SIMPLE THAI-STYLE LEMONGRASS SHRIMP SOUP



Simple Thai-style Lemongrass Shrimp Soup image

You won't believe how easy and good it is. Try this and you may never be able to eat a shrimp soup in a Thai restaurant again. This is a blend of two recipes from a really good Thai cookbook, adapted to use easier-to-find ingredients (as recommended in the book, ginger instead of galangal, lime juice instead of lime leaves) and simplified a little. You can make it also with thinly sliced chicken breast instead of shrimp if you add the chicken about the time you add mushrooms and tomatoes and cook everything for a bit longer.

1 stalk lemongrass
6 slices gingerroot
1 lime
2 small red chilies
4 cups water
4 tablespoons fish sauce
1 teaspoon chili paste with garlic
6 ounces tomatoes, cut into chunks
4 ounces mushrooms, sliced (I use white or baby bella)
25 small cooked shrimp
2 tablespoons cilantro

Steps:

  • Cut off the dry end and a few top leaves of the lemongrass stem.
  • Bruise the stem with the handle of a knife and cut into 1-inch long pieces.
  • Reserve.
  • Bruise the chilies, cut them in half, scoop out and discard the seeds.
  • Reserve the chilies.
  • Bring the water to boil.
  • Add lemongrass and ginger, and squeeze out half the lime into the water.
  • Boil 2-3 minutes.
  • Add fish sauce and chili-garlic paste.
  • Cook for another minute.
  • Add tomatoes and mushrooms.
  • Cook for 2-3 minutes (or longer, until it boils and the tomatoes start to fall apart).
  • Squeeze the other half of the lime into the soup.
  • Take off the heat.
  • Add the chilies and let stand a few seconds, then add the shrimp.
  • Garnish with cilantro and serve immediately.
  • Leave lemongrass, ginger and chilies in the soup and either try to pour the soup without them, or, better, pour the soup with chunks of lemongrass and ginger in it and warn your guests not to eat these.
  • They do add flavour when left in the soup while you eat it.

THAI SHRIMP AND LEMONGRASS SOUP (TOM YUM SOUP)

This is the best Tom Yum Soup recipe. To maximize the citrus flavor of the fresh lemongrass, crush the base and stem with the flat side of a chef's knife before slicing or before adding it to a recipe. If using larger pieces of lemongrass, remove them before serving.

4 clove garlic, coarsely chopped
2 green serrano chilies, seeded and chopped
3 Tbsp fresh cilantro, chopped
1 1/2 tsp peppercorns, coarsely ground
8 to 10 fresh shiitake mushrooms
3 lemongrass stalks
4 fresh galangal slices, each 1/4-inch thick
2 Tbsp peanut oil (or canola oil)
4 medium shallots, thinly sliced
8 c low-sodium chicken stock
1 1/2 tsp finely grated lime zest
1/4 c fish sauce
1/4 c fresh lime juice
1 Tbsp chopped palm sugar or brown sugar
1 lb shrimp, peeled and deveined
1/4 c shredded fresh thai basil (for garnish)
1/4 c shredded fresh cilantro (for garnish)

Steps:

  • 1. In a mortar, combine the garlic, chilies, cilantro stems and pepper, and grind together with a pestle until a thick paste forms, adding 1 Tbs. water if needed to facilitate grinding. Alternatively, combine all the ingredients in a mini food processor and process to a paste. Set the chili paste aside.
  • 2. Remove and discard the stems from the mushrooms. Thinly slice the caps. Trim and crush the lemongrass stalks. Smash the galangal slices with the side of a chef's knife.
  • 3. In a stockpot over high heat, warm the oil. Add the mushrooms and sauté until they begin to brown, about 2 minutes. Stir in the lemongrass, galangal slices and shallots, and sauté until fragrant, about 2 minutes more.
  • 4. Pour in the stock, add the lime zest and bring to a boil. Reduce the heat to medium, stir in the chili paste and simmer for 3 to 4 minutes. Add the fish sauce, lime juice and palm sugar and stir to mix well. Simmer for 5 minutes to allow the flavors to develop.
  • 5. Just before serving, stir in the shrimp. As soon as they begin to turn color and are opaque, after about 3 minutes, remove the soup from the heat. Ladle the soup into individual bowls, garnish with the shredded basil and cilantro, and serve immediately.

