RASPBERRY LETTUCE SALAD

1 head red leaf lettuce
1/2-1 head bibb lettuce or 1/2-1 head boston lettuce
1 1/2 ounces arugula
1/3 cup toasted pine nuts
3/4 cup grated swiss cheese
4 -5 pieces bacon, cooked and crumbled
3/4 cup fresh raspberry
1/3 cup vegetable oil
1/3 cup raspberry vinegar
1/4 cup sugar

Steps:

  • Salad: Wash, dry, and gently tear all lettuces into pieces and divide among 4 salad plates. Evenly divide the pine nuts, cheese, bacon, and raspberries between the four plates. Top with raspberry vinaigrette to taste.
  • Vinaigrette: Combine all ingredients in a jar and shake well to combine.

1 cup fresh raspberries
1 cup sliced fresh mushrooms
1/2 cup julienned red onion
1/4 cup crumbled feta cheese
1/4 cup pecan halves, toasted
2 tablespoons 100% raspberry fruit spread, melted
2 tablespoons raspberry vinegar
2 tablespoons canola oil
1/8 teaspoon salt
Dash pepper

Steps:

  • In a large salad bowl, combine the first seven ingredients. In a small bowl, whisk the fruit spread, vinegar, oil, salt and pepper. Pour over salad and toss gently to coat.

1 small head iceberg lettuce (or your choice)
1 cup dried apricot, slivered
1/4 cup olive oil
3 tablespoons raspberry vinegar
1/2 tablespoon honey
1 minced small shallots or 2 tablespoons onions
salt and pepper
6 large cupped boston lettuce leaves

Steps:

  • Tear lettuce into bite-sized pieces. Place in bowl and sprinkle with apricots.
  • Process olive oil, vinegar, honey and onion or shallot.
  • Pour dressing over lettuce and toss. Season with salt and pepper.
  • Arrange over Boston lettuce on individual plates. Spoon lettuce/apricot mixture over.

1 1/2 tablespoons red wine vinegar (I used cider vinegar with great results)
1 teaspoon Dijon mustard

1/4 teaspoon black pepper
1/4 cup extra virgin olive oil (I used canola oil with great results)

Steps:

  • Mix together first 5 ingredients.
  • Whisk in olive oil and serve.

1 cup sugar
1 tablespoon cornstarch
2 cans (5-1/2 ounces each) apricot nectar
1 teaspoon vanilla extract
6 large red apples, coarsely chopped
8 medium firm bananas, sliced
1 medium fresh pineapple, peeled and cut into chunks (about 5 cups)
1 quart fresh strawberries, quartered
2 cups green grapes

Steps:

  • In a microwave-safe bowl, stir the sugar, cornstarch and apricot nectar until smooth. Microwave, uncovered, on high until slightly thickened, 4-6 minutes, stirring every 2 minutes. Stir in the vanilla. Refrigerate. , In a large bowl, combine the fruit. Drizzle with dressing; gently toss to coat. Cover and refrigerate until serving.
