2 teaspoons olive oil
1 head cauliflower, chopped into small florets
2 carrots, chopped
2 cups boiling water
1 cube vegetable bouillon
1 (14 ounce) can reduced-fat coconut milk
1 cup red lentils
1 teaspoon garlic powder
1 teaspoon dried onion flakes
1 teaspoon curry powder
1 teaspoon paprika
1 teaspoon ground turmeric
½ teaspoon ground cumin
1 bunch kale leaves, stems and inner ribs discarded, leaves coarsely chopped

Steps:

  • Heat olive oil in a large pot over medium-high heat. Add cauliflower and carrots; saute until softened, 7 to 8 minutes.
  • Pour boiling water and vegetable bouillon into a bowl and stir until dissolved. Add broth and coconut milk to cauliflower mixture. Bring to a boil.
  • Stir lentils, garlic powder, onion flakes, curry, paprika, turmeric, and cumin into the pot. Cover and let simmer until lentils are fully cooked and tender, about 20 minutes. Stir in kale and let sit over low heat for 5 minutes. Remove from heat and serve.

2 teaspoons coarse salt
1 recipe Quick Curry Powder
12 ounces red lentils
2 tablespoons unsalted butter
1 onion, cut into 1/2-inch dice
4 cloves garlic, minced
1 tablespoon freshly grated ginger
1 butternut squash (about 1 1/2 pounds), peeled, seeded, and cut in 1/2-inch pieces
Two 14 1/2-ounce cans low-sodium canned, or homemade, chicken stock, skimmed of fat
2 cups water

Steps:

  • Combine salt and curry powder; set aside. Rinse lentils; set aside. Heat butter in a large saucepan over medium heat. Add curry mixture; stir until fragrant, about 1 minute. Add onion, garlic, and ginger; cook until translucent, about 4 minutes. Add squash; cook until just beginning to soften, about 5 minutes. Add stock and water. Bring to a boil; reduce to a simmer. Cook until squash is tender, about 10 minutes. Stir in lentils; cook until soft, 10 to 15 minutes. Serve hot.

This is a modification of a soup recipe I learned in a vegan cooking class. I've tinkered with it quite a bit over the years, and it's quite different from the original now. It can be made as a curry or a soup, depending on the amount of liquid used. When I make it as a curry, I often double this recipe and serve it over recipe #284073. Use onion if you can't find fennel, or to ramp up the spiciness. To prepare fennel bulbs, cut off stalks and strip outer layer off bulb before chopping. Freezes well.

1/2 cup lentils
2 cups water
2/3 cup water (for soup version only)
1 teaspoon turmeric
1 teaspoon sea salt
1 tablespoon olive oil
1 pinch asafoetida powder (hing)
1/3 teaspoon cumin seed
1/3 teaspoon mustard seeds
1/3 teaspoon sesame seeds
1/4 teaspoon mild cinnamon
2 dried hot peppers
1 garlic clove, minced
1 cup fennel bulbs, chopped fine or 1 small white onion, chopped
3 medium tomatoes, chopped
1 small jalapeno pepper, cored, seeded and minced fine
2 tablespoons fresh cilantro, chopped or 4 teaspoons dried cilantro
1 tablespoon brown sugar or 1 tablespoon maple syrup
2 tablespoons unsweetened coconut, shredded
1 teaspoon cumin powder
1/2 teaspoon coriander

Steps:

  • In a large saucepan, simmer lentils in 2 cups water for 30 minutes or until soft. Remove from heat.
  • Combine lentils and their cooking liquid with turmeric & salt in a blender or food processor. Blitz 10-15 seconds or until fairly smooth. Return to saucepan.
  • Add cilantro, coconut, brown sugar, cumin powder, coriander, cayenne, , cinnamon and garam masala. Stir well. Cover and set aside.
  • In a large frying pan or skillet, heat the oil.
  • Add hing, seed mixture and hot red peppers. Sauté until the seeds begin to pop. This will only take a few seconds!
  • Add the fennel, garlic and jalapeño, sauté until halfway to soft. Add tomatoes, continue sautéing until fennel is soft and tomatoes are hot and beginning to lose their shape. Remove from heat.
  • Add fennel/tomato mixture to lentil mixture in saucepan. Stir well. For soup, add the extra 2/3 cup water. Cover and cook on low heat 15 minutes. Remove hot red peppers before serving.

