1 cup crushed pork rinds
½ cup grated Parmesan cheese
⅓ cup tomato sauce
¼ cup chopped onion
1 large egg
2 tablespoons chopped fresh parsley
½ teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9x5-inch loaf pan.
  • Combine beef, pork rinds, Parmesan cheese, tomato sauce, onion, egg, parsley, salt, pepper, and garlic powder in a bowl and shape into a loaf. Transfer to the prepared pan.
  • Bake in the preheated oven until browned and no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

1 cup pork rind, crumbs
1 egg
1/3 cup tomato sauce
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons parsley
1/2 cup grated parmesan cheese
1/4 cup chopped onion
1/2 teaspoon garlic powder

Steps:

  • Preheat oven to 350 degrees.
  • Mix meat and other ingredients.
  • Shape into a firm oval loaf in shallow baking pan.
  • Bake for 1 hour.
  • Makes 6 servings.
  • Laurie's Note: Total 11 carbs.
  • This was really good- very moist.
  • When I removed it from the oven the baking pan was full of fat.
  • I didn't pour it off; just let the meatloaf sit and soak it back up.
  • Lana's Note: We like our meatloaf a little drier, so I drained off the fat.

1/4 cup sugar substitute (recommended: Splenda)
2 teaspoons white vinegar or water
2 pounds ground chuck (may use meat loaf mix with ground pork)
2 eggs
1/2 cup grated Parmesan
1/4 cup red onion, diced small
1/4 cup roasted or fresh red bell peppers, diced
2 tablespoons chopped fresh parsley leaves
2 cloves garlic, minced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/4 pound prosciutto, or any type of ham, thinly sliced
1/4 pound provolone cheese, sliced

Steps:

  • Preheat oven to 350 degrees F.
  • In a small bowl, mix together the tomato topping ingredients. Set aside. You may add a few drops of water to thin to a ketchup consistency.
  • In a large bowl, mix together the beef, eggs, Parmesan, vegetables, herbs, and seasonings.
  • Working on a waxed paper lined sheet pan or counter, form meatloaf mix into a 10 by 8-inch flat rectangle on the waxed paper. Place a layer of prosciutto slices on top, followed by a layer of provolone slices. Roll up the stuffed meatloaf mix like a burrito and seal the edges all around by pinching the meat.
  • Place the roll, seam side down, into a 5 by 9-inch loaf pan. Spread a heavy coat of the tomato topping to completely cover the top of the meatloaf. Steps:

  • Heat the butter in a sauce pan and season mushrooms and peppers with salt and pepper and saute until tender.
  • Meanwhile in a bowl combine beef, eggs, parm, Italian seasoning, onion and garlic until mixed well, seasoning with additional salt and pepper.
  • Add peppers and mushroom to meat mixture and combine well.

4 ounces cheddar cheese, shredded
1/3 cup low carb ketchup
2 eggs
2 cloves garlic, minced
1 tablespoon Worcestershire sauce

1 teaspoon dried cilantro, or 2 tablespoons fresh
1 teaspoon salt, or to taste

Steps:

  • In a large bowl mix all but the topping ingredients thoroughly. In a large bowl mix all of the remaining ingredients. Place the meat in a greased loaf pan, or shape in 6 mini loaves and place in a foil lined 9x13" baking pan. Brush or spread on the topping. I saw this made on Foodtv. I'm not big on meatloaf but DH is so I thought I'd give it a try. It is quite tasty and DH really enjoyed it. I think this could be easily altered for different flavors or cuisines. It is supposed to be a healthier version of the one your mother made. I made this without the prosciutto.

I made this receipe tonight, for the first time, and my husband and I LOVED it! So, of course, I had to post it here on Zaar! This is a nice twist on meatloaf (in, fact, I don't even like meatloaf, but I loved this)! It is incredibly flavorful, almost addicting (I know my husband could not stop eating it, and actually requested that we make this a weekly affair), and also inexpensive, and fairly easy to make. It is a perfect low carb main dish, and would be great with a variety of side dishes. Please also feel free to experiment with the spices, as these measurements are just estimates (I just used them all, to taste). Enjoy!

