- Poach eggs. Take eggs out and reserve 4 cups poaching water.
- Mix flour in sour cream until smooth.
- Add to reserved poaching water with dill weed.
- Cook until thickened, stirring constantly. Spoon over poached eggs.

ORANGE ROUGHY WITH DILL SAUCE
I got this recipe from a community cookbook. It was so easy to prepare and very delicious. It is also healthy and low fat. A great weeknight dish.

Steps:
- Place fish fillets in a baking dish sprayed with Pam.
- In a bowl, mix mayo, lemon, lime and mustard.
- Add in dill and stir well.
- Spread all of the sauce over the fillets.
- Then sprinkle with the Parmesan.
- Bake at 375 for 20 minutes (or until fish is done), then broil for 5 minutes to get top crispy and brown.

- Melt butter and mix in flour, but do not let flour turn color.
- Cook for 2 minutes or so.
- Add stock and mix until smooth.
- Cook several minutes, until thickened.
- Remove from heat.
- Mix in cream, salt, dill, and lemon juice.
SALMON CAKES WITH DILL SAUCE

Steps:
- Flake salmon so no large lumps remain.
- Add egg, mayo, salt, pepper, dill and breadcrumbs. Mix well.
- Form into four cakes. Coat with additional breadcrumbs.
- Heat a skillet over medium heat and melt 1 Tbsp of butter. Add olive oil.
- Fry cakes in skillet until golden on both sides -- about 5 minutes per side.
- Remove cakes and to the pan, add 2 tbsp butter and 2 tbsp flour. Cook, stirring, until the roux is bubbly.
- Slowly add the milk/salmon juice, stirring all the while.
- Simmer 3 minutes, adding dill during last minute of cooking.
- Serve over fish cakes.
LIBBY'S GREEN BEANS
My mother-in-law's recipe. It has sour cream and Velveeta cheese in it. It's pretty good. You can use canned or fresh beans for this. Of course if you make it using canned beans, it will not take NEAR as long, lol.

- Cut green beans into small pieces. Cook beans until tender. If using canned green beans, bring them to a boil with their liquid.
- Mix the flour into the sour cream until smooth.
- Add the Velveeta cheese.
- Add to the beans, stirring constantly, until thickened.
