Got this in a recipe exchange - haven't gotten the chance to try it yet as I'm waiting for a shot to make it for the whole fam one glorious morning!

Number Of Ingredients 13

2 cups flour
1 cup sugar
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
2 cups grated carrots, packed
1/2 cup raisins
1/2 cup grated coconut
1/2 cup chopped pecans
1 (8 ounce) can pineapple, drained
1 cup applesauce
3 large eggs, lightly beaten
2 teaspoons vanilla extract

Steps:

  • Combine first 5 ingredients in a mixing bowl, in a seperate bowl, stir together remaining ingredients; add to flour mixture, stirring until just moistened.
  • Place paper baking cuts in muffin pans. Spoon batter into cups filling 2/3 full.
  • Bake at 350 for 25 minutes or until golden brown. Remove from pans immediately.

2 cups all-purpose flour
1 ¼ cups white sugar
2 teaspoons baking soda
2 teaspoons ground cinnamon
¼ teaspoon salt
2 cups shredded carrots
½ cup raisins
½ cup chopped walnuts
½ cup unsweetened flaked coconut
1 apple - peeled, cored and shredded
3 eggs
1 cup vegetable oil
2 teaspoons vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups, or line with paper muffin liners.
  • In a large bowl, mix together flour, sugar, baking soda, cinnamon, and salt. Stir in the carrot, raisins, nuts, coconut, and apple.
  • In a separate bowl, beat together eggs, oil, and vanilla. Stir egg mixture into the carrot/flour mixture, just until moistened. Scoop batter into prepared muffin cups.
  • Bake in preheated oven for 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

2-1/2 cups all-purpose flour
1-1/4 cups sugar
3 teaspoons ground cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
3 eggs
3/4 cup applesauce
1/2 cup vegetable oil
1 teaspoon vanilla extract
2 cups grated carrots
1 medium tart apple, peeled and grated
1 can (8 ounces) crushed pineapple, drained
1/2 cup sweetened shredded coconut
1/2 cup raisins
1/2 cup chopped walnuts

Steps:

  • In a large bowl, combine the first five ingredients. In another bowl, combine the eggs, applesauce, oil and vanilla. Stir in carrots, apple, pineapple, coconut, raisins and nuts., Fill greased or paper-lined muffin cups two-thirds full. Bake at 350° for 20-24 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pans to wire racks.

2/3 cup roasted sunflower seeds
1 cup whole wheat flour
1/2 cup unbleached flour
1 teaspoon baking powder
1/2 teaspoon baking soda

1 egg
2 tablespoons oil
3/4 cup grated carrot
1/2 cup unsweetened applesauce
1/2 cup packed brown sugar
1/2 cup orange juice
1 teaspoon vanilla
1/2 cup raisins

Steps:

  • Combine dry ingredients (flour through cinnamon) in large bowl.
  • Whisk together egg and oil till smooth in medium bowl.
  • Add all remaining ingredients (except raisins) and whisk till blended.
  • Stir in raisins.
  • Add wet ingredients to flour mixture, and whisk just until combined.
  • Divide batter among 12 sprayed or lined muffin cups, filling cups nearly full.
  • Bake at 375°F until muffins have risen slightly and are golden brown, 25-30 minutes.

I love the name of these and the taste is even better! These muffins have a little bit of everything in them, carrot, apple, cococnut, nuts, raisins, and more! SO YUMMY! I usually make a double batch and freeze the extras.

3 extra-large eggs
2 teaspoons pure vanilla extract
2 cups grated carrots, unpeeled and grated on a box grater
1 Granny Smith apple, unpeeled and grated on a box grater
1 (8-ounce) can crushed pineapple, drained
1/2 cup pecans, roughly chopped
1/2 cup sweetened shredded coconut
1/2 cup raisins
2 1/4 cups all-purpose flour
1 1/4 cups sugar
1 tablespoon ground cinnamon
2 teaspoons baking soda
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F and arrange two racks evenly spaced in the oven. Line two muffin pans with paper muffin cups.
  • In a large bowl, whisk together the eggs, oil, and vanilla. Add the carrots, apple, pineapple, pecans, coconut, and raisins and stir together. In a medium bowl, sift together the flour, sugar, cinnamon, baking soda, and salt. Add the dry ingredients to the wet ingredients and stir just until combined. Scoop the batter with a standard (2 1/4-inch) ice cream scoop (I use rounded scoops of batter) into the prepared muffin cups. Bake for 30 to 35 minutes, until a toothpick comes out clean. Place the pans on a baking rack to cool and serve the muffins warm or at room temperature.

A delicious, nutritious and satisfying muffin from "Cooking Light Magazine (July 2007). You can definitely play around with this recipe- it does well with substitutions. These freeze very well. Either microwave for 20 seconds or just pull one out of the freezer before you leave for the day, and it will be defrosted and perfect in about an hour, just in time for a snack!. If you want, you can fold the flax into the batter, rather than sprinkling it on top.

1 cup whole wheat flour (about 4 3/4 ounces)
1/2 cup all-purpose flour (about 2 1/4 ounces)
1 cup regular oats
3/4 cup packed brown sugar
1 tablespoon wheat bran or 1 tablespoon oat bran
2 teaspoons baking soda
1/4 teaspoon salt
1 cup plain fat-free yogurt or 1 cup non-fat vanilla yogurt
1 cup mashed ripe banana (about 2)
1 large egg
1 cup chopped dried apricots or 1 cup raisins
3/4 cup chopped walnuts
1/2 cup dried fruit or 1/2 cup fresh blueberries
2 tablespoons whole flax seeds, ground (it will be 3 tablespoons ground) or 3 tablespoons wheat germ

Steps:

  • Preheat oven to 350°.
  • Place 18 muffin cups liners in muffin cups; coat liners with cooking spray.
  • Lightly spoon flours into dry measuring cups, and level with a knife. Combine flours and next 5 ingredients (through salt) in a large bowl; stir with a whisk. Make a well in center of mixture. Combine yogurt, banana, and egg; add to flour mixture, stirring just until moist. Fold in dates, walnuts, and pineapple. Spoon batter into prepared muffin cups. Sprinkle evenly with flaxseed. Bake at 350° for 20 minutes or until muffins spring back when touched lightly in center. Remove muffins from pans immediately; cool on a wire rack.
