Chocolate Zucchini Bread image

Chocolate zucchini bread that's rich, moist, and with a tender crumb. Made with cocoa powder for extra chocolate intensity.

4 cups grated zucchini (from about a pound and a half of zucchini)
2 1/2 cups all purpose flour
1/2 cup unsweetened cocoa (use natural unsweetened cocoa, NOT Dutch processed)
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 1/2 cups granulated white sugar
2 eggs
3/4 cup unsalted butter (12 Tbsp or 1 1/2 sticks), melted
1/2 teaspoon instant coffee granules
1/2 teaspoon almond extract

Steps:

  • Preheat oven, prepare loaf pans: Preheat oven to 350°F, with a rack in the middle. Grease two 9x5-inch loaf pans with baking spray or butter.
  • Beat sugar and eggs, add melted butter, instant coffee granules, almond extract: In a separate large bowl, beat together the sugar and eggs until smooth, about a minute. You can do this with an electric mixer on medium speed, or by hand with a wooden spoon. (I'm lazy and use a mixer but it's easy enough to do by hand.) Add the melted butter, instant coffee granules, and almond extract and beat until smooth.
  • Add zucchini to the egg mixture: Mix the shredded zucchini into the sugar egg mixture. Add the flour to the zucchini mixture in 3 additions, stirring to combine after each addition.
  • Cool: Remove to a rack. Let cool in the pan for 5 minutes, then run a blunt knife around the edges to separate the bread from the pan. Remove from the loaf pans and let cool completely on a rack. Note that if you try to slice the chocolate zucchini bread before it has completely cooled, it will be rather crumbly. It's also easiest to slice with a bread knife.

2 cups sugar
1 cup canola oil
3 large eggs, room temperature
3 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon baking powder
2 cups shredded peeled zucchini

Steps:

  • In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, cocoa, salt, baking soda, cinnamon and baking powder; gradually beat into sugar mixture until blended. Stir in zucchini. Transfer to 2 greased 8x4-in. loaf pans., Bake at 350° for 50-55 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.

I stole this recipe from my aunt's Lion House cookbook. The first time I made this, my neighbors came over to visit and I gave them a loaf. Next thing I know, their kids are asking for the recipe! A very thick and yummy bread. I cut my zucchini in small chunks and throw them in the food processor to speed things up.

2 ounces unsweetened chocolate (2 blocks)
2 cups zucchini, grated
2 cups all-purpose flour, all purpose
1 teaspoon salt
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
3 eggs
1 cup sugar
1 cup brown sugar
1 cup vegetable oil
1 teaspoon vanilla extract
1 cup semi-sweet chocolate chips, semi-sweet

Steps:

  • Preheat oven to 325 degrees. Prepare two 8x4-inch loaf pans by greasing and flouring or by lining with parchment paper.
  • Melt unsweetened chocolate and set aside.
  • Wash and grate zucchini; set aside.
  • Measure flour, salt, soda, baking powder, and cinnamon into a bowl; stir and set aside.
  • Place eggs in mixing bowl and beat.
  • Add the sugars, oil, melted chocolate, and vanilla; beat until creamy.
  • Add the zucchini and stir together. Mix in dry ingredients until incorporated. Add the chocolate chips and mix inches.
  • Pour into pans and bake for 45-50.

1 teaspoon vanilla extract
2 tablespoons butter
6 tablespoons cocoa powder
2 cups zucchini, grated
2 cups flour
1 teaspoon baking soda

1 1/2 teaspoons cinnamon
2/3 cup semi-sweet chocolate chips
2 teaspoons flour
1 cup chopped walnuts

Steps:

  • Preheat oven to 350°.
  • In a large mixing bowl combine eggs, sugar, oil, and vanilla, mix well.
  • In microwave melt 2 tbsp butter-add cocoa powder, mix well, and cool.
  • Grate zucchini.
  • Add zucchini and cocoa powder mix to the bowl, mix well.
  • In another bowl add flour, baking soda, cinnamon, salt.
  • Blend dry ingredients into the zucchini mix.
  • Toss chocolate chips with 2 tsp flour (this will prevent them from sinking to the bottom), add to the mixture mix in chopped nuts.
  • Grease and flour 2 loaf pans.
  • Pour batter into 2 loaf pans.
  • Bake 60-70 minutes until toothpick inserted in center comes out clean.
  • Cool on rack for 10 minutes in the pans, remove and cool on rack.

Forget the old, dry chocolate zucchini bread. This one is fabulous. Nice and chocolatey, moist and delicious. From the Food Network Kitchens cookbook.

2 1/2 cups all-purpose flour
1/4 cup unsweetened cocoa (NOT dutch process)
1 teaspoon baking soda
1/2 teaspoon cinnamon
1 pinch ground cloves
1 cup butter, softened
1 1/2 cups sugar
1/4 cup oil
2 large eggs, at room temp
1/2 cup buttermilk, also at room temp
1 teaspoon vanilla extract
2 cups zucchini, unpeeled and shredded
4 ounces bittersweet chocolate, finely chopped

Steps:

  • Heat oven to 350°.
  • Butter and flour 2 loaf pans.
  • Whisk the flour with the cocoa, baking soda, cinnamon and cloves in a medium size bowl.
  • Beat butter and sugar in a medium bowl with a mixer on med high until light and fluffy, about 4 minutes.
  • While you're mixing, drizzle in the oil, then the eggs, one at a time, beating well after each addition.
  • Stir the vanilla into the buttermilk.
  • Mix the flour mixture into the butter mixture in 3 additions, alternating with the buttermilk, beginning and ending with the flour.
  • (Like this--flour, buttermilk, flour, buttermilk, flour) Scrape the sides of the bowl when needed.
  • Fold in the zucchini and chocolate.
  • Divide batter into the 2 pans.
  • Bake until tester comes out clean, about 55 minutes.
  • (be careful, the tester may look chocolatey from the chocolate in the bread--don't overbake) Cool in pans on rack before removing and slicing.
