BLT SALAD BITES

1/4 cup mayonnaise
2 tablespoons plain yogurt
1 teaspoon chopped fresh chives
1 teaspoon fresh lemon juice
1/2 teaspoon Dijon mustard
Kosher salt and freshly ground black pepper
3 ounces pancetta, cut into small dice
1/2 cup cherry tomatoes, halved
2 tablespoons extra-virgin olive oil
1 tablespoon chopped fresh chives
1 teaspoon red wine vinegar
Sea salt and freshly ground black pepper
2 to 3 heads Little Gem lettuce (about 16 leaves)
1/4 cup grated Parmesan

Steps:

  • For the chive mayo: Mix together the mayonnaise, yogurt, chives, lemon juice, mustard, 1/4 teaspoon salt and 1/4 teaspoon pepper in a small bowl; set aside. (The mayo can be made a day ahead and refrigerated.)
  • For the BLT salad bites: Saute the pancetta in a skillet over medium-high heat until crispy, 5 to 7 minutes. Transfer to a plate.
  • Combine the tomatoes, olive oil, chives, vinegar, 1/2 teaspoon salt and 1/4 teaspoon pepper in a medium bowl. Let sit for 5 minutes.
  • Arrange the larger lettuce leaves on a serving platter. Spoon about 1 1/2 teaspoons of chive mayo onto the center of each leaf. Top with about 1 tablespoon of the tomato mixture and some crispy pancetta. Sprinkle with the Parmesan.

1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1/2 tsp. onion powder
1 pkg. (3 oz.) OSCAR MAYER Real Bacon Bits, divided
1 cup shredded lettuce
2 medium tomatoes, chopped (about 1 cup)
1 cup KRAFT Shredded Cheddar Cheese
round buttery crackers

Steps:

  • Mix cream cheese and onion powder. Spread onto bottom of 9-inch pie plate.
  • Sprinkle with 1/2 cup of the bacon bits; top with lettuce, tomatoes, shredded cheese and remaining bacon bits. Cover.
  • Refrigerate at least 1 hour. Serve with crackers.

8 slices of bread (cut 1/2" thick)
12 slices bacon
2 large ripe tomatoes (thickly sliced)
4 green lettuce leaves (rinsed and spun dry)
1 large avocado (or 2 small avocados pitted, peeled and sliced.)
salt and black pepper (to taste)
1/2 cup real mayonnaise
2 Tbsp sour cream
2 tsp yellow mustard

Steps:

  • Preheat oven to 400˚F. Place bacon on a foil-lined baking sheet in a single layer. Bake 18 to 20 minutes or until browned and crisp then transfer to a paper towel-lined plate to cool.
  • In a small bowl, combine sauce ingredients and set aside.
  • Lightly butter both sides of the toast and toast on a dry griddle or skillet over medium-high heat just until golden brown.
  • Arrange 4 slices of bread on a cutting board and spread 1 Tbsp of sauce over each toast. Add lettuce then tomato, bacon, avocado. Sprinkle salt and pepper over the avocado.
  • Spread 1 Tbsp sauce over the remaining toasted bread and place over the sandwich, sauce side down. Cut in half if desired and serve.

I have mad this many times to great reviews. I serve it with bread, or crackers. For the bread I just use the Pillsbury French Bread in a tube and after it is baked, I slice the bread thin, but you can slice it to your liking.

6 slices bacon, cooked, and crumbled (I use the cooked bacon, just a preference thing) or 1 (3 ounce) can bacon bits (I use the cooked bacon, just a preference thing)
1 cup sour cream
1 cup mayonnaise
3 plum tomatoes, seeded & chopped

Steps:

  • Combine all ingredients in bowl.
  • Stir until blended.
  • Cover and refrigerate 1 hour to blend flavors.
  • (This recipe may be prepared up to 3 hours ahead of time).