1 jalapeno pepper, seeded and roughly chopped

3 cooking apples (such as McIntosh or Fuji), peeled, cored and roughly chopped
2 teaspoons curry powder
1 13.5-ounce can light coconut milk
Kosher salt
4 cups low-sodium chicken broth
1 cup red lentils, picked over and rinsed
1/2 pound skinless, boneless chicken breasts, cut into 3/4-inch pieces

Steps:

  • Pulse the scallions, jalapeno, ginger, cilantro and garlic in a food processor until chopped. With the motor running, add the apples, a few pieces at a time, until chopped.
  • Cook the curry powder in a Dutch oven or large pot over medium-high heat, stirring, until lightly toasted, about 1 minute. Whisk in the coconut milk until smooth; cook until reduced by half, about 5 minutes. Add the apple-scallion mixture and 1/2 teaspoon salt. Cook, stirring, until thickened, about 5 more minutes.

Steps:

1 tablespoon fresh minced ginger

Steps:

  • Heat the olive oil in a medium saucepan over medium heat. Add the onion and cook until translucent and beginning to brown, 7 - 8 minutes. Add the garlic and cook, stirring, for another minute.
  • Add the vegetable broth, lentils, curry paste, ginger, coriander, and salt. Increase heat to medium-high and cook, stirring, until the soup comes to a boil. Reduce heat to medium-low and cover. Simmer for 25 - 30 minutes, until lentils are tender.

3 celery ribs, sliced

1 tablespoon garam masala

Steps:

  • Heat coconut oil in a heavy-bottomed large soup pot on medium until a drop of water sizzles in it; be careful not to let the oil smoke.
  • Add garlic and saute for 1 min, stirring.
  • Continue to stir fairly frequently as you add more veggies, and keep the lid on in between stirring. Add onion and saute 5 minute Add carrots and celery and saute another 5 minute Add the cauliflower, potato and kale, and saute another 5 minute

  • Heat the coconut oil in a large saucepan over medium heat until melted.

  • Peel and clean shrimp, marinate in pinches of cumin, turmeric, curry powder, cayenne, Sriracha, salt, pepper, and extra-virgin olive oil. Rinse green and red lentils, set aside. Steps:

  • 1. Fry onions in olive oil until beginning to brown.
  • 2. Add garlic, celery and carrots and cook until beginning to soften.
  • 3. Add spices and cook until fragrant.
  • 4. Add potatoes, lentils, tomato juice, mustard and bouillon and water to cover by a couple of inches (about 1 cup - if it is too thick you can always add more water.).
  • 5. Simmer until potatoes are soft and lentils are beginning to break down, about 1/2 hour.

1 onion , chopped
2 carrots , grated
140g red lentils
1l hot vegetable stock
500g pack bread mix
1 tbsp curry paste

Steps:

  • Heat oven to 220C/200C fan/gas 7. For the rolls, make up the bread mix following pack instructions, then roll out to a 30 x 40cm rectangle. Spread over the curry paste, then roll up, starting with the longest edge, like a roly poly. Cut into 8 slices and transfer to a lightly oiled baking sheet. Bake for 20-25 mins or until golden and cooked through.
  • Meanwhile, make the soup. Fry the curry paste and onion in a large pan for 2 mins until fragrant. Stir in the carrots and lentils and mix to coat in the curry paste. Cook for 2 mins, then pour in the stock and simmer for 20 mins until the lentils are tender. Whizz with a stick blender until smooth, add some seasoning and serve with the curry pinwheels.

1/2 teaspoon red pepper flakes
1 cup carrots, diced
1 cup diced red pepper
5 cups diced sweet potatoes
14 ounces coconut milk
2 cups dried lentils, washed
8 cups vegetable stock
1 lime, juiced
1 bunch cilantro, minced
1/4 cup tamari
salt and pepper to taste
sugar to taste (see headnote)

Steps:

  • In a large stock pot or Dutch oven, saute the red onion, garlic, and ginger in the olive oil for about 15 minutes, until the onions are translucent and soft. Add the curry powder, hot pepper, carrots, bell pepper, and sweet potatoes. Sauté for 5 to 10 minutes, until the carrots and bell pepper are crisp tender. Add the coconut milk, lentils, and vegetable stock. Simmer, covered, until the lentils are done and the sweet potatoes are tender, about 45 minutes. Add the lime, tamari, and cilantro, and stir to combine. Add salt and pepper to taste, and sugar if needed (see note).

