This is my favorite easy cheesecake recipe. When I want cheesecake in a flash, I make this no-bake style. I love to share it with friends and family. It's as easy as 1-2-3! Top with additional graham cracker crumbs and whipped topping, if desired.

2 (8 ounce) packages cream cheese, softened to room temperature
1 cup white sugar
3 tablespoons vanilla extract
1 teaspoon lemon extract
1 (8 ounce) container frozen whipped topping (such as Cool Whip®), thawed
1 (9 inch) prepared graham cracker crust
1 (21 ounce) can strawberry pie filling

Steps:

  • Combine cream cheese, sugar, vanilla extract, and lemon extract in a large bowl; beat with an electric mixer until smooth and creamy. Fold in whipped topping. Pour mixture into graham cracker crust and smooth evenly. Top with pie filling.
  • Refrigerate until firm, 2 to 3 hours.

I love this recipe because you just mix 4 simple ingredients, pour into any type of crust you like (I use graham cracker crust) and chill. Takes 5 minutes to assemble, plus chill time of around an hour.

Number Of Ingredients 4

1 (14 ounce) can sweetened condensed milk (can use Fat Free, if desired)
1 (8 ounce) container Cool Whip (can use Lite or Fat Free)
8 ounces cream cheese, SOFTENED (can use lite or fat free if desired)
1/3 cup fresh lemon juice (or feel free to use lime or key lime)

Steps:

  • Mix sweetened condensed milk, softened cream cheese, and cool whip on low speed with electric mixer until well blended, then add the juice and blend completely.
  • Pour into crust, and chill for at least an hour!
  • VERY yummy, refreshing, and EASY!

2 cups graham cracker crumbs
1/2 cup butter, melted (1 stick,)
1 (3 ounce) package lemon Jell-O gelatin
1 cup boiling water
3 tablespoons lemon juice
16 ounces cream cheese, at room temperature (I use low-fat )
1 cup sugar
2 teaspoons vanilla extract
1/4 teaspoon salt
1 (12 ounce) can evaporated milk (I use Milnot )

Steps:

  • CRUST: Mix ingredients together and press 2/3 of the mixture into bottom of a 9X13-inch pan.
  • FILLING:Disolve jell-o in boiling water. Let it cool. Add the lemon juice.
  • In a medium bowl, cream the sugar, salt and cream cheese with a mixer . Add the jell-o mixture and set aside.
  • In a large bowl ( I use a glass chilled one ), beat the Milnot until stif peaks form. Fold in the cream cheese mixture.
  • Pour it into the prepared glass pan. Sprinkle the remaining graham crackers mixture on top. Cover with plastic wrap and take to the freezer until firm ( about 4 hours ).
  • Cut in squares to serve.

Its so easy, quick to prepare and uses few ingredients, tastes wonderfull. No gelatine,no eggs! You should try it!

2 cups plain sweet biscuit crumbs
1 cup melted margarine
1 cup sugar
250 g cream cheese
1 cup sweetened condensed milk
1/2 cup lemon juice
2 teaspoons vinegar
1 cup cream

Steps:

  • Put some plastic kitchen wrap along the bottom and sides of a cake tin with plastic coming out over the sides.(So you will easily be able to lift cake out of tin when prepared).
  • Mix base ingredients in a bowl, then press biscuit mix into the bottom of cake tin.
  • Whip cream.
  • Beat all filling ingredients except cream together until smooth, then fold in cream.
  • Put filling into cake tin on top of base. Freeze for a few hours. When cake is hard pull out of cake tin. leave at room temperature for a few minutes then eat.
  • Optional lemon topping.
  • Heat and mix together a jar of lemon jam with some sugar and lemon juice in a saucepan. Put as much of each ingredient until you like the taste.When sugar has dissolved take off heat,let cool for a while. When cool spread topping on top of frozen/semi frozen cheesecake with a spoon and wet knife. Freeze cheesecake again for topping to harden.

Since getting a springform pan for my birthday, I've been collecting cheesecake recipes and finding the ones I had in my flies. This one was scribbled on an index card from who-knows-when. I hate not to give credit where it's due, but that was before Zaar. I love 7-UP and who doesn't love strawberries?? The passive time is chill time.

2 cups graham cracker crumbs
1/2 cup butter, melted
1/2 cup powdered sugar
1 teaspoon cinnamon
1 (1/4 ounce) package unflavored gelatin
1 1/2 cups carbonated lemon-lime beverage, 7-UP brand
1 (3 1/2 ounce) package lemon pudding mix, small, not instant
6 tablespoons sugar
2 eggs, beaten
3/4 cup water
16 ounces cream cheese
1/2 cup strawberry jelly, melted
fresh strawberries

Steps:

  • CRUST: Combine well the graham cracker crumbs, powdered sugar, cinnamon, and melted butter.
  • Press onto bottom and partway up sides of buttered 9" springform pan; chill.
  • FILLING: Soften unflavored gelatin in 1/4 cup 7-up for 4 minutes.
  • In a saucepan combine pie filling, sugar, beaten eggs and water. Blend well.
  • Add 1-1/4 cup 7-up and bring just to a boil over medium heat stirring constantly; remove from heat.
  • Stir in softened gelatin; cool 3 minutes. Add 1/2 cup of this warm mixture to softened cream cheese; mash together.
  • Mix together with remaining 7-up mixture and stir until well blended.
  • Turn into chilled crust and chill for at least 8 hours.
  • Remove from pan and add topping.
  • TOPPING: Brush top of chilled cheesecake with melted jelly.
  • Arrange strawberries upright on cake and spoon any remaining melted jelly over them.
