18 ounces refrigerated cheese tortellini
1/4 cup unsalted butter
1 ounce cream cheese
2 garlic cloves (minced)
2 cups heavy cream
1 cup grated Parmesan cheese
Salt and pepper to taste
1/4 teaspoon crushed red pepper flakes
2 tablespoons parsley (chopped)

Steps:

  • Fill a stockpot with water and let it come to a boil. Then generously salt it and add 18-20 ounces of cheese tortellini. Cook for about 3 minute
  • In the meantime, melt 1/4 cup of unsalted butter in a large saucepan over medium heat.
  • Then stir in 1 ounce of cream cheese using a whisk.
  • Once the cream cheese is melted, add 2 minced garlic cloves. Stir for about 15 seconds.
  • Then pour in 2 cups of heavy whipping cream. Let the cream come to a simmer, then remove from the heat and stir in 1 cup of freshly grated Parmesan.
  • Season with salt and paper to taste. Lastly, add in 1/4 teaspoon crushed red pepper flakes and 2 tablespoons chopped parsley.

2 cups heavy cream, divided

Steps:

I looked everywhere for a good mushroom alfredo. I used to saute the mushrooms and add them in, but they just weren't as good as I hoped. After some experimentation I came up with this recipe for my Mother-in-Law's birthday party and it was unbelievable. Everyone loved it! I served it over tortellini, but generally I'll just serve it over wheat pasta noodles.

1/2 cup sweet butter (halved)
2 cups portabella mushrooms or 2 cups cremini mushrooms
2 -3 garlic cloves, minced
1 small white onion (optional)
4 cups heavy cream
1/4 teaspoon white pepper

1 cup mozzarella cheese
16 ounces thin spaghetti noodles (optional)

Steps:

  • Melt half the butter in medium saucepan over medium/low heat.

6 slices bacon
3 tablespoons olive oil
2 cloves garlic, minced
8 ounces mushrooms, sliced
½ teaspoon kosher salt
¾ cup white wine
1 ½ pounds refrigerated cheese tortellini
2 cups frozen peas
1 (15 ounce) jar Alfredo sauce
1 ½ teaspoons ground black pepper

Steps:

  • Add bacon to a large skillet over medium-high heat and cook until crispy, about 5 minutes. Remove from pan and set aside, reserving drippings in the skillet.
  • Reduce heat under skillet to low. Add olive oil and garlic to drippings in the skillet. Cook and stir until garlic becomes aromatic, no more than 1 minute.
