MARINATED GRILLED SHRIMP

A simple Marinated Grilled Shrimp recipe is the perfect easy and healthy dinner for warm weather months!

Number Of Ingredients 10

⅓ cup olive oil
¼ cup freshly squeezed lime juice
2 teaspoons minced garlic
2 tablespoons chopped fresh parsley
2 tablespoons Worcestershire sauce
1 tablespoon honey
¼ teaspoon salt
Pinch of pepper
2 lbs. raw, peeled, and deveined shrimp ((I use extra large or jumbo shrimp))
Optional garnish: fresh lime wedges and additional chopped parsley

Steps:

  • In a jar with a lid, combine all of the marinade ingredients. Shake until completely combined.
  • Place shrimp in a large zip-top bag or bowl. Pour the marinade in the bag with the shrimp. Seal the top of the bag and place shrimp in the refrigerator to marinate for at least 15-20 minutes (but not more than 2 or 3 hours).
  • Remove shrimp from the bag and discard the marinade. Thread shrimp onto skewers and grill over high heat for 4-6 minutes, flipping halfway through. If you prefer, you can also broil the shrimp on a sheet pan in the oven for about 7-8 minutes, flipping halfway through.
  • Garnish with fresh lime wedges and additional chopped parsley.

OLD BAY MARINATED AND GRILLED SHRIMP

These shrimp marinate for only 30 minutes in a flavorful mix of lemon juice, garlic and the powerhouse spice blend, Old Bay seafood seasoning. Don't be tempted to let them sit in the sauce any longer than that because the lemon juice will start to cook the shrimp and make them tough. Serve with some boiled or roasted potatoes for a grill-lover's version of a shrimp boil.

1 large lemon
2 large cloves garlic
1 tablespoon seafood seasoning, such as Old Bay
2 tablespoons extra-virgin olive oil
1 pound jumbo shrimp (16/20), peeled and deveined
Hot sauce, for serving

Steps:

  • Juice half of the lemon and add the juice to a medium glass bowl. Finely grate the garlic and add to the bowl along with the Old Bay seasoning, olive oil and shrimp. Toss to combine.
  • Marinate in the refrigerator for 30 minutes. Meanwhile, cut the remaining lemon half into wedges and reserve for serving.
  • Heat a large grill pan over medium-high heat. Remove the shrimp from the marinade and put on a baking sheet lined with paper towels. In batches, cook the shrimp until lightly charred in spots on both sides and just cooked through, about 3 minutes total. Remove from the heat and transfer to a large plate.
  • Serve the shrimp with the reserved lemon wedges and hot sauce.

2 lbs jumbo shrimp, uncooked, peeled and deveined
1 cup olive oil
2 garlic cloves, minced
4 teaspoons dried rosemary, crushed
2 teaspoons oregano
2 bay leaves
1 cup dry white wine or 1 cup chicken broth
1/4 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a bowl, combine the shrimp, oil, garlic, rosemary, oregano and bay leaves.
  • Cover and refrigerate for 2-4 hours.
  • Pour shrimp and marinade into a large deep skillet.
  • Add wine or broth, salt and pepper.
  • Cover and cook over medium low heat for 10-15 minutes or until shrimp turn pink, stirring occasionally.
  • Discard bay leaves.
  • Transfer with a slotted spoon to a serving dish.

1 lb large shrimp (uncooked and easy peel)
1 -2 cup water (enough water to cover shrimp by one inch)
1 medium sized jalapeno (deseeded, deveined, and chopped finely, optional ingredient!)
1 garlic clove (chopped finely)
1/2 cup water
2 teaspoons salt (kosher)
4 tablespoons fresh lime juice
2 tablespoons minced fresh cilantro (optional)
1 teaspoon Old Bay Seasoning (optional)
1/4 cup seafood cocktail sauce, for dipping
1 tablespoon chives (dried or fresh)

Steps:

  • Using a medium sauce pot, place the shrimp in 1 inch (or more) cover the shrimp.
  • Bring to a boil.
  • Cover and immediately remove from heat. Set aside 1 minute.
  • Drain and rinse the shrimp under cold water to stop the cooking and put into a bowl.
  • Cut the jalapeños in half lengthwise, devein and deseed. Place in a bowl with the shrimp.
  • Toss with 1/2 cup of water, lime juice, cilantro, and salt to taste.
  • Cover and refrigerate up to 1 day ahead.
  • On day serving, drain the shrimp. Toss with Old Bay if using. Add different sized crackers and a tooth pick. Put dipping sauce beside the shrimp. Sprinkle chives on top.

This is one of my FAVORITE dishes. Quick delicious and tasty enough to serve to company anytime! Sometimes I pour extra melted butter with some malt or apple cider vinegar mixed in, over the top of the shrimp before serving. It gives it a very nice flavor!

1 lb large shrimp
37 Ritz crackers, crackers (1 sleeve)
1/2 cup margarine, melted
1 lemon, cut in half
salt and pepper, to taste

Steps:

  • Place shrimp, tails up, in a glass baking dish, big enough to hold all. I use individual baking dishes, single serving size, and put 4 shrimp in each dish.
  • Crush crackers, and put them in a bowl.
  • Add the melted margarine to the crackers, and squirt in some lemon. Mix well.
  • Add salt and pepper, to taste.
  • Put cracker crumbs on top of the shrimp, and squeeze some more lemon over top, depending on how much you like lemon. I love lots, the more the better!
  • Bake in a 350 oven, for 30-40 mins., or until cracker crumbs are golden brown.
  • Serve with lemon wedges.

1/4 cup dry mustard

1/4 cup flat leaf parsley, fresh and finely chopped
2 garlic cloves, minced
1 bunch green onion, chopped
1 lemon, quartered
1 garlic clove, flattened
1 (3 ounce) package shrimp boil
5 lbs shrimp, uncooked and unpeeled

Steps:

  • Peel shrimp and set aside.
  • Whisk together vinegars, peppers, mustard, and salt; whisk in oils. Stir in parsley, green onions, and garlic. Set aside.
  • Bring 3 quarts of water, lemon, garlic, and shrimp boil to boil in large pot. Add shrimp to boiling water and cook uncovered til just pink, 2 to 3 minutes.
  • Drain shrimp, and discard water remnants.
  • Combine shrimp with marinade, cover, and refrigerate overnight or up to 2 days.
  • Drain shrimp from marinade and serve.

Looking for something just a little differfent to make for a lovely appetizer? Man Oh Man are these GOOD! Everyone goes nuts over these tasty little morsels! If I am making this dish just for myself, I don't drain the shrimp. I let it marinate in the sauce in the refrigerator, and take out what I want and keep the rest in the refrigerator. They never stay in the refrigerator long though. Preparation time does not include the cleaning and deveining of the shrimp.

1 cup oil (I use Canola oil. Corn oil is fine)
1/3 cup ketchup
1/3 cup vinegar (I use plain apple cider vinegar)
1/2 teaspoon dry mustard
2 tablespoons Worcestershire sauce
2 tablespoons sugar
3 dashes salt
1 large onion, sliced thinly
1 lb shrimp (I prefer the medium-large to large size)
4 bay leaves

Steps:

  • Mix sauce with electric mixer about 5 minutes before pouring over shrimp.
  • Shell and devein shrimp. Cook shrimp in water until they just turn pink, 1-2 minutes. Don't overcook.
  • Put cooked shrimp, raw onion slices, and Bay leaves in a container.
  • Pour sauce over all. Fold gently to incorporate the sauce evenly.
  • Cover the container, and let it remain in the refrigerator at least 24 hours. (It is not necessary, but I do stir them once or twice in the 24-hour period. It is an excuse to sample one).
  • Before serving, drain the sauce. Put drained shrimp in serving dish.
  • Sprinkle with parsley flakes, if desired.
  • Serve with crackers.
