Number Of Ingredients 12

1 cup sugar
1/4 cup cornstarch
1-1/2 cups water
3 large egg yolks, lightly beaten
1/4 cup lemon juice
1 tablespoon butter
1-1/2 teaspoons grated lemon zest
5 to 6 drops green food coloring
1 pastry shell (9 inches), baked
MERINGUE:
3 large egg whites
1/3 cup sugar

Steps:

  • In a large saucepan, combine the sugar and cornstarch. Stir in water until smooth. Cook and stir over medium-high heat until thickened and bubbly. Reduce heat; cook and stir 2 minutes longer. Remove from the heat. Stir a small amount of hot filling into egg yolks; return all to pan, stirring constantly. Bring to a gentle boil; cook and stir 2 minutes longer. Remove from the heat. Gently stir in the lemon juice, butter, lemon zest and food coloring until smooth. Pour hot mixture into crust., In a small bowl, beat egg whites until soft peaks form. Gradually beat in sugar, 1 tablespoon at a time, on high until stiff glossy peaks form and sugar is dissolved. Spread evenly over hot filling, sealing edges to crust. , Bake at 350° for 10-15 minutes or until the meringue is golden brown. Cool on a wire rack for 1 hour. Refrigerate for at least 3 hours before serving. Store leftovers in the refrigerator.

1 c semi-sweet mini chocloate chips
1 can(s) evaporated milk
1 Tbsp butter
1 prepared chocolate crumb pie crust
1 pkg instant vanilla pudding
1/3 c water
1 tsp peppermint extract
4 drops green food coloring
1 12oz container of cool whip
fresh mint (for garnish)

Steps:

  • 1. MICROWAVE 1 CUP, MORSELS AND 1/3 CUP MILK IN MEDIUM, UNCOVERED, MICROWAVE-SAFE BOWL ON HIGH FOR 45 SECONDS; STIR UNTIL SMOOTH. STIR IN BUTTER; POUR OVER CRUST. REFRIGERATE FOR 20 MINUTES OR UNTIL COOL TO TOUCH.
  • 2. BEAT REMAINING MILK, PUDDING MIX, WATER, PEPPERMINT AND 3 DROPS OF FOOD COLORING IN MEDIUM BOWL TILL COMBINED. GENTLY STIR IN 2 CUPS WHIPPED TOPPING AND ADDITIONAL DROP OF FOOD COLORING. SPOON OVER CHOCOLATE LAYER.
  • 3. REFRIGERATE FOR 2 HRS OR UNTIL SET. SPRINKLE WITH ADDITIONAL MORSELS. SPOON REMAINING WHIPPED TOPPING IN CENTER OF PIE.

This pie is an absolutely scrumptious dessert and very easy to make. Except for 10 minutes in the oven with the crumb crust, it's a no-bake pie. I got this from preparedpantry.com. Prep time does not include freezer time.

1 1/2 cups graham cracker crumbs (one packet)
1/4 cup sugar
4 tablespoons butter
1 (8 ounce) package cream cheese, softened
1 (14 ounce) can sweetened condensed milk
3/4 cup frozen limeade concentrate (not mixed with water)
green food coloring, as desired

Steps:

  • Mix the crumbs, sugar, and butter in a 9" springform pan. Mix until the crumbs have absorbed the butter and the mixture is uniform. Press the crumbs across the bottom of the pan and up the sides. Bake for 10 minutes at 350*.
  • In a medium bowl, beat the cream cheese until soft. Add the sweetened condensed milk and beat until smooth, light, and fluffy. Add the limeade concentrate and continue beating until smooth. Add the food coloring. Poor into pie shell and place in the freezer. Serve when nearly frozen, garnished with whipped cream.

This just came in an email from Sparkrecipes.com, and I am intrigued enough that I am posting for safekeeping. Sounds like a cool and delicious treat for the upcoming hot summer months! The recipe didn't come with a chill time, so I am taking a guess here. I am also guessing as to the size of the box of pudding; that was not listed, either. Please let me know what size you use if you try this! I imagine this might also be delicious frozen!

1 reduced fat graham cracker crust
8 ounces fat-free whipped topping, thawed
1 (3 1/2 ounce) box pistachio pudding mix
20 ounces crushed pineapple with juice

Steps:

  • Mix thoroughly the whipped topping, pudding powder and drained pineapple. pile into crust, chill (I would guess 4 hours or so) or freeze and enjoy!
