LEMON, GARLIC, AND ASPARAGUS WARM CAPRESE PASTA SALAD
There are so many reasons I love this recipe. Caprese salad has to be one of my favorite summertime treats. There is nothing like a summer tomatoes' sweetness mixed with the peppery sweetness fresh basil offers, the zing of lemon and richness of garlic. It is SO good.

Steps:
- Before peeling asparagus, start on the marinade. In a heavy saucepan, cook onions slowly in the olive oil with garlic, zest, herbs, and bay leaf. When tender (about 10 minutes), add peppercorns, wine, lemon juice, water, and salt. Cover and simmer slowly for about 20 minutes.
- Peel asparagus. Lay in a flameproof casserole dish and pour marinade over so asparagus is just covered with liquid (more water may be added if needed). Bring to a boil, cover, and simmer slowly for 20 minutes, or until asparagus is tender. Take out asparagus and arrange on serving platter. Boil down the cooking liquid until lightly syrupy and spoon over the asparagus. Sprinkle with parsley.

GRILLED ASPARAGUS WITH GARLIC AND LEMON
Steps:
- Prepare asparagus by trimming the tough bottom portion from the stalks, and then rinsing in cold water to clean. Blanch the asparagus stalks, by placing a few at a time, in boiling salted water for two minutes. Remove and immediatly immerse asparagus in an ice bath to stop the cooking process. After cooling, place on paper towels to dry completly. Place asparagus on top of a piece of foil, that is large enough to loosely wrap all of the asparagus. Drizzel the oil and lemon juice over the top of the asparagus, and thoroughly mix in the minced garlic and shallots. Wrap the asparagus completly in the foil completely sealing the package. Prepare the grill to medium high heat. Place the sealed packet of asparagus directly on top of coals, or gas burner for 3 minutes. (You should hear the sizzling from within the packet almost immediatley). Carefully turn the packet over and cook for another 3 minutes. Place the packet in an indirect cooking position on the grill, and carefully open the packet (which may have to be done with a knife). Close the grill cover and continue to cook for an additional 5 to 10 minutes or until the asparagus is al dente'. Remove asparagus from foil packet to serving dish and season with the gourmet salt and fresh ground pepper to taste. Garnish with lemon slices, toasted almonds and serve.

LEMON GARLIC ASPARAGUS PASTA
Number Of Ingredients 6
Steps:
- Bring a pot of water to a boil for the pasta. Once boiling, add the pasta and continue to boil until the pasta is tender. Reserve about 1/2 cup of the starchy cooking water, then drain the pasta and set it aside.
- While the pasta is cooking, prepare the asparagus. Remove the bottom 1/2 to 1-inch of the stems, or just the part that is tough and woody. Chop the remaining asparagus into 1-inch pieces.
- Place the asparagus in a large skillet and add about 1/2 inch water. Place a lid on the skillet and bring the water up to a boil. Let the asparagus steam and simmer for about 2 minutes, or just until it turns bright green and has become slightly tender (test with a fork). Drain the asparagus and return it to the skillet.
- Add the butter and minced garlic to the skillet with the asparagus and place it over medium heat. Sauté the partially cooked asparagus in the butter and garlic for about two minutes more, or until the garlic becomes soft and fragrant. Turn off the heat.
- Add the cooked and drained pasta to the skillet with the sautéed asparagus. Toss the pasta in the skillet until it is combined with the asparagus and coated with garlic butter. Top with a generous pinch of salt and freshly cracked pepper.
- Use a zester or small-holed cheese grater to zest the lemon onto the pasta. Once zested, slice the lemon in half and squeeze the fresh juice over the pasta. Toss the pasta until everything is well combined, adding a splash of the reserved pasta cooking water if it becomes dry. Taste the pasta and adjust the salt, pepper, or lemon if desired. Serve warm.
