This truly is the Ultimate meatloaf with a lip-smacking, tangy tomato sauce. This is perfect for a weeknight dinner or leftover meatloaf sandwiches! We're talking pure comfort food at it's finest!

Number Of Ingredients 19

3lb ground beef, 80/20
3 Xl eggs, beaten
4 slices bread, torn in pieces
1/3 cup milk
2 tablespoon tomato paste
1 tablespoon fresh chopped parsley
1/2 teaspoon kosher salt
1/2 teaspoon pepper
1/4 cup tangy sauce
1/4 cup panko bread crumbs
1 1/2 cups ketchup
2 tablespoon tomato paste
1/4 cup brown sugar
3 tablespoon apple cider vinegar
3/4 teaspoon kosher salt
3/4 teaspoon black pepper
1 teaspoon minced garlic
2 tablespoon molasses (not black strap)
1/2 cup beef stock

Steps:

  • Preheat the oven to 350F. Line a rimmed baking sheet with parchment paper. Set aside.
  • In a bowl add all of the ingredients for the Tangy Sauce and whisk; set aside.
  • In a medium bowl add the bread, panko and milk. Press the bread into the milk and set aside. Allow to soak for 5 minutes.
  • In a large bowl add the rest of the meatloaf ingredients and the bread/panko/milk mixture. Gently mix until combined. Do not overimx as the meatloaf will be tough. Transfer the mixture to the baking sheet and using your hands, form a loaf that is about 12 inches long, 6 inches wide, and about 2 1/2-3 inches tall. The loaf should be smooth and have rounded edges. This will help the loaf stay together when serving.
  • Bake for 35 minutes. Remove from the oven and spread Tangy Sauce all over the top and sides of the meatloaf. You'll use about 1 -1 1/2 cups of sauce. Save the leftover sauce for meatloaf sandwiches. Put the meatloaf back into the oven and bake for an additional 25-30 minutes or until a thermometer inserted reads 165F.
  • Remove from the oven and allow to cool for 15 minutes before cutting.

1 tablespoon good olive oil
3 cups chopped yellow onions (3 onions)
1 teaspoon chopped fresh thyme leaves
2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
3 tablespoons Worcestershire sauce
1/3 cup canned chicken stock or broth
1 tablespoon tomato paste
2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

I have not ever appreciated meatloaf, but I had to find one to suit my taste buds since my husband grew up on meatloaf. After hunting and hunting for a good recipe, I finally found a most scrumptious, palatable meatloaf.

1 lb lean ground beef
1/2 lb ground pork
1 pkg lipton dry onion soup mix
1 10 ounce can original rotel with green chilis
1 tsp each: salt and pepper
1 green bell pepper, chopped
1 clove garlic, minced or 1 tbsp garlic powder
1 egg, beaten slightly
1 1/2 c soda crackers~ crumbs
1/3 c water
1/2 to 1 teaspoon of hot sauce (adjust according to your taste (i prefer 1 tsp.))

Steps:

  • 1. Preheat Oven 350 degrees. Mix meat together with all ingredients in large mixing bowl. Place in meatloaf pan and shape into a pretty meatloaf. Then turn meatloaf pan over in a larger, oven safe baking dish. Bake 1 hour and allow to rest 5 minutes. Carefully place on platter to serve. Lip smackin good! Wish I had some meatloaf right now!
  • 2. It is not necessary to transfer this meatloaf to other dishes, but I do it because I prefer less fat.

1/3 cup whole milk
2 pounds ground beef chuck
1/4 cup grated onion
1 carrot, peeled and grated
1 large egg
2 teaspoons coarse salt
1/2 teaspoon freshly ground black pepper
1/3 to 1/2 cup Chili Sauce (recipe follows) or regular bottled chili sauce

Steps:

  • 1. Preheat the oven to 325°F with a rack in the middle position. In a large bowl, soak the bread crumbs in the milk for 5 minutes. 2. Add the beef, onions, carrots, egg, salt, and pepper to the bread crumb mixture. Mix gently. 3. Shape the meat mixture into a loaf and put it in an 8 1/2-by-4 1/2-inch loaf pan. Make 3 holes, evenly spaced lengthwise, in the meat loaf and fill them to the top with the sauce. Bake for 40 to 45 minutes, until firm to the touch. Remove from the oven and let rest for 10 to 15 minutes. 4. Pour any accumulated juices over the top of the meat loaf. Slice and serve with the remaining chili sauce on the side.

