Supposedly the traditional drink at the 19th Hole in Australia, I think you're more likely to find this drink at a pub. Summery and simple, yet elegant and "special" enough for a special occasion.

5 drops angostura aromatic bitters
30 ml lime cordial or 30 ml fresh lime juice
lemon squash, to top (eg Solo, or Soda water or Lemonade if you prefer)
ice

Steps:

  • Rim the inside of a glass with 5-6 dashes of Angostura aromatic bitters.
  • Swirl until the glass is evenly coated with Angostura aromatic bitters then add ice.
  • Fill glass with Lemon squash or solo and a shot of lime cordial and/or fresh lime juice. ( For a low-cal version fill glass with soda or use diet drinks).
  • Garnish with a slice of lemon and/or lime.

6- 8 dashes of Angostura Bitters
180ml Lemon-lime soda (or lemonade)
1 Fresh Lime (or 15ml lime cordial)
Sliced lemon or lime for garnish
Ice cubes

Steps:

  • Fill glass with ice
  • Pour lime juice and lemonade into a glass and stir lightly
  • Add dashes of bitters to the top
  • Garnish with a lemon or lime slice/wedge and serve with a straw so the drinker can mix the bitters to their preference

Cordial in Australia is a concentrated non-alcoholic drink mix, I love lemon, lime & bitters and found this in an old issue of BH&G.

Yield 3 cups approx

Number Of Ingredients 7

2 cups fresh lemon juice
1 cup fresh lime juice
3 slices lemon rind
3 slices lime rind
2 cups white sugar
1 teaspoon Angostura bitters
of fresh mint, finely chopped (optional)

Steps:

  • Combine lemon & lime juice, rind & sugar in a saucepan, stir over low heat until sugar dissolves.
  • Add a small bunch of mint if using & simmer the syrup for approx 10 minutes.
  • Remove from heat & pour through a sieve, allow to cool and add bitters, stir until well combined.
  • Pour into sterilised bottles & refrigerate.