2 -3 minced garlic cloves
1/2 teaspoon salt

1 teaspoon salt (1 to 2)
1/4 teaspoon pepper
1 teaspoon dried basil
1/2 cup parmesan cheese
1/4 cup minced onion
2 eggs, beaten
2 hard-boiled eggs, shelled

Steps:

  • Preheat oven to 450°F.
  • Mix up all ingredients except the hard-boiled eggs.
  • Pat just under half of the meat mixture into a loaf pan.
  • Lay the hardboiled eggs on top and form remainder of meat around them.
  • Bake for 10 minutes at 450, then reduce heat to 350 and bake another 1 hour and 15 minutes (75 minutes total at 350).

1 (8 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1/4 cup sugar substitute (recommended ( Splenda)
2 teaspoons cider vinegar
2 lbs lean ground beef
2 eggs
1/2 cup grated low-fat parmesan cheese
1/4 cup red onion, diced small
1/4 cup roasted red pepper, diced
8 ounces thawed chopped spinach
2 tablespoons chopped fresh parsley leaves
2 garlic cloves, minced
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/8 lb prosciutto, thinly sliced
1/4 lb low-fat provolone cheese, sliced

Steps:

  • Preheat oven to 350 degrees F.
  • In a small bowl, mix together the tomato topping ingredients. Set aside. Add a few drops of water to thin to a ketchup consistency.
  • In a large bowl, mix together the beef, eggs, Parmesan, vegetables, herbs, and seasonings.
  • Working on a waxed paper lined sheet pan or counter, form meatloaf mix into a 10 by 8-inch flat rectangle on the waxed paper. Place a layer of prosciutto slices on top, followed by a layer of provolone slices. Roll up the stuffed meatloaf mix like a burrito and seal the edges all around by pinching the meat.
  • Place the roll, seam side down, into a 5 by 9-inch loaf pan. Spread a heavy coat of the tomato topping to completely cover the top of the meatloaf. Place in oven and bake for about 1 hour and 15 minutes, or until the temperature on a meat thermometer registers 165 degrees F. Drain fat and let rest at least 10 minutes before slicing.

1 egg
3/4 cup kraft low-carb barbecue sauce
1/4 cup Worcestershire sauce
1 1/2 cups parmesan cheese (from the green can)
2 slices toasted and chopped low-carb bread (found at all grocery stores)
1 (1 ounce) packet dry onion soup mix
5 baby dill pickles, chopped (optional)
1/2 teaspoon black pepper

Steps:

  • Mix all ingredients together with hands and mold into a loaf.
  • Bake on pizza sheet for 1 hour on 350°F or until cooked through, about 45 minutes into cooking process.
  • Cover with desired amount of low-carb barbecue sauce and finish cooking.

2 large eggs
1 ⁄2 cup grated Parmesan cheese
1 ⁄4 cup small diced red onion
2 tablespoons chopped fresh parsley leaves
2 small cloves garlic, minced
1 ⁄2 teaspoon dried oregano
1 ⁄2 teaspoon dried basil
1 teaspoon kosher salt
1 ⁄2 teaspoon ground black pepper
1 ⁄2 cup roasted red bell pepper strips
4 ounces baked ham, cut into strips
8 ounces fresh whole mozzarella cheese, cut into strips (may use sliced or shredded)
SPECIAL EQUIPMENT: 8 compartment mini loaf pan

Steps:

  • 1. Preheat oven to 350° F. In a large bowl, mix together the beef, eggs and everything except the pepper strips, ham and mozzarella. 2. Use 1⁄2 the meat mixture to equally line the bottom of all 8 sections of the mini loaf pan. 3. Next place equal amounts of the strips of peppers, ham and cheese into the center of each compartment and press into the bottom layer of meat mixture. 4. Cover each section of the pan with the remaining beef mixture and press down lightly, sealing the fillings in as best as possible. 5. Bake for about 25 minutes, or until the temperature on a meat thermometer registers 165° F. Drain fat and serve.
