MOM'S SOUTHWEST GEORGIA POUND CAKE



Mom's Southwest Georgia Pound Cake image

A traditional pound cake that travels well and is perfect for pot luck parties.

2 sticks unsalted butter, softened
3 cups sugar
6 large eggs
3 cups flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup heavy cream
2 teaspoons pure vanilla extract
Vanilla ice cream or freshly whipped cream and seasonal berries for serving.

Steps:

  • Do not preheat the oven.
  • Generously grease and flour a 10-inch Bundt pan.
  • In a medium bowl sift together flour, baking powder and salt.
  • Using an electric mixer, cream butter and sugar together until fluffy. Add eggs one at a time, beating well after each addition.
  • Add flour mixture and heavy cream, alternately to the butter mixture, beginning and ending with flour. Mix until just combined.
  • Stir in vanilla.
  • Pour batter into prepared pan.
  • Put into a cold oven and set temperature to 325 degrees F. Bake for 1 hour, 15 minutes without opening door. If necessary, bake an additional 15 minutes, until a toothpick inserted in center comes out clean.
  • Remove from oven and cool in pan on cooling rack for 15 minutes. Remove from pan to serving plate. Dust with powdered sugar, if desired.
  • Serve with fresh whipped cream (or ice cream) and berries.

3 cups sugar or 1 1/2 cups Splenda Sugar Blend for Baking
6 large eggs
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup heavy cream
2 teaspoons pure vanilla extract (you may use lemon or almond instead)

Steps:

  • Generously grease and flour a 10-inch bundt pan: DO NOT PREHEAT OVEN.
  • Using an electric mixer, cream the butter and sugar together until fluffy; add the eggs one at a time, beating well after each addition.
  • Sift together the flour, baking powder, and salt; alternately add flour mixture and heavy cream to the butter-sugar mixture, beginning and ending with flour; stir in flavoring.
  • Pour batter into prepared pan; PUT INTO COLD OVEN and set the temperature to 325°F Bake for 1 hour and 15 minutes WITHOUT OPENING THE DOOR (DON'T PEEK); Bake an additional 15 minutes if necessary.
  • Remove from the oven and cool in pan for 15 minutes, invert cake onto cake plate.

I made from scratch and I love pound cakes. It is so good and moist and really delicious. My family loves it.

2 cup(s) sifted cake flour (swans down)
2 cup(s) sugar
1 cup(s) crisco shortening
6 - large eggs
1 teaspoon(s) vanilla extract
1 teaspoon(s) lemon extract

Steps:

  • Cream sugar and Crisco. Add eggs one at a time beating well after each addition. Add flour and beat in slowly. Add flavorings. Pour into a greased and floured tube pan. Bake at 325 F. for approximately 1 to 1 1/2 hours.