3 1/2 cups unsweetened coconut milk
1/4 cup plus 2 tbsp dark brown sugar
1/4 cup Asian fish sauce
1/4 cup tamarind concentrate
6 fresh kafir lime leaves
3 tbsp fresh lime juice
salt and fresh ground pepper
3/4 lb medium shrimp, shelled and deveined

Steps:

  • 1. In a blender, combine the chiles, lemongrass, garlic, ginger, shallot, and 1/4 cup of water and puree until smooth. 2. In a medium saucepan, heat the coconut oil. Add the lemongrass puree and cook over moderately high heat, stirring, until fragrant, about 2 minutes. Whisk in the coconut milk, borwn sugar, fish sauce, tamarind, lime leaves, and 1 1/2 cups of water and bring to a gentle boil. Simmer over low heat, stirring occasionally, until the soup is flavorful and slightly reduced, about 15 mins. 3. Stir the lime juice into the soup and season with salt and pepper. Add the shrimp and simmer until slightly curled and just cooked through, about 1 minute. Ladle the soup into bowls, add the rice noodles and serve.

1 cup rice, prepared in a rice cooker or saucepan as directed
¾ pound medium shrimp, peeled and deveined, shells reserved for the broth
3 stalks lemongrass, with the green stalks cut off from the white bulb and reserved--and with the tender inner heart of the bulb pounded flat, minced finely, and set aside
4 cups water
1 15-ounce can straw mushrooms, drained
1 small tomato, peeled and cut into thin wedges
1 lime, grated and juiced
Garnishes:
2 green onions, sliced on the diagonal
1½ cups bean sprouts
3 Tablespoons lime juice
4 Tablespoons nuoc mam (fish sauce)
chili oil or Vietnamese chili-garlic sauce, to taste and to pass separately

Steps:

  • Cook the rice as directed, and reserve. Ready the garnishes and set aside. Prepare the broth by bringing 4 cups of water to a boil with the shrimp shells, then adding the lemongrass stalks and removing from heat. After a minute, strain out the shells and stalks. When ready to serve, add the mushrooms, lime juice and grated peel, minced lemongrass heart, and tomato to the broth. Bring to a boil, then reduce to medium and simmer for about 5 minutes. Add the shrimp and simmer for 2 more minutes. Pour into a tureen. Stir in the garnishes. Take to the table and serve at once, passing the rice and chili sauce separately.

6 cups low-fat reduced- sodium chicken broth
3 stalks fresh lemongrass
1 grated lime, zest of
2 tablespoons freash lime juice
1 cup 'lite' coconut milk
1 lb large shrimp, peeled and deviened
3 tablespoons minced cilantro
1 red chili, minced

Steps:

  • Heat the chicken broth in a large saucepot over medium-high heat. Remove any dried leaves of each stalk of lemongrass. Cut three pieces from the bottom of each stalk into 2-inch lengths. Discard the upper two thirds of each stalk.
  • Add the lemongrass pieces and lime zest to the chicken broth. Bring to a boil, lower the heat, and simmer for 10 minutes. Strain the broth, and return the broth to the saucepot. Add the lime juice and coconut milk. Add the shrimp, and simmer on medium heat for 4 minutes until the shrimp is cooked through.
  • Garnish each bowl with some of the cilantro and red chili.

CHILIED LEMONGRASS SHRIMP SOUP

2 pounds medium-size shrimps, shells on
1 tablespoon sweet butter
2 stalks lemongrass
2 shallots, peeled and minced
white onion, minced
1 large carrot diced
teaspoon turmeric
1 small chili pepper, cut in half
1 inch piece of ginger, peeled and minced
4 cups chicken broth
1/4 pound shiitake mushrooms, stems discarded, sliced thinly
Kosher salt and freshly ground pepper to taste
1 large slice tofu
1 bunch cilantro
1 lime, cut into thin disks

Steps:

  • Shell and devein the shrimps, reserving all shells. Cut the shrimps in half lengthwise and refrigerate. Warm the butter in a large soup pot over high heat. Add the shrimp shells and, stirring constantly, continue to cook over high heat for 5 minutes.
  • Cut the lemongrass stalks into 3 pieces and use the back of the knife to smash the thick end. Add to the shrimp shells, along with the shallots, onion, carrot, turmeric, chili pepper and ginger. Add 2 cups of cold water, reduce the heat to medium and continue cooking for 5 minutes. Add the chicken broth and simmer for 1 hour.
  • Drain the broth, discarding the solids and reserving the broth. Return the soup pot to medium heat. Add the remaining butter and the mushroom slices. Stir and cook for 5 minutes until the mushrooms begin to soften. Add the broth and simmer for 30 minutes. Taste and adjust seasoning with salt and freshly ground black pepper.
  • Cut the tofu into -inch cubes and add these, along with the shrimps, to the soup. Simmer for 5 minutes. Serve garnished with lemon slices and branches of cilantro and basmati rice on the side, which can be spooned directly into the soup at the table.
