Steps:

  • Combine ground beef, egg, Parmesan cheese, flaxseed, oregano, salt, and pepper in a bowl; mix until well combined. Roll mixture into golf ball-size meatballs.

2 egg whites
2 tablespoons breadcrumbs
1 tablespoon parmesan cheese, grated
3 tablespoons pizza sauce
1/4 teaspoon salt

1/4 teaspoon italian seasoning
1/4 teaspoon onion powder
1/8-1/4 teaspoon garlic powder
1/2-3/4 cup mozzarella cheese, shredded
pizza sauce, for dipping

Steps:

  • Preheat oven to 350 degrees Fahrenheit. Spray a large baking sheet with cooking spray.
  • Mix ground chicken, egg, breadcrumbs, Parmesan cheese, 3 tablespoons pizza sauce, spices, & cheese in a bowl.

½ cup thinly sliced green onions
3 cloves garlic, minced

Steps:

  • Combine ground pork, eggs, soy sauce, green onions, garlic, and ginger in a large mixing bowl; using gloves, mix together with your hands until all ingredients are incorporated well.
  • Cover bowl with plastic wrap and chill in refrigerator 1 to 2 hours.
  • Bring a saucepan of water to a boil.
  • Using a 1 teaspoon cookie scoop or a teaspoon, form pork mixture into small meatballs.
  • Cook meatballs in small batches in boiling water until they float to the top and stay there for 3 minutes. Remove cooked meatballs from water with a slotted spoon.

1 lb ground beef
1 lb ground pork
1 large egg
2 tablespoons olive oil
1 cup onion, minced fine
1/2 cup minced celery (I normally leave this out)
3 cups beef stock
2 beef bouillon cubes
1 garlic clove
1 teaspoon allspice
salt and pepper
5 black peppercorns
8 ounces cream cheese

Steps:

  • Mix meat and egg together, set aside.
  • Saute oil and onions until translucent, about 5 minute Add celery and cook 4 minute.
  • Meanwhile put the stock, bouillon and garlic in a pot and bring to a boil.
  • Add onion mixture, allspice and salt and pepper to the meat. Work well with your hands.
  • Form into 1 in balls and place on a baking sheet lined with waxed paper. You should have about 30-40 meatballs.
  • Slowly add meatballs, 1 at a time to the boiling stock.Add peppercorns at this time.
  • Let meatballs cook 20 minute.
  • Remove meatballs with a slotted spoon and and set aside.
  • Strain the stock and put back into the pot over med-high heat. Reduce for 10 minute.
  • Turn off heat and add cream cheese, whisking until well combined.
  • Pour over meatballs.

1/3 cup parmesan cheese, coarsely grated
1/4 cup garlic-flavored croutons, crumbled
2 tablespoons Italian parsley, minced
1/4 teaspoon salt
1/8 teaspoon white pepper
1 large egg, lightly beaten
1/2 cup onion, minced
1 tablespoon extra virgin olive oil
2 tablespoons extra virgin olive oil
1/4 cup onion, minced
2 garlic cloves, minced
4 cups shredded escarole, rinsed & spun dry
4 cups chicken broth
1/4 cup parmesan cheese, grated (to garnish)
cayenne pepper, to taste

Steps:

  • In a mixing bowl combine all of the meatball ingredients.
  • Mix well with your hands, then shape into 24 walnut sized meatballs.
  • In a Dutch oven, heat 1 tablespoon olive oil over medium-high heat until hot, but not smoking.
  • Saute the meatballs 12 at a time until golden brown on all sides.
  • Remove to a plate and set aside.
  • Add the remaining olive oil and onion to the pot and saute until the onion is soft.
  • Add the garlic and continue to saute for another couple of minutes.
  • Stir in the escarole and cook over low heat, covered, stirring occasionally, until it wilts (3 minutes).
  • Add the broth and meatballs and bring to a boil; then simmer uncovered for 3 minutes.
  • Serve hot, sprinkled with the remaining cheese and the cayenne pepper for garnish.

2 tablespoons fresh parsley, chopped
3/4 cup grated parmesan cheese
1/2 cup almond flour
2 eggs

1 teaspoon dried onion flakes
1/4 teaspoon dried oregano
1/2 cup warm water
1 cup marinara sauce
4 ounces mozzarella cheese

Steps:

  • Combine all of the meatball ingredients in a large bowl and mix well. Form into 2″ meatballs. Bake at 350°F for 20 minutes, or fry in a large skillet over medium heat until cooked through.
  • Pro-tip: Try frying in bacon grease if you have any, it adds another level of flavor. Frying produces a golden brown color.
