LOADED FRIED POTATOES
This is one of those dishes that you could eat as a side or main dish. It's easy to prepare and oh so delicious. I love the smokiness that the bacon and sausage add to the potatoes. The seasonings really help balance out the dish and, of course, the gooey cheese is the perfect topping.

Steps:
- 1. Melt butter in large skillet. Add potatoes, onion, parsley, salts, and pepper. Let it cook down a little.
- 2. Add sausage, mushrooms, and bacon. Continue to cook until potatoes are tender and browned.
- 3. Sprinkle with cheese and serve.

Steps:
- Heat vegetable oil in a large skillet over medium heat. Add hashbrowns, onions, peppers, tomatoes, and chopped cilantro. Cook for 10-15 minutes, turning frequently, until potatoes are golden brown and peppers are fork tender. Remove from heat and place in a casserole dish. Sprinkle with cheese and bacon bits. Garnish with fresh cilantro sprig.

my husband came home from work one morning and told me he was hungry . so i looked in the fridge and in my panty to see what i had and i came up with what i like to call loaded fried potatoes . he not only loved the dish he practically ate the whole pan it was that good :)

- 1. heat your stove to a med-high heat . in a large non-stick frying pan add your bacon and cook until its slightly crispy . take your bacon out of the pan and reserve the bacon fat . your going to need this to fried up your potatoes trust me its gives the potatoes a whole new flavor . in the same pan you cooked your bacon in add some of your reserved bacon fat . add your diced potatoes and your onions and all your seasonings and cook until the potatoes are tender and a nice golden brown . turn off the heat once the potatoes are done cooking and add your bacon to the pan along with your 1 cup of good sharp cheddar cheese . using a wooden spoon slowly stir the potatoes until the cheese has melted all over .
- 2. you can make this as a breakfast side or even make it as a dinner side enjoy :)
