A classic New Orleans Crawfish Pie Recipe featuring a savory, Creole crawfish filling, enclosed in buttery, flaky pie crust and baked to perfection.

3 tablespoons unsalted butter
3 stalks of celery, finely diced
1 bell pepper, seeded and finely diced
1 yellow onion, finely diced
2 cloves garlic (minced)
1/3 cup + 1 tablespoon all-purpose flour
1 tablespoon tomato paste
3 cups unsalted chicken or seafood broth
2 1/2 teaspoon Worcestershire sauce
1 teaspoon hot sauce
2 teaspoon Cajun or Creole seasoning
1/2 teaspoon Kosher salt
1/2 teaspoon black pepper
1 bay leaf
12 ounces cooked crawfish tails
1 large tomato (pulp and seeds removed), diced
2 uncooked pie crusts
1 large egg (lightly beaten)

Steps:

  • Preheat the oven to 400° and have ready a greased, 9" (preferably deep dish) pie tin.
  • Add butter to a large saucepan or Dutch oven over medium-high heat. As soon as the butter has melted, add the celery, bell pepper, and onion and sauté for 5-7 minutes, until softened. Add the garlic and sauté 1 minute more.
  • Sprinkle flour over the vegetables and stir until evenly coated. Stir in the tomato paste and begin adding the chicken broth one big splash at a time, whisking after each addition. Do this until the mixture begins to resemble a thick pudding. Once this consistency is reached, the remaining broth can be added in.
  • Add the Worcestershire, hot sauce, Cajun seasoning, salt, pepper, and the bay leaf and allow the mixture to simmer, stirring often, about 6-8 minutes, until slightly thickened. Stir in the crawfish and tomatoes and simmer 5 minutes more. Set aside until ready to use.
  • Roll out the pie dough so that it is a 1/4" thick. Lay one dough round on across the bottom of the pie dish, and allow the excess to lay over the sides of the dish.
  • Pour the filling into the dish. Roll out the second dough round just the same, and place it over the dish. Crimp the edges of the pie crust together.
  • To make the egg wash, whisk together the egg and 1 tablespoon of water, and using a pastry brush, lightly brush the mixture across the top crust and the edges. Create vent holes in the center of the pie, and transfer to a sturdy, rimmed baking sheet to catch any spillage.
  • Bake the pie for 20 minutes. Then, reduce the temperature to 350° and bake for 25-28 minutes more, or until the top is golden-brown. Use a pie shield to prevent the edges from over-browning.
  • Remove from the oven and allow to cool for 15-20 minutes before cutting into. Serve and enjoy

3/4 medium bell pepper, chopped
1 large onion, chopped
2 stalks celery, chopped
3/4 cup butter
6 tablespoons crawfish fat (optional)
1 3/4 pound peeled crawfish tails
1/2 cup green onions and 3 inches of the top
1/2 cup minced parsley
1 1/12 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon red pepper
1/2 teaspoon garlic powder
Cornstarch to thicken

Steps:

  • Add bell pepper, onion and celery to butter and saute until tender. Add crawfish fat and simmer covered 10 minutes. Add crawfish tails, green onions and remainder of seasonings. Thicken if necessary with a little cornstarch and let cook long enough to thicken gravy.
  • Using your favorite pie crust recipe, make enough pie dough for a double crust pie. Place the dough in a 9-inch pie pan. Gently press the dough to the bottom and sides. Cut excess dough, leaving a 1-inch overhang. Fill the pie shell with the cooled filling. With a pastry brush, dip in cold water and moisten the outside edge of the pastry shell. Place top crust over the filling, cutting off the overhang even with the overhang on the bottom crust. Crimp the top and bottom crusts together, trim. Cut 2 or 3 one-inch parallel slits in the top of the pie. Place pie in a preheated 450 degree oven and bake for 10 minutes, then lower heat to 375 degrees and cook for 35 minutes longer or until crust is a golden brown. Serve hot as a main course.
  • Individual pies:
  • Using the same procedure, individual pie pans or a muffin pan with large cups can be used instead of a large pie pan. Roll the dough, fit into the cups, place the filling in the cups. Moisten the edges with cold water. Place a circle of dough on top. Crimp edges together. Cut a 1-inch slit in the center. Bake as above.

2 1/2 cups flour
1 teaspoon salt
2/3 cup lard
4 1/2 tablespoons ice water
1/2 stick butter
1 cup chopped yellow onion
1/4 cup chopped green bell pepper
1/4 cup chopped red bell pepper
1/2 cup chopped celery
2 tablespoons minced shallots
1 tablespoon minced garlic
1 1/2 teaspoons salt
1/2 teaspoon cayenne
1/4 teaspoon black pepper
1/2 cup chopped tomatoes
1 pound peeled crawfish tails
2 tablespoons chopped parsley
2 tablespoons flour
1 cup water
2 tablespoons chopped chives
1 tablespoon brunoise red peppers
1/4 cup grated Parmegiana-Reggiano

Steps:

  • Preheat the oven to 400 degrees F.
  • In a mixing bowl, combine the flour and salt. Using your hands work in the lard until the mixture resembles coarse crumbs. Add the water, 1 tablespoon at a time. Work the dough until you have a smooth ball. Wrap the dough in plastic wrap and refrigerate for 30 minutes. Remove from the refrigerator and place on a lightly floured surface. Cut the dough in half and roll each ball into a circle about 14 inches in diameter and 1/8-inch thick. Gently fold the circle of dough in half and then in half again so that you can lift it without tearing the dough, and unfold into a 9-inch pie pan. Reserve the other circles for the top of the pie.
  • In a large saute pan, heat the butter. When the butter is melted, add the onions, peppers, celery, shallots, garlic, salt, cayenne, and black pepper. Saute for 8 minutes, or until the vegetables are golden and wilted. Add the tomatoes and cook for 6 minutes. Add the crawfish tails and parsley. Stirring occasionally, cook for about 4 minutes. Dissolve the flour in the water and add to the pan. Stir for about 2 minutes, or until the mixture thickens. Remove from the heat. Cool for at least 30 minutes.
  • Pour the cooled filling into the piecrust. Top the filling with the remaining crust and crimp the edges. Place the pie in the center of a cookie sheet and brush with an egg wash. Bake for 45 minutes, or until the edges of the piecrust are golden. Cool for 10 minutes before slicing. Place a slice of the pie in the center of a plate. Garnish with chives, red peppers, and cheese.

1 (9 inch) prepared deep-dish pie crust
¼ cup butter
1 cup chopped onion
½ cup chopped green bell pepper
½ cup chopped celery
1 ½ teaspoons salt
½ teaspoon ground cayenne pepper
⅛ teaspoon white pepper
1 cup diced tomatoes
12 ounces peeled crawfish tails
2 tablespoons all-purpose flour
1 cup water

Steps:

  • Place the pie crust into a deep-dish pie plate.
  • Melt butter in a large skillet over medium heat, and cook and stir the onion, green pepper, celery, salt, cayenne pepper, and white pepper until the vegetables are tender and the onion is translucent, about 5 minutes. Stir in the tomatoes and crawfish tails, reduce heat to medium-low, and cook for about 3 minutes to blend flavors, stirring occasionally.
  • Whisk flour and water together in a bowl until the mixture is smooth, and pour the flour mixture into the skillet. Bring the filling to a simmer, and cook, stirring constantly, until the mixture thickens, about 5 minutes. Remove from heat and allow to stand for 20 to 30 minutes to finish thickening.
  • While filling is cooling, preheat oven to 400 degrees F (200 degrees C). Pour the filling into the prepared pie crust, and bake in the preheated oven until the crust is golden brown and the filling is hot and bubbling, 30 to 40 minutes. Cool for 10 minutes before serving.

They aren't hard to make, but the bread cups can be a little time consuming so whenever you're in the mood, make the bread cups ahead of time and...

24-36 bread cups (see recipe below)
2 lb louisiana frozen crawfish tails with fat, or cooked shrimp, coarsely chopped
1 stick butter
2 medium onions, chopped fine
3 stalk(s) celery, chopped fine
1/2 red &/or green bell pepper, chopped fine
2 Tbsp chives or green onions, fresh or dried
salt and black pepper - to taste
1 Tbsp garlic, minced
1 Tbsp worcestershire sauce (lea & perrin's)
1 can(s) cream of mushroom soup
1 jar(s) 15oz cheez-whiz
1/2 tsp cayenne pepper
1/2 cap liquid crab boil (optional)
2 dash(es) paprika - for color
1 1/4 c italian bread crumbs
paprika or chopped parsley, fresh or dried for garnish

Steps:

  • 1. First you make a roux. NO! NO! NO!, not this time. Just Kidding! Sorry, I got carried away...
  • 2. FIRST - In a large skillet melt butter and add onion, celery, and chives/green onions, and season with a little salt and pepper. Saute until onions begin to soften.
  • 3. Add garlic, worcestershire sauce, cayenne (start with a pinch, you can always add more later), and paprika; continue to simmer 15-20 minutes, stirring frequently.
  • 4. Add soup and Cheez-Whiz, simmer until cheese is melted, stirring frequently to keep cheese from burning.
  • 5. Add crawfish and simmer 10 minutes. Add 1/2 cap, or to taste, liquid crab boil, (optional).
  • 6. Pour mixture into a large mixing bowl and add bread crumbs. Mix well and let sit to allow bread crumbs to expand. The mixture needs to be fairly thick so it won't fall down your shirt when you take the first bite of the mini crawfish pie.
  • 7. Check the mixture and add more bread crumbs if needed, stir and set aside.
  • 8. If you planned ahead and already have your bread cups made, then pop them back into the mini muffin pan and set aside, pour yourself a drink and put your feet up.   • 9. Once all of your ingredients are ready, use a small spoon and fill each bread cup, pack it in and heap it up on top. Sprinkle the top with a little paprika or chopped parsley. Bake at 350* F for 10 minutes and serve.
  • 10. *NOTE: Before baking, crawfish pies can be frozen then put into a Zip-Lock bag and kept frozen until ready to serve. From frozen bake at 350* F for 25 minutes until hot.
  • 11. *TIP: Alternate method for dough cups - Instead of making bread cups, you can use Pillsbury's pre-made pie crusts (2 crusts) in freezer section of the grocery, or you can make your own fabulous homemade pie crust. Use a cookie cutter to cut rounds that will form a cup when put into a mini muffin pan. Bake for 10 minutes then fill with crawfish mixture. Bake for another 10 minutes to heat through. *OPTIONS: If you don't want to make mini crawfish pies - use this filling to make one full size pie with a top and bottom crust. If you can't get crawfish, use shrimp or crab meat in place of crawfish. Add crab meat last so it stays together better.

