1/4 cup finely chopped onion
4 tablespoons butter
1 to 1 1/3 pounds cooked lobster meat, cut into 1/2-inch chunks
1/4 cup sherry wine, preferably medium-dry,(recommended: amontillado)
1/4 cup lobster stock, optional, but desirable
1 1/4 cups light cream or half-and-half
1/4 teaspoon paprika
Salt and freshly ground black pepper
4 teaspoons minced fresh chives

Steps:

  • In a medium-size deep skillet or heavy saucepan, cook the onion in the butter over medium heat until softened and translucent, about 3 minutes. Add the cooked lobster meat and toss to coat with the butter. Pour in the sherry and bring to a boil. Add the lobster stock, if you have it, and boil until the liquid is reduced by half. Add the light cream and paprika. Season with salt and pepper, to taste. Bring just to a boil. Immediately ladle into soup plates and garnish with the chives. Serve at once.

MAINE LOBSTER STEW

Real Maine Lobster Stew has lobster, butter, milk, the roe and tomalley (if there is any), and the reserved liquid from the lobsters. It does not have a whole bunch of other stuff in it. If you make it the Maine-way, you will think that you are there sitting on the wharf eating. Make it a day ahead to enhance the flavor of the stew.

4 fresh lobsters (reserve cooking liquid from lobsters)
6 -8 tablespoons butter
1 pint heavy cream
1 quart whole milk
salt and pepper

Steps:

  • Boil the lobsters for about 18 minutes.
  • Place cooked lobsters on several platters to cool and catch the juices.
  • After they are cool; pick the meat from them.
  • Remove the tomalley (green liver) and the roe (coral) if it is found.
  • After all the meat is picked out, saute the tomalley and roe in 2 tablespoons butter in a heavy cooking pot for three minutes.
  • Add more butter and some of the lobster meat into the pot.
  • Repeat this until all the lobster meat has been sauted for five to ten minutes.
  • Add the cream, the reserved lobster juice from the platters, and the milk.
  • Simmer BUT DO NOT BOIL uncovered on low heat for an hour or two (remember take care not to boil).
  • Add salt and pepper to taste.
  • Make this a day ahead to enhance the flavor and you'll be glad you did.
  • NOTE: A rule of thumb for figuring amounts--4-5 ounces of meat per person; 1/2 stick butter per person; 1 cup half and half per person.

5 chicken (1-pound) lobsters
1 medium onion, roughly chopped
4 bay leaves
2 large tomatoes
20 sprigs of fresh chervil
1 pint heavy cream
2 large leeks, white and yellow parts only, cut in medium (1/2 inch) dice
2 medium carrots, peeled and sliced very thin
8 tablespoons (1 stick) unsalted sweet butter
salt and freshly ground black pepper
cayenne pepper

Steps:

  • 1. Blanch the lobsters for 4 minutes in a large pot of boiling fresh sea water or salted water. Remove from water, punch a little hole in the top of each head and allow to drain. Break off the claws and the tail. Remove the tomalley from the body and set aside in the refrigerator. Shuck the meat, chop into large bite-size pieces and set aside in the refrigerator. Be sure to remove intestinal tracts from the tails.
  • 2. Place all the shell and bodies in a large saucepan and barely cover with water (about 2 1/2 quarts). Add the onion and bay leaves. Bring to a boil, skim, and reduce to simmer.
  • 3. Peel and seed the tomatoes. Put the seeds and juice into the lobster stock and cut the tomato into medium dice; set aside. Pick the chervil off the stems. Add the stems to the stock and coarsely chop the chervil leaves; set aside.
  • 4. After the stock has simmered for about 1 hour, add the heavy cream; simmer about 20 minutes more.
  • 5. Simmer the leeks and carrots in butter in a soup pot until they begin to get tender (about 5 minutes). Now add the tomatoes and lobster meat and simmer 2 or 3 minutes more. Strain the creamy lobster stock into the soup pot (you should have about 6 cups of liquid). Season to taste with salt, pepper and cayenne pepper and sprinkle with chervil. Serve with tomalley croutons.