Juice of 1 lime
1/4 cup heavy cream-- (can use cocoanut milk)
Salt to taste
Garnish:
1/4 cup sweetened, shredded coconut, toasted
1/4 cup dry roasted peanuts, coarsely chopped
2 T. scallions, coarsely chopped
2 T. coarsely chopped fresh mint leaves

Steps:

  • DIRECTIONS: Saute onion in melted butter in a large saucepan over medium heat, 3-5 minutes. Add garlic, ginger, curry powder, red pepper flakes, and sugar; saute about 1 minute. Add broth, lentils, and lime juice. Simmer, uncovered, until lentils are soft, 15 - 20 minutes. Remove soup from heat. Stir in cream and salt. Garnish soup with coconut, peanuts, scallions, and mint.

1 large onion
2 cloves garlic
1 tbsp fresh ginger
2 tbsp tomato paste
4 cups vegetable broth
1 can coconut milk
1 pound green lentils
3 cups vegetables (we used broccoli, carrots & snap peas- kale or spinach also works great)
Salt & pepper
Fresh cilantro, avocado, greek yogurt (optional, for toppings)

Steps:

  • 1. In a stockpot, heat the vegetable oil over medium heat and add the onion. Stir until translucent, about 5 minutes. Add garlic and ginger until fragrant, about 2 minutes. 2. Add tomato paste & RawSpiceBar's Punjabi Garam Masala spices and cook until fragrant, about 1 minute. 3. Add vegetable broth, coconut milk and lentils. Season with salt and pepper. Cover and bring to a boil, then simmer on low heat for 20 minutes. 4. Add chopped vegetables (if adding spinach or kale, add right before serving), then simmer on low heat for another 10-15 minutes, until the lentils and vegetables are both tender. 5. Serve with toppings of choice. We love topping with fresh cilantro, a dollop of yogurt and a few slices of avocado. Enjoy!

I went on a camping excursion and everyone chipped in with fresh produce to have a community stew. This is what happened in one of the pots, well the best i can to recreate it anyhow. I did not make this at the camp out but asked what the lady did. To the best of my memory this is as good as it gets. This came out tasty but probably way less curry than she added. This was my first time to use curry in my cooking so I went very light with it because it is not my favorite flavor. I hope you guys like this I think it is a nice summer soup.

16 ounces lentils
2 yellow squash
2 zucchini
1 lb mushroom
1 medium sweet onion
1 medium red onion
4 garlic cloves
5 carrots
1 (15 ounce) can corn
2 large sweet potatoes
2 teaspoons curry
3 lemons
vegetable stock or chicken stock
sea salt & freshly ground black pepper

Steps:

  • cut sweet potatoes into coins about 1/2" thick then quarter them, cut up carrots and throw into pot
  • Chop the rest of the veggies, I did the squash like the taters.
  • add liquid and half of both onions and garlic salt and pepper and squeeze one lemon into the pot.
  • boil until tender (about an hour).
  • add all other ingredients and squeeze the juice from the other two lemons.
  • cover but tilt lid so steam can escape some.
  • 20 minutes and soup's on!

1/4 cup extra-virgin olive oil
5 to 6 cloves garlic, finely chopped or grated
1 small carrot, peeled and finely chopped
1 small chile, seeded and finely chopped
1 large shallot, finely chopped
1 1/2 cups yellow, red or green lentils
Salt
2 rounded palmfuls curry powder blend or Ras el hanout
1 quart chicken or vegetable stock-in-a-box
2 to 3 cups water
1 bundle farm spinach, trimmed, washed and dried, coarsely chopped
Naan bread
2 tablespoons butter, melted

Steps:

  • Heat a soup pot over medium-high heat. Add the extra-virgin olive oil, 4 turns of the pan, the garlic, carrot, chile and shallot and cook until the mixture softens, about 2 to 3 minutes. Stir in the lentils and toss to coat in the oil, season with salt, to taste and curry spices or Ras el hanout. Add the stock and water to the soup and bring to a boil over medium heat. Reduce the heat and simmer until lentils are tender, about 40 minutes. Puree with an immersion blender into a smooth soup. Season with salt, if needed. Cool completely and store in the refrigerator for a make-ahead meal.
  • Reheat the soup over medium heat and stir in the fresh spinach until wilted. Heat the naan on a griddle pan with a few drops of water until crisp and hot on each side, then brush liberally with melted butter.
