FURR'S LIME JELLO SALAD



Furr's Lime Jello Salad image

Here is a fancy and fun green Jello salad with sweet lime flavor.

6 ounces Jello lime gelatin (2 small boxes)
2 cups boiling water
1 cup cold water
20 ounces canned crushed pineapple (drained )
16 ounces small curd cottage cheese
8 ounces Cool whip whipped topping
1/4 cup finely chopped pecans

Steps:

  • Place the lime gelatin in a large mixing bowl.
  • Add 2 cups of boiling water and stir until the gelatin is dissolved.
  • Add 1 cup cold water into mixture and stir to combine.
  • Add drained crushed pineapple, cottage cheese, and Cool Whip whipped topping.
  • Stir mixture until the mixture is smooth and blended. There should be no large lumps of the whipped topping.
  • Pour the mixture into a 9 x 13-inch pan.
  • Sprinkle chopped pecans on top.
  • Refrigerate until set.

1 can (8 ounces) crushed pineapple, undrained
1/4 cup lime gelatin powder
1/2 cup cream-style cottage cheese
1 cup whipped topping

Steps:

  • In a small saucepan, bring pineapple to a boil over medium heat. Remove from the heat; stir in gelatin until dissolved. Chill until slightly thickened, about 30 minutes. Stir in cottage cheese and whipped topping. Cover and refrigerate until thickened.

This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

1 cup boiling water
1 (6 ounce) package lime flavored Jell-O® mix
1 (20 ounce) can crushed pineapple, drained with juice reserved
1 (8 ounce) package cream cheese, softened
2 cups heavy cream
1 cup chopped pecans

Steps:

  • In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
  • Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
  • In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

1 (3 ounce) package lime Jell-O gelatin
1 (3 ounce) package cream cheese, cubed
1/2 pint whipping cream
1 (8 ounce) can crushed pineapple, well drained

Steps:

  • Dissolve jello in 1 cup hot water and pour into blender. Put blender on medium speed and add 1 cube of cream cheese at a time; blend until smooth.
  • Refrigerate until set (NOT FIRM).
  • Whip cream and add to jello along with the pineapple; mix well. Pour into mold and refrigerate.

2-3 raw carrots, shredded
1 large apple, shredded
1-2 ribs celery, finely chopped
1 large can mandarin oranges, drained
sour cream or mayo, for the top

Steps:

  • 1. Prepare jello per package directions in a large mixing bowl. Chill until jello begins to set. Add carrots, apple and celery to jello and mix well. Pour into sprayed mold or bowl. Chill until firmly set.
  • 2. Garnish with sour cream or mayonnaise. Top with mandarin oranges.

1 pkg lime jello
1 c hot pear juice
1 c sieved or pureed pears
1 pkg 3 oz. softened cream cheese
1 c heavy whipping cream

Steps:

  • 1. Dissolve 1 package lime jello in 1 cup hot pear juice. (Strain juice from canned pears and add enough water to juice to make one cup.) Juice can be heated in a glass measuring cup in the microwave.
  • 2. Puree the pears in blender. Add pureed pears to the softened cream cheese and blend to a smooth consistency using a mixer. Stir into jello.
  • 3. Whip the one cup heavy cream and fold into the jello mixture. Pour into mold, chill till firm, and unmold.
