good enough for the sprinkles to stick, and it adds additional moist and chocolaty flavor.