This recipe is basically by Emeril Lagasse. I like it because I can fix it in the oven although he deep fried them. But he gave instructions for oven. Also, there is a recipe for preparing the pastry from scratch or using premade puff pastry. I opted for the puff pastry in the oven. Very tasty and pretty to look at.

3/4 cup yellow onion, chopped
1/4 cup green bell pepper, chopped
1 teaspoon salt (or to taste)

1 1/2 lbs peeled crawfish tails (can be purchased frozen)
1/2 cup green onions (green part only) or 1/2 cup scallion, chopped (green part only)
1 tablespoon chopped garlic
3 tablespoons chopped fresh parsley
1 large egg
3/4 cup fine dry breadcrumb
20 puff pastry, squares (3-4 inch square cut from large sheets)
1 egg, for egg wash
2 tablespoons milk, for egg wash
creole seasoning (to garnish) or cajun seasoning (to garnish)
3 cups all-purpose flour
1 1/2 teaspoons salt
3/4 teaspoon baking powder
6 tablespoons vegetable shortening
1 large egg
3/4 cup milk

Steps:

  • Heat olive oil over medium heat in large pan.
  • Add onions, bell pepper, salt, cayenne.
  • Cook for 2 minutes, stirring a few times.
  • Add crawfish and stir cook for 2 minutes.
  • Add green onions, garlic, and parsley and stir cook for 1 minute.
  • Pour mixture into medium-size bowl and let cool for about 3 minutes.
  • Add the egg and breadcrumbs and mix well.
  • Set aside.
  • DIRECTIONS FOR PUFF PASTRY IN OVEN:.
  • Preheat oven to 375°F.
  • mix egg and milk well for egg wash.
  • Place 2 tablespoons of crawfish mixture on each pastry.
  • Seal with egg wash and brush top with egg wash.
  • Bake in oven for 15 minutes.
  • Sprinkle lightly with Creole or Cajun seasoning.
  • Serve hot.
  • DIRECTIONS FOR MAKING PASTRY AND DEEP FRYING:.
  • Preheat fryer.
  • Sift flour, salt, baking powder into a large mixing bowl.
  • Cut in shortening with pastry blender or 2 knives, until mixture resembles coarse meal.
  • In small bowl, beat the egg with the milk.
  • Slowly add egg mixture to flour mixture, to a thick dough.
  • Divide dough into 12 equal portions.
  • On lightly floured surface, roll out each dough piece into a thin round about 5 inches in diameter.
  • Put about 1/4 cup crawfish mixture in center of each.
  • Fold the dough over and crimp edges with fork.
  • Deep fry 2 or 3 at a time till golden brown.
  • Drain on paper towels.
  • Sprinkle with Creole or Cajun seasoning.

1 cup butter
½ cup flour
1 sweet onion (such as Vidalia®), chopped
1 green bell pepper, chopped
celery, chopped
4 green onions, chopped
½ cup vegetable broth
3 tablespoons tomato paste
2 pounds cooked and peeled whole crawfish tails
3 cloves garlic, chopped
¼ cup fresh parsley, chopped
salt and ground black pepper to taste
cayenne pepper to taste
hot sauce to taste
12 puff pastry shells

Steps:

  • Melt butter in a large skillet on medium heat, then stir in flour; cook until light brown, about 10 minutes. Add sweet onion, green pepper, celery, and green onions. Cover and simmer on low heat for about one hour, stirring occasionally.
  • Stir in vegetable broth and tomato paste, and cook until it reaches a creamy consistency. Mix in crawfish tails, garlic, and parsley, then cook for about 15 minutes or until the tails are tender. Stir in salt, black pepper, cayenne pepper, and hot sauce.
  • Preheat an oven to 400 degrees F (200 degrees C). Bake the puff pastry shells for 5 to 7 minutes, or until they puff up and start to brown a little. Remove from oven and set aside to cool. Pull off center tops and save. Turn oven down to 350 degrees F (175 degrees C).
  • Spoon mixture into puff pastry shells until slightly overfilled. Put extra filling into a pie dish and cover with the remaining puff pastry shell center tops to create 6 small pies and 1 large crawfish pie. Place pies on a baking sheet.
  • Bake for about 15 minutes, or until the shells are golden brown and the filling has a nice shine to it.
