Steps:
- In a medium saucepan, heat water to boiling. Reduce heat to medium; stir in salt and cornmeal. Cook, stirring regularly, until mixture is thick.
- Spoon cornmeal mixture into a lightly greased 9x5 inch loaf pan. Cover and refrigerate overnight.
- In the morning, melt butter in a skillet over medium high heat. Slice cornmeal mush into 1 inch wide slices. Cook in melted butter until golden brown on both sides.

LOW CARB FRIED MUSH
This is from Dana Carpender's book 500 Low-Carb Recipes. I need to know the full nutrition count, so I'm posting it here. Also- I made it as stated and would probably reduce by one egg next time. The oil is included as an ingredient, so I wasn't sure whether to put it in the mix or just use it for frying. I ended up mixing it in with the rest. This can be served with sugar-free syrup, fruit, or natural peanut butter (my personal favorite!)

Steps:
- Preheat the oven to 350 degrees. Coat an 8 x 8 baking dish with nonstick cooking spray.
- Mix all the ingredients together, and pour the mixture into the prepared baking dish.
- Bake for 20 to 30 minutes, until a knife inserted in the middle comes out clean. Cut into quarters.
- Heat the oil in a skillet, and fry the four pieces until they're brown on both sides. Serve with your favorite topping.

MASHED GARLIC TURNIPS

Steps:
- Place the turnips and the garlic in a saucepan with a tight-fitting lid.
- Add water to fill about halfway, cover, and place over medium-high heat.
- Bring to a boil, turn down the burner, and simmer until quite soft (about 15 minutes).
- Drain the turnips and garlic very well.
- Using a potato masher, mash the turnips and garlic together.
- Stir in the butter, horseradish, salt, pepper, and nutmeg, and mix well.
- Just before serving, stir in the chives.
- Each serving has 10 grams of carbohydrates and 2 grams of fiber, for a total of 8 grams of usable carbs and 2 grams of protein.
FUNCHI (CORN-MEAL MUSH)

Steps:
- Mix in a heavy saucepan the cold water, cornmeal and salt.
- Stir in the boiling water and the tablespoon of butter.
- Bring to a brisk boil over high heat and cook for three minutes.
- Continue cooking an additional three minutes, stirring the funchi vigorously with a wooden spoon or palu di funchi. When the mixture is very stiff and pulls away from the sides of the pan, remove from the fire. Turn out into a deep, well-buttered bowl and cover with a plate. Now shake the funchi down in the bowl, then invert it on a serving platter.
- For a special Sunday breakfast fry sliced funchi in butter and serve with crisp bacon and scrambled eggs.

Steps:
- Preheat the air fryer to 400 degrees F (200 degrees C).
- Beat eggs in a bowl. Combine flour, all bread crumbs, kosher salt, onion powder, garlic powder, pepper, paprika, and seafood seasoning in a separate bowl.
- Dip mushrooms first in eggs, then in seasoned flour. Dip back into the eggs and into the seasoned flour again. Place on a plate.
- Place a batch of mushrooms in the air fryer basket, making sure none are overlapping. Spray with nonstick cooking spray. Cook for 6 minutes. Shake basket and spray any chalky spots with nonstick cooking spray. Cook for 6 minutes more. Repeat with remaining mushrooms.

This came from Dana Carpender's 500 Low Carb Recipes book. She uses her own No-Sugar Ketchup recipe. I used Heinz 1 carb ketchup. This works really well. My husband never knew that it wasn't the sauce I usually use.