According to experts on fine Maine cookery, the important steps to success in creating the perfect lobster stew are, first, this partial cooling before ever so gently adding the milk - a mere trickle at a time. The constant stirring until the stew blossoms a rich salmon color under your spoon and, finally, the aging, since every passing hour improves ins flavor. Some 'experts' even say two days. Overnight is good and 5 to 6 hours improves its flavor considerably. Be sure to reheat slowly.

2 (1 pound) Maine lobsters
½ cup butter
1 quart whole milk

Steps:

  • Bring a large pot of water to a boil over high heat. Add the lobsters; boil until the lobsters turn bright red and the claws are easily pulled off, 12 to 14 minutes. Once done, remove with a pair of tongs, and allow to cool until cool enough to handle.
  • Split the lobsters in half lengthwise. Remove and reserve the green tomalley (liver), the red coral (eggs), and the thick white substance from inside the claws. Melt the butter in a large saucepan over medium heat. Stir in the reserved tomalley and coral. Cook and stir for 8 minutes, breaking up the tomalley.
  • Remove the meat from the claws and tail. Remove the black vein from the tail, cut the meat into bite sized pieces, and add to the tomalley. Reduce the heat to low; cook for 10 minutes, stirring frequently. Pour the milk into the saucepan a trickle at a time, stirring constantly, until the stew is thick, hot, and has blossomed into a rich salmon color.
  • Place the stew in the refrigerator, and let stand 5 to 6 hours. This is one off the secrets of truly fine flavor. It's called aging. Once the stew has aged, return to the stove over medium-low heat, and cook until hot. You do not need salt or pepper when the stew is prepared in this manner.

This is how I make a Lobster Stew and I haven't gotten many complaints, lol. A Maine Lobster Stew is pretty much milk/cream, butter and lobster meat. There are not supposed to be other things in there. The milky broth get its flavor from the lobster and butter alone and should turn a slight orange color. This really needs to set overnight. What I usually do is make the stew, cool, refrigerate and then in the morning I will check to see how thick it is. I may add a little extra milk at this point. This is also a pretty forgiving recipe. It all depends on the amount of cooked lobster meat you have available. I've made smaller batches and larger batches. Its really hard to mess up....unless the milk/cream curdle. Make sure to add these ingredients slowly and to not let the stew come to a boil. You really don't want all that lobster meat to taste like sour milk. You can get 2 cups of lobster meat from about 4-5 cooked lobsters. Make sure to pick out ALL the meat and not just from the claws and tail. I didn't include the amount of time to clean or cook the lobsters as it takes everyone different amount of time to do, but it will be the most time consuming part of the making of the stew. This is not a diet friendly meal. I would not suggest trying to substitute for the cream or butter.

2 -3 cups cooked lobster meat, chopped
1/2 cup butter (1 stick)
1/4-1/3 cup onion, diced finely
1 teaspoon Mrs. Dash seasoning mix (original blend)
1 (14 ounce) can evaporated milk
1 cup light cream
3 cups milk

Steps:

  • In a soup pot, melt the butter over medium high heat.
  • Add the onions and cook until tender, about 5-7 minutes.
  • Add lobster meat and Mrs. Dash and cook for another 5-7 minutes. Stir occasionally.
  • Add the evaporated milk slowly. Next add the milk and cream slowly, stirring at the same time.
  • Heat the stew til almost boiling, but do not let it boil!
  • Take off heat and let cool.
  • Refrigerate over night.
  • Heat slowly the next day until hot but not boiling.
  • We like to serve ours with oyster crackers or some fresh, chewy type bread (like sourdough).

Leftover shells from 4 lobsters
Pinch of thyme
Water as needed
1 cup milk
2 cups heavy cream
Salt, white pepper and cayenne pepper, as desired
Leftover lobster meat, as available

Steps:

  • Melt the butter in a deep pot, add the lobster scraps, crush them down well with a potato masher and cook over low heat, stirring constantly, for 5 minutes.
  • Add water to not quite cover, bring to a boil, lower heat to moderate and cook, uncovered and stirring often, for 20 minutes. Strain off broth and discard scraps.
  • Put broth into a deep saucepan and boil hard until it is reduced to 1 cup. Add milk, cream, seasonings and lobster meat and heat through without boiling. Cool quickly and refrigerate for 1 to 2 days to develop flavor. Heat through (without boiling) before serving.

