Edith's Stuffing image

This is an all-time family favorite for any occasion. It's easy to make for stuffing a turkey or chicken.

¼ cup vegetable oil
3 onions, diced
3 (4 ounce) packets unsalted saltine crackers
1 (12 ounce) package coarsley crushed cornflakes
1 carrot, shredded
1 tablespoon salt
1 teaspoon ground black pepper
1 teaspoon garlic powder
2 eggs, lightly beaten
1 cup margarine
¼ cup water

Steps:

  • Heat the oil in a skillet over medium heat. Cook the onion in the hot oil until lightly browned; set aside and allow to cool.
  • Combine the crackers and cornflakes in a food processor; pulse until processed into crumbs; transfer to a large bowl. Add carrots, salt, pepper, and garlic powder to the crumbs. Mix in the eggs, onions, margarine, and water. Use your hands to mix until well integrated.
  • Pack lightly into uncooked turkey. Roast turkey as directed.