Auntie Ann spent many years working as the Research Editor of the National Geographic in Washington D.C. She also had a beautiful house facing the water in St. Michaels, Maryland. Quite often she had gatherings of all sorts. From the Washington set, dressed up dignitaries and special guests would arrive for a nice Friday evening cocktail party that included a nice dinner afterward. During her weekends in St. Michaels, she could relax sitting comfortably on a wicker chair facing the Harris Creek watching the swans swim to and fro in the water. Even though Auntie Ann had a busy productive life as an editor and another busy life on the shore, her cooking skills were perfection. Often during a cocktail party she would mix up (the day prior) a good amount of this dressing and ever so lightly, and daintily spoon this over some fresh salad greens and toss. When she was getting ready to have the Labor Day crowd in for some good old "Maryland Blue Crabs" at her home on the shore, she would use this dressing in a simple pasta salad, that could be kept outside longer as it didn't have any mayonnaise or dairy in it to spoil. I use this now for "Saturday Lunch on the Farm" salad, which has become a huge bowl of all kinds of lettuces, fresh cut up vegetables and olives. Hey you can't go wrong with Auntie Ann can you? After all; life is good when partaking of a salad, isn't it? Can be easily halved.

3 tablespoons white vinegar (although any in the cupboard works here)
1/4 teaspoon salt (to taste, I tend towards more rather than less for this recipe)
1/8 teaspoon ground pepper (to taste)
3 garlic cloves, finely minced
1/4 teaspoon dried oregano
1/4 teaspoon parsley (fresh or dried)
1/4 teaspoon basil (fresh or dried)
1/4 teaspoon rosemary (dried)
1/4 teaspoon ground mustard (optional)
1/2 teaspoon sugar (or Splenda, or honey optional)
1/4 cup olive oil (make sure olive oil is the dominate taste)

Steps:

  • Using a Mason jar, cruet, bowl, or blender put vinegar, salt, ground pepper, cloves, oregano,parsley, basil, rosemary, ground mustard and sugar or honey if using, in container.
  • Mix thoroughly together. (I use a blender).
  • Slowly mix oil in with the vinegar, herb mixture. This is where I use the blender as it makes the dressing a bit thicker.
  • Sometimes though, if I am in a big hurry, I just use a Mason jar, and mix the oil in a little at a time and then shake vigorously.
  • Serve as your "everyday" dressing.
  • I leave this out on my counter for about two days (gets even more intense), or you can put it right into the refrigerator. Ours just doesn't last that long.

1 pound(s) italian meatballs diced (can use in place of ground beef for extra flavor)
3 - eggs
1 - green pepper diced

2 - onions, yellow, medium diced
2 - celery stalks, diced
6 slice(s) whited bread diced (or herbed flavored french bread for extra flavor)
1 cup(s) milk
1/2 cup(s) parmesan cheese, grated
2 tablespoon(s) mortons nature seasonings
1 teaspoon(s) seasoning salt
FOR SAUCE
1 cup(s) ketchup
1 cup(s) brown sugar
1/3 cup(s) apple cider vinegar

Steps:

  • Preheat oven to 350 degrees.
  • Saute red and green pepper with celery and onions. Let cool before mixing with other ingredients.
  • Mix ground turkey, meatballs (or ground beef)and italian sausage together in bowl.
  • Add parmesean cheese.
  • Pour milk in a bowl and put bread in to soak. (about 5 minutes or while veggies cooking)

  • Spray loaf pans and divide meatloaf mix evenly between the two.
  • For the sauce: Mix ketchup, brown sugar and apple cider vinegar together in a bowl and pour on top of meatloaves in pan.
  • Bake in oven for about 1 1/2 hours to 1 hour 45 minutes. After 1 hour pour off excess oils and pour more sauce over the top and finish cooking.
  • Take out after about 1 1/2 hours to 1 hour 45 minutes and let sit for about 30 minutes. Pour off any remaining oils, slice and serve.