5 1-pound live lobsters
Salt to taste, if desired
2 cups coarsely chopped onion
4 bay leaves
1 large tomato, about 1 pound, peeled
20 sprigs fresh chervil, optional
2 cups heavy cream
12 tablespoons unsalted butter
1 teaspoon finely minced garlic
2 tablespoons finely chopped onion
2 cups coarsely chopped white part of leeks
1 cup carrot rounds, sliced as thinly as possible
Freshly ground black pepper to taste
1 loaf French bread, cut into 1/4-inch slices

Steps:

  • Bring enough water to the boil to cover the lobsters when they are added. Add salt and the lobsters and cook exactly four minutes after the water has returned to boiling.
  • Drain the lobsters immediately. Make a small half-inch crack in the solid shell that covers the head of each lobster. Make the crack slightly below the eyes of each lobster. Place the lobsters tail-side up, heads down, so that the liquid drains from the heads.
  • When the lobsters are cool enough to handle, tear off the tails and claws of each. Let the tomalley -the inner soft portion of the bodies-empty into a mixing bowl. Put the shells in a kettle.
  • Place the lobster tails on a flat surface and cut lengthwise with a sharp knife or cleaver. Pull away and discard the intestinal tract of each tail. Remove the tail meat and put the shells into the kettle.
  • Crack the claws and remove the meat. Put the claw shells into the kettle. Cut the claws and tail meat into bite-size pieces. There should be about three cups. Set aside.
  • To the lobster shells in the kettle add 10 cups of water, the two cups of coarsely chopped onion and the bay leaves. Bring to the boil.
  • Meanwhile, cut away and reserve the firm outer flesh of the peeled tomato. Set aside. Chop the inner portion of the tomato and add it to the kettle. Cut the reserved portion of the tomato into half-inch cubes. Set aside.
  • Pull away the leaves of the chervil. Set the leaves aside. Toss the remaining sprigs into the kettle. Cook the lobster broth about one hour, then add the heavy cream. Let simmer briefly.
  • To prepare the garnish for the stew, put four tablespoons of the butter into a saucepan. Add the garlic and finely chopped onion to the butter and cook about three minutes, stirring. Add this to the reserved tomalley and beat thoroughly to blend. Refrigerate.
  • Meanwhile, heat the remaining eight tablespoons of butter in a heavy saucepan and add the leeks and carrots. Cook about five minutes, stirring occasionally without browning. Add the cubed lobster meat, the tomato cubes and cook, stirring briefly, until heated through.
  • Strain the liquid from the kettle, discarding the solids. There should be about six cups. Pour this into the saucepan containing the lobster meat. Bring to the simmer and add salt and a generous grind of black pepper. Finely chop the chervil leaves and add them.
  • Meanwhile, preheat the broiler and toast the French bread slices on both sides. Spread one side of each with a thin layer of the tomalley mixture. Run briefly under the broiler until the tomalley mixture starts to bubble. Serve the hot soup with the pieces of tomalley toast on the side.

1/4 cup olive oil
1 hot green pepper like jalapeno, with seeds, minced
2 cloves garlic, peeled and sliced
2 medium leeks, trimmed and sliced crosswise
2 red onions (1 1/2 pounds total), peeled and chopped
1-14 1/2-ounce can diced tomatoes with liquid
3 medium sweet potatoes (about 2 pounds), peeled and cubed (about 5 cups)
3 cups dry white wine
4 lobsters, about 1 1/2 pounds each

Steps:

  • In a deep pot over medium-high flame, heat the olive oil for 1 minute. Add hot pepper and garlic. Cook until the pepper and garlic turn black, about 2 to 3 minutes.
  • Add the leeks and onions and cook for 3 minutes, stirring occasionally. Add the tomatoes, sweet potatoes and 2 cups of the wine. Cook, stirring occasionally, for 4 minutes.
  • Add the lobsters, cover pot, and cook until the lobsters turn pinkish, about 5 minutes. Add the remaining cup of wine to the pot and cook, covered, for 5 more minutes.
  • Remove the lobsters and set aside until cool enough to handle. When cooled, crack the claw shells and the body shell. Return to the pot for 5 more minutes.
  • Transfer the lobsters to a baking sheet with sides. Break off the claws of the lobsters; remove the meat from the body and cut it into bite-size pieces. Return any lobster juices on the sheet to the pot. In large plates or shallow soup bowls, spoon some vegetable mixture over the bottom and place a lobster claw and some body meat on top.

H L'S PURE MAINE LOBSTER STEW

Yes this the purest form of the dish and yes, it is called stew by us. The term bisque is relatively new and no self respecting Mainer would call it anything but lobstah stew! :) I love this as it is so pure allowing the lobster to shine without complications such as sherry and/or spices. Those are good as well and have their place, but not for this stew. You will need a 1 1/4 - 1 1/2 pound Maine lobster. I say this here as I have a feeling that the Zaar computer may have a problem understanding this. This is quick and easy to make and I do mine in a deep skillet. This is not meant to pack a punch or be zipped up. It is meant to allow one to revel in the smooth rich lobster flavor. Done this way, it is an old time classic!

1 maine lobster, cooked and shelled

1 quart half-and-half cream

Steps:

  • Cut lobster tail, knuckle and claw meat into pieces. Do not mince or chop finely.
  • Melt butter in a deep skillet or heavy sauce pan and add lobster, sauté 2 minutes on low heat. This will give a bit of pink color.
  • Add half&half and bring up to slight hot bubble.
  • Simmer on low heat 15 minutes stirring occasionally and serve hot.
  • I like a bit of crusty french bread toasted with this. Personally I avoid a salad or have salad after as I don't want dressing and things getting in the way of the flavor.
  • I used to use light cream for this and changed years ago to half and half. This is going to be high calorie either way though you will not eat it daily so don't worry! :).
  • Cooking time does not include boiling the lobster and you want to boil it until just done with no flavorings in the water at all.
  • You will get 4 meal portions or 6 first course servings. It will, however, be calculated based on 4 servings.

2 potatoes, peeled and diced
Kosher salt
2 tablespoons olive oil
2 carrots, peeled and diced
2 ears corn (cut from the cob)
1/2 yellow onion, diced
1 (28-ounce) can crushed tomatoes
2 cups vegetable stock
3 tablespoons tomato paste
2 cloves garlic, chopped
Freshly ground black pepper
12 lobster claws, cooked and cut into 2-inch pieces
1 small bunch fresh cilantro, chopped
1/4 cup sour cream
1 roasted red bell pepper, chopped
1 tablespoon chopped fresh dill
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh tarragon
1/4 cup olive oil

Steps:

  • Place the potatoes in very salty water and bring to a boil. Cook until soft and tender, 25 to 30 minutes.
  • While the potatoes are cooking, start the stew. In a pot over medium-high heat, add the olive oil, carrots, corn and onions and saute until the vegetables begin to sweat, 5 to 7 minutes. Add the crushed tomatoes, stock, tomato paste and garlic. Turn down the heat and simmer until the vegetables are cooked, about 15 minutes. Season with salt and pepper and fold in the lobster and cilantro. Remove from the heat, cover and set aside. Strain the potatoes and mash. Mix in the sour cream, roasted red pepper, dill, parsley and tarragon. Season with salt and pepper. Chill in the refrigerator at least 30 minutes.
  • To form the cakes, grab a ball of the cooled potato mixture and pat into a 1-inch thick disc, about 3 inches in diameter. In a nonstick saute pan, heat the olive oil over medium-high heat. Fry the cakes until crispy and golden brown, about 3 minutes per side. Heat up the stew and serve with a potato cake on the side.

