1 teaspoon vanilla extract

Steps:

  • In a bowl, beat egg substitute for 1 minute or until frothy and slightly thickened. Stir in milk and vanilla. Combine the flour, sugar, cocoa, baking powder and salt; add to the egg mixture and mix well., Pour into a 13x9-in. baking pan coated with cooking spray. Bake at 350° for 18-22 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack.

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8x8 inch square pan.

Amazingly rich and chewy, you would never know these are low fat. I have people asking me for this recipe whenever I make it. The applesauce is the secret ingredient in these delicious brownies! One suggestion I have to make them fudgier is to use a very high quality cocoa. I usually use Watkins or Epicure Selections and found a big difference from that and the kind you can buy in the store. It makes them a real dark chocolate in the middle and they are rich and chewy! This recipe also doubles well and will fit into a 9x13 pan.

1/2 cup cocoa
1 cup flour
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons butter
1 teaspoon vanilla
1 3/4 cups white sugar

Steps:

  • Cream butter and sugar in a large bowl using a hand mixer. Add egg whites, applesauce and vanilla.
  • Mix all other ingredients in a separate smaller bowl and add to the wet ingredients in the large bowl. Do NOT overmix!
  • Spray 8x8 dish with PAM and bake at 350 degrees for 30-35 minutes. ENJOY!

  • Preheat oven to 350°F.
  • Spray an 8 inch square baking dish with nonstick cooking spray.
  • Dust with cocoa, shaking out excess.
  • In a small saucepan, melt margarine on low heat.
  • Remove from heat and stir in cocoa, sugar, egg, applesauce and vanilla, beating until smooth.
  • Gently stir in flour, baking soda and salt until well combined.

  • Cool completely and cut in 16 squares with hot wet knife.

3/4 cup applesauce

Steps:

  • Preheat oven to 350°F.
  • In a medium bowl sift together flour, cocoa powder, baking powder, and salt.
  • Microwave the margarine* in a small bowl until melted. Let cool .
  • Mix margarine and sugar in a large bowl.
  • Add applesauce and mix.
  • Beat in the vanilla extract and pumpkin.
  • Add flour mixture to the large bowl and mix. Stir in chocolate chips if using.

I switched the sugar to Splenda, the eggs to egg substitute (or the same amount of liquid egg whites) and the vegetable oil to canola oil. They're just as good as a traditional brownie but you won't feel bad letting your kids eat them (and eat them they will)!

3/4 cup egg substitute
3 tablespoons canola oil

Steps:

  • Preheat oven to 350.
  • Spray an 8x8 square baking dish with cooking spray.
  • Combine the black beans, egg substitute, canola oil, cocoa powder, salt, vanilla extract, Splenda and instant coffee granules (if using) in a blender; blend until smooth.

My Black Bean Brownies (Low Fat, Low Sugar) image

You can add a small or medium banana (very ripe) that you puree with the other liquid ingredients. You can also add up to 1/2 cup melted butter if desired, and as much sweetener as you like. Sometimes I use pinto beans, which make a lighter colored brownie. For a Mexican chocolate taste, add 1/4 to 1/2 tsp. cinnamon.

3 large eggs (or 2 jumbo eggs)
1/4 cup almond milk
2 -3 teaspoons vanilla extract
3 drops liquid stevia (to taste)
1 tablespoon agave nectar (to taste)
2 -3 tablespoons unsweetened cocoa powder (I usually use 2 T., can also sub carob powder)

  • Preheat oven to 350 degrees F.
  • Pour beans into a colander and rinse very, very, very well.

  • Immediately place the pan in the freezer to cool quickly (about 10-15 minutes - do not try this with a glass baking pan - only metal is safe for this). Alternatively you can just let them cool in the pan on a rack, but this will take much longer.
  • Cut into squares. Can refrigerate remaining brownies by covering them with plastic wrap.

This recipe was developed for a challenge to make unusual cornbread. I've gone wheat-free, so used cocoa where I would have used flour and milled flaxseed/water for the fat. Added chocolate chips and walnuts, plus a little cinnamon and a dash of cayenne 'cause I'm crazy like that. Compared to 'real' brownies, 'real' wins, but they are pretty good compared to flaxseed muffins. Especially good warmed a little in the microwave with some greek yogurt or fruit.

2 small apples
4 large egg whites
1 teaspoon vanilla extract
1/4-1/2 cup Splenda granular, to taste
1/2 cup soy protein isolate, that can be used in baking
1/4 cup wheat gluten flour
1/4 cup rye flour (this is just one that I had around, you can use others I'm sure it would work)
1/4 teaspoon mortons low sodium salt
1 cup chopped nuts (I used almonds)

  • Core apples (do not peel everyone can use more fiber).
  • Chop the apples up in your food processor into 'minced garlic' sized bits add a bit of water to help the process.
  • Toss the apple bits in a pot or a skillet and heat up just before the juice boils then add the cocoa powder.
  • Mix it all together so the cocoa is all melted and well blended set aside to cool.
  • Mix the flours, soy protein and salt and sift.
  • In a separate bowl beat egg whites vanilla and Splenda until soft peaks appear.
  • Add flour mixture to the egg mixture and blend well then add the apple-cocoa sauce and blend.
  • Mix in the chopped nuts if desired.
  • Bake in a non-stick 8-inch square pan for 20-25 minutes at 350°F.

You won't be able to tell that these are even low fat!! Got it from America's Test Kitchen website. It's definitely worth trying. This is my only brownie recipe now!

3/4 cup flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1/3 cup Dutch-processed cocoa powder
2 ounces bittersweet chocolate
2 tablespoons butter
2 tablespoons low-fat sour cream
1 cup sugar
2 teaspoons vanilla
1 egg
1 egg white
1 tablespoon Hersheys Chocolate Syrup

Steps:

  • In bowl, stir and set aside: flour, baking powder, salt and cocoa.
  • In a glass bowl: add bittersweet chocolate and butter. Melt over a pot of boiling water. Be careful not to get any water in the chocolate!
  • When melted, set aside to cool for 3-4 minutes.
  • Whisk into melted chocolate: sour cream, sugar, egg and egg white, and vanilla.
  • Fold in flour mixture.
  • Stir in Hershey's syrup.
  • Put aluminum foil on the bottom of a 8x8 baking pan. Spray with cooking spray. Pour brownie mixture into pan.
  • Bake at 350°F for 20-25 minutes or until toothpick inserted in middle comes out with a few moist crumbs attached.
  • Take out of oven and let it cool for about an hour before taking out of pan to cut into squares (They mentioned if you take them out without cooling, it won't get as moist).

1 cup all-purpose flour
1/2 cup cocoa powder
1 teaspoon baking powder
1/2 teaspoon salt
2 tablespoons non-hydrogenated vegan margarine
1 teaspoon vanilla extract
1 3/4 cups brown sugar
2 tablespoons pumpkin puree or pumpkin pie filling
3/4 cup applesauce
1/3 cup chocolate chips (optional)

Steps:

  • Preheat oven to 350°F. In a medium bowl sift together flour, cocoa powder, baking powder, and salt. Microwave the margarine* in a small bowl until melted. Let cool . Mix margarine and sugar in a large bowl. Add applesauce and mix. Beat in the vanilla extract and pumpkin. Add flour mixture to the large bowl and mix. Stir in chocolate chips if using. Grease a 8x8-inch pan with cooking spray and pour in batter. Bake for 20-30 minutes or until a toothpick can be inserted and removed clean.
