Baked Turkey Meatballs. Easy to make, tender, and absolutely delicious! Serve with spaghetti, buns, or over zucchini noodles.

1/3 cup grated Parmesan cheese (plus additional for serving)
1/3 cup Italian-seasoned breadcrumbs (whole wheat if possible)
3 tablespoons finely chopped fresh herbs (basil, parsley, or chives a combo, plus additional for serving)
1 teaspoon kosher salt
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/2 teaspoon dried oregano
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 pound 93% lean ground turkey (keep in your refrigerator until the last possible second)
1 large egg
1 1/2 tablespoons extra-virgin olive oil (plus more as needed)
Prepared pasta sauce
Cooked whole wheat pasta or zucchini noodles
Creamy Polenta
Split and toasted hoagie buns
Prepared brown rice

Steps:

  • Preheat your oven to 375 degrees F. Line a rimmed baking sheet with aluminum foil and coat with nonstick spray.
  • In a large mixing bowl, add the cheese, bread crumbs, herbs, salt, garlic powder, onion powder, oregano, pepper, and red pepper flakes and stir well to combine. Add the turkey.
  • In a small bowl, beat the egg, then add it to the meat mixture. With a fork or your fingers, mix just until combined, being careful not to compact the meat.
  • With a scoop or spoon, scoop the meat and shape into 1 1/2-inch meatballs. Arrange on the prepared baking sheet. You will have about 20 meatballs total.
  • Brush the tops of the meatballs with the olive oil.
  • Bake for 15 minutes, or until the meatballs reach an internal temperature of 165 degrees F on an instant-read thermometer. As an alternate way to check, a meatball in the center of the baking sheet should be fully cooked through when cut in half.
  • While the meatballs cook, warm the sauce and any other items you'd like to serve them with (pasta, hoagie buns, rice, etc.). Serve the meatballs hot, topped with the sauce, cheese, herbs, and any other additions.

2 lbs ground turkey
1 cup shredded zucchini (liquid squeezed out (measured before squeezing))
2 eggs (large)
4 large garlic cloves (grated)
2 tbsp onion flakes or powder
1 tsp oregano (dried)
1 tsp salt
Ground black pepper (to taste)

Steps:

  • Preheat oven to 375 degrees F and line 2 large baking sheets with unbleached parchment paper and spray with cooking spray. Or I love using silicone baking mats, no oil necessary. In a large bowl, add ground turkey, zucchini, eggs, garlic, onion flakes, oregano, salt and pepper; mix well with your hands.
  • Using small cookie scoop form 47 meatballs (it helps to dip hands in a bowl with cold water occasionally) and lay on baking sheets.
  • Bake for 15 minutes, turn and toss with spatula (mostly to get rid off of that ground turkey residue) and bake for 5 more minutes. Serve hot.
  • Serve hot as an appetizer or main dish.

1 pound ground turkey
1/2 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
2 teaspoons chopped fresh parsley
1 large egg
2 teaspoons sesame oil plus more to brush on top
2 green onions (thinly sliced (or 2 tablespoons finely chopped white onion))
salt + pepper to taste

Steps:

  • Preheat broiler. Line a baking sheet with parchment paper and spray with cooking spray.
  • In a bowl, add ground turkey, cumin, oregano, onion powder, garlic powder, parsley, egg, sesame oil, and green onions. Gently mix until well combined. Careful not to overmix or the meatballs won't be moist and tender.
  • Form the mixture into meatballs. Place on lined baking sheet. Using a medium cookie scoop makes 15 meatballs, 1-inch in diameter. You can definitely make them in whatever size you'd like, just make sure they are all the same size so they cook evenly.
  • Broil on HIGH for 10 minutes or until meatballs are cooked through.* Brush with more sesame oil on top for more flavor. Serve with your favorite side dish. Enjoy!

1/4 cup fat-free evaporated milk (can use low-fat milk or fat-free milk)

1/4 cup grated parmesan cheese (can use up to 1/2-cup)

1/2 lb all white meat lean ground turkey
1/2 yellow onion (finely chopped)
1/4 cup parsley (finely chopped)
2 garlic cloves
1/2 teaspoon oregano
1 egg
1/2 cup dried Italian seasoned breadcrumbs
1/2 teaspoon salt
1/2 teaspoon pepper
olive oil (for browning meatballs, not in mixture)

Steps:

  • Beat egg in large bowl.
  • Add all remaining ingredients.
  • Mush together well using your hands.
  • Form into 1/2 inch balls.
  • Heat small amount of olive oil (about 1 tsp to keep this recipe low-fat) in skillet.
  • Put half the balls into the skillet and cook until browned evenly on outside.
  • Remove and add remaining balls.