CATALAN STEW WITH LOBSTER AND CLAMS

Romesco, the delicious rust-colored sauce from the Catalan region of Spain, is justly popular, served alongside grilled fish or as dip for vegetables. It is typically made with fresh and dried red peppers, roasted almonds and hazelnuts, a fair amount of garlic, and day-old bread fried in olive oil. Sometimes, however, instead of being used as a sauce, it is added to a fish stew. Known as romesco de peix or simply romescada, it may contain several kinds of fish and shellfish. In this version, which features lobster and clams, rather than stirring in the romesco at the end, the ingredients are added in stages from the beginning, for depth of flavor.

2 lobsters, about 1 1/2 pounds each
1/4 cup whole almonds
1/4 cup hazelnuts
Extra-virgin olive oil
2 slices day-old bread from a large French or Italian loaf, crusts removed
1 medium onion, finely chopped
Salt and pepper
2 dried ñora chiles or 1 dried ancho chile, stems and seeds removed
1 fresh red Fresno chile, seeds removed and finely chopped
3 canned piquillo peppers, chopped (optional)
1 teaspoon pimentón dulce (sweet Spanish paprika)
4 garlic cloves, minced
1 cup fresh or canned tomato purée
1/2 cup dry white wine
12 littleneck clams or 24 manila clams, rinsed
3 tablespoons chopped parsley

Steps:

  • Boil or steam lobsters for 10 minutes, then rinse with cool water. Crack shells, remove meat and cut into large chunks. Put shells in a large pot, cover with 10 cups water and simmer for 20 to 30 minutes. Strain, reserve broth and discard shells.
  • Heat oven to 400 degrees. Place almonds and hazelnuts on a baking sheet and roast until fairly dark, about 12 to 15 minutes. Rub skins from hazelnuts; discard skins.
  • Place a large, wide heavy-bottomed pot over medium heat and add olive oil to depth of 1/4 inch. When oil is hot, fry bread slices slowly on both sides until crisp and golden, 5 to 6 minutes, adjusting heat if bread is browning too quickly. Remove bread, drain on paper towel and cut into rough 1/2-inch cubes; set aside. Pour off all but about 4 tablespoons oil (Save excess oil for another purpose.) Add onion to pot, season with salt and pepper and cook until onion is softened and lightly colored, about 10 minutes.
  • Meanwhile, put dried ñora or ancho chiles in a small pot of water and simmer for about 15 minutes, until softened, then drain, discarding water.
  • Put almonds, hazelnuts, fried bread, garlic, dried chiles, Fresno chiles, piquillo peppers and pimentón in a large mortar and pound to a rough paste. (You may use a food processor instead.)
  • Add chile mixture to softened onions and cook over medium-high heat for 5 minutes, stirring occasionally. Add tomato purée and wine and simmer until mixture has dried out a bit. Add 8 cups lobster broth and simmer until slightly thickened, about 10 minutes. Taste for salt and adjust seasoning. If too thick, add a little more broth. (May be prepared up to this point several hours ahead.)
  • To serve, bring to a brisk simmer and add clams. When clams begin to open, add lobster meat and cook 5 minutes more. Stir in parsley and ladle the stew into 4 to 6 large soup bowls.

2 bunches fresh cilantro leaves
2 bunches fresh parsley leaves
6 cloves garlic, chopped
10 tomatoes, roughly chopped
6 onions, chopped
4 green peppers, seeded and chopped
3 tablespoons salt
Freshly ground pepper
2 bunches spring onions, finely sliced
6 limes, halved
2 large whole sea bass, cleaned
2 large lobsters, halved
5 tablespoons light olive oil
1 pint coconut milk
1/2 ladle dende oil, optional* (about 4 tablespoons)

Steps:

  • Roughly chop nearly all of the cilantro and parsley, reserving a little of each for garnish. Place the cilantro, parsley, garlic, tomatoes, onions, peppers, salt, pepper, and most of the spring onions (reserve some for garnish) into a large heavy bowl. With a pestle, mash together all ingredients, gradually squeezing in the lime juice.
  • Score the sea bass diagonally 3 times on each side. Stuff some of the vegetable-herb mixture into the slits and the inside of each fish and close back together. Cover the lobster halves with the vegetable-herb mixture, reserving about half of the vegetable-herb mixture for later.
  • Heat the olive oil in a large skillet over medium-high heat. Arrange the sea bass and lobster, flesh side down in the hot pan. Cook for 2 minutes, and then pour over the coconut milk and bring to a simmer. After another 2 minutes, turn over the fish and lobster. Add the remainder of the vegetable-herb mixture, and cook for another 10 minutes, or until the fish and lobster are tender and the vegetables are cooked through.
  • Transfer to a large serving dish and sprinkle with remaining cilantro, parsley, and spring onions. Ladle dende oil, if using, in a slow circular motion over the top.

Number Of Ingredients 9

6 live 1-pound lobsters
8 ounces (2 sticks) unsalted butter
1 cup dry Sherry (either amantillado or fino), plus 1/2 cup
6 cups whole milk
2 cups heavy cream
1/4 teaspoon paprika
Salt
Freshly ground black pepper
Chopped fresh parsley

Steps:

  • Bring a large pot of salted water to a boil. Plunge the lobsters head first into the boiling water, in batches, if necessary, and cook, covered, for 5 minutes. Transfer the lobsters with tongs to a large bowl filled with ice water to cool. When the lobsters are cool enough to handle, crack the shells, remove the tail and claw meat, and coarsely chop. Reserve the shells. Tightly cover the meat and refrigerate.
  • In a large Dutch oven, melt 4 ounces (1 stick) of butter over medium-high heat. Add the shells and cook, stirring, until they turn bright red, 2 to 3 minutes. Add 1 cup of the Sherry and bring to a boil. Cook until reduced by half, about 3 minutes. Add the milk, cream, paprika, salt, and pepper, and return to the boil. Reduce the heat to medium-low and simmer until slightly thickened, 15 to 20 minutes. Remove from the heat and let cool. Cover and refrigerate at least 6 hours or overnight for the flavors to develop.
  • Remove the milk and shell mixture from the refrigerator and strain into a clean container through a fine mesh strainer. Set aside. In a large, heavy pot, melt the remaining 4 ounces (1 stick) of butter over medium-high heat. Add the chopped lobster meat and cook, stirring, until lightly colored, 2 to 3 minutes. Add the remaining 1/2 cup of Sherry and increase the heat to high. Cook, stirring, to deglaze the pan and until reduced by half. Add the strained milk mixture and bring to a low boil. Simmer, stirring, until heated through.
  • Remove from the heat and adjust the seasoning, to taste. Spoon into bowls and garnish with chopped fresh parsley. Serve immediately.

INGREDIENTS
2 lobsters, about 1 1/2 pounds each
¼ cup whole almonds
¼ cup hazelnuts
Extra-virgin olive oil
2 slices day-old bread from a large French or Italian loaf, crusts removed
1 medium onion, finely chopped
Salt and pepper
2 dried ñora chiles or 1 dried ancho chile, stems and seeds removed
1 fresh red Fresno chile, seeds removed and finely chopped
3 canned piquillo peppers, chopped (optional)
1 teaspoon pimentón dulce (sweet Spanish paprika)
4 garlic cloves, minced
1 cup fresh or canned tomato purée
½ cup dry white wine
12 littleneck clams or 24 manila clams, rinsed
3 tablespoons chopped parsley

Steps:

  • Boil or steam lobsters for 10 minutes, then rinse with cool water. Crack shells, remove meat and cut into large chunks. Put shells in a large pot, cover with 10 cups water and simmer for 20 to 30 minutes. Strain, reserve broth and discard shells. Heat oven to 400 degrees. Place almonds and hazelnuts on a baking sheet and roast until fairly dark, about 12 to 15 minutes. Rub skins from hazelnuts; discard skins. Place a large, wide heavy-bottomed pot over medium heat and add olive oil to depth of 1/4 inch. When oil is hot, fry bread slices slowly on both sides until crisp and golden, 5 to 6 minutes, adjusting heat if bread is browning too quickly. Remove bread, drain on paper towel and cut into rough 1/2-inch cubes; set aside. Pour off all but about 4 tablespoons oil (Save excess oil for another purpose.) Add onion to pot, season with salt and pepper and cook until onion is softened and lightly colored, about 10 minutes. Meanwhile, put dried ñora or ancho chiles in a small pot of water and simmer for about 15 minutes, until softened, then drain, discarding water. Put almonds, hazelnuts, fried bread, garlic, dried chiles, Fresno chiles, piquillo peppers and pimentón in a large mortar and pound to a rough paste. (You may use a food processor instead.) Add chile mixture to softened onions and cook over medium-high heat for 5 minutes, stirring occasionally. Add tomato purée and wine and simmer until mixture has dried out a bit. Add 8 cups lobster broth and simmer until slightly thickened, about 10 minutes. Taste for salt and adjust seasoning. If too thick, add a little more broth. (May be prepared up to this point several hours ahead.) To serve, bring to a brisk simmer and add clams. When clams begin to open, add lobster meat and cook 5 minutes more. Stir in parsley and ladle the stew into 4 to 6 large soup bowls.

4 1 1/4- to 1 1/2-pound live lobsters
3 tablespoons olive oil
1 medium onion, finely chopped
2 medium Hungarian yellow wax peppers or 1 large green bell pepper, finely chopped
1 1/2 pounds plum tomatoes, seeded, finely chopped
5 tablespoons minced fresh parsley
1 bay leaf
1/4 teaspoon dried thyme
Pinch of sugar
1/4 cup brandy
1 8-ounce bottle clam juice
1 cup water
3 garlic cloves, minced

Steps:

  • Working in batches and using tongs, lower lobsters into large stockpot of rapidly boiling water. Boil 5 minutes. Using tongs, transfer lobsters to platter. Cool completely.
  • Working over bowl to catch juices from lobsters and using kitchen shears, cut tails from lobsters. Cut each tail into 3 rounds. Split open lobster heads and bodies; remove tomalley (green liver) and reserve (about 2 tablespoons total). Divide each large claw into 2 pieces, cutting 1 side open for easy removal of claw meat. Set aside lobster pieces and juices.
  • Heat 3 tablespoons oil in heavy large deep skillet or pot over medium-high heat. Add onion and peppers; sauté until slightly softened, about 5 minutes. Add tomatoes, 2 tablespoons minced fresh parsley, bay leaf, thyme, and pinch of sugar. Sprinkle with salt. Bring to boil. Reduce heat and simmer until mixture thickens, about 20 minutes. Add brandy and simmer 2 minutes. Add all reserved lobster pieces and juices to skillet; simmer 5 minutes. Mix in clam juice and 1 cup water. Bring to boil. Reduce heat, cover and simmer 10 minutes longer.
  • Add reserved tomalley, 2 tablespoons minced fresh parsley, and minced garlic to skillet with lobster and simmer uncovered 5 minutes. Transfer lobster pieces to bowl. Transfer sauce to blender and puree until smooth, thinning with more water if desired. Season sauce to taste with salt and pepper. Transfer sauce to serving bowl. Top with lobster pieces. Sprinkle with remaining 1 tablespoon parsley and serve.

Romesco, the delicious rust-colored sauce from the Catalan region of Spain, is justly popular, served alongside grilled fish or as dip for vegetables. It is typically made with fresh and dried red peppers, roasted almonds and hazelnuts, a fair amount of garlic, and day-old bread fried in olive oil. Sometimes, however, instead of being used as a sauce, it is added to a fish stew. Known as romesco de peix or simply romescada, it may contain several kinds of fish and shellfish. In this version, which features lobster and clams, rather than stirring in the romesco at the end, the ingredients are added in stages from the beginning, for depth of flavor.
2 lobsters, about 1 1/2 pounds each

two- 11 ounce containers of frozen lobster meat
1 bay leaf
3 scallions with tops, finely chopped
1/2 cup butter
3 tablespoons flour
parsley for garnish
salt & pepper to taste
2 cups half & half
1 cup whole milk
4 dashes Tabasco sauce
1 bottle of clam juice (8 ounce)

