LEMON CHICKEN TACOS
These tempting tacos are low in fat but full of zippy flavor. I often modify the recipe to our tastes by adding more tomato and green onion an a bit of cheddar cheese. It's a keeper!-Lisa Giegel of Spokane, Washington

Steps:
- Place chicken in a large resealable plastic bag; add 2 tablespoons lemon juice. Seal bag and turn to coat; refrigerate for 1-2 hours., In a large nonstick skillet, saute onions and garlic in oil until tender. Add the chicken, cumin, salt and pepper. Cook and stir for 4 minutes or until no longer pink., Remove from the heat; stir in the tomatoes, cilantro and remaining lemon juice. Spoon into tortillas; top with lettuce. Fold in half. Serve with salsa.

Steps:
- Place chicken in a large resealable plastic bag; add 2 tablespoons of lemon juice. Seal bag and turn to coat; refrigerate for 1-2 hours.
- In a nonstick skillet, saute the onions and garlic on medium heat in oil until tender.
- Add the chicken, cumin, salt and pepper.
- Cook on medium - high heat and stir for 5 minutes or until juices run clear.
- Remove from heat; stir in the tomatoes, cilantro and remaining lemon juice.
- Serve with salsa.
- Also good with shredded cheddar and sour cream (optional) on top.

Steps:
- 1. Heat lemon juice in skillet - Add chicken and heat through - Add salt and pepper to taste. Keep warm on "low" setting.
- 2. Lightly fry and fold tortillas - Drain thoroughly on paper towels
- 3. Add chicken to prepared tortillas.
- 4. Top with cheese, avocado, tomato and lettuce and your favorite salsa or taco sauce. Serve with cheese topped refried beans