Steps:

  • Saute scallion in butter until tender. Add flour to scallion mixture. Whisk over low heat for 2 to 3 minutes until thick and smooth. Add clam juice stirring constantly. Add bay leaf. Cook for an additional 3 minutes. Add lobster meat cut up into 1/2 to 1 inch pieces. Season with salt & pepper to taste. Preheat mixture of half & half and whole mile. Add lobster mixture and stir until blended. Simmer over low heat for 30 minutes. Do not allow it to boil. Cool and refrigerate. Taste is enhanced by allowing stew to cool overnight. Remove bay leaf. Add 4 dashes of Tabasco sauce. Reheat and serve with parsley garnish.Enjoy!

Number Of Ingredients 9

2 1 1/4-pound lobsters (female if you have a choice; you want the roe)
4 tablespoons (1/2 stick) unsalted butter, divided
1 large shallot, chopped
1 tablespoon brandy or Cognac
2 sprigs thyme
2 cups half-and-half
Kosher salt
Freshly ground white pepper
Tabasco

Steps:

  • Bring 3 cups water to a boil in a large pot. Add lobsters and cook until shells are red but meat is not yet cooked through, about 5 minutes. Remove lobsters; reserve cooking liquid. When cool enough to handle, crack lobsters over a large bowl to catch liquid; separate meat from shells.
  • Cut meat into bite-size pieces; set aside meat and shells separately. Combine liquid from shells with cooking water in a large measuring cup; you should have 3 cups liquid (add water if needed). Set liquid aside. If lobsters are female, remove roe; set aside. (The roe sac is dark green when raw, red when cooked. The lobsters are half-cooked, so it will be green with pink around the edges.) Discard soft, pale green tomalley.
  • Melt 2 tablespoons butter in a wide heavy pot over medium heat. Add shallot and cook, stirring occasionally, until shallot is soft, about 5 minutes. Add lobster shells and cook, turning occasionally, until lightly browned in spots and very fragrant, about 8 minutes. Remove pan from heat and add brandy. Return to heat and cook until brandy has almost evaporated. Add lobster cooking liquid and thyme sprigs and simmer until liquid is reduced by one-third, 8-10 minutes. Strain stock; discard solids in strainer. You should have about 2 cups stock.
  • Melt remaining 2 tablespoons butter in same wide heavy pot over medium heat. Add roe, if using; mash and stir into butter until roe turns red, about 30 seconds. Add lobster meat; cook until just heated through, about 1 minute. Add stock and bring to a simmer. Remove stew from heat; stir in half-and-half. Season with salt, a small pinch of pepper, and a dash of Tabasco. Let cool; cover and chill overnight to allow flavors to meld.
  • Rewarm stew gently over low heat, stirring occasionally (do not simmer or the lobster will become tough and cream may separate). Ladle into warm bowls and serve.

1 lobster tail
2 lb easy peel shrimp
1/2 onion, diced
1/4 red pepper, diced
1/4 green pepper, diced
3 garlic cloves diced
2 bay leaves
2 can(s) tomatoe sauce
1 can(s) large can of fire roasted diced tomatoes
1 Tbsp tomatoe paste
1 sprig(s) flat leaf parsley, chopped
1 sprig(s) cilantro, chopped
1 tsp crushed red pepper flakes
salt/pepper to taste
2 Tbsp olive oil
1/2 c white wine

Steps:

  • 1. peel shrimp & cut lobster into chunks..set aside
  • 2. in 2 tablespoons of olive oil, saute onions, peppers for a few minutes...add the garlic, parsley, cilantro, bay leaves.
  • 3. add all the tomatoe ingredients, white wine & salt/pepper to taste
  • 4. simmer for 15 mins...add lobster & shrimp simmer 5 mins... and turn off. add crushed red pepper flakes
  • 5. I served with Jasmine rice & fried boniato....serve as you like.
