ONE-POT PASTA WITH BROCCOLI AND LEMON



One-Pot Pasta with Broccoli and Lemon image

Less is more in this quick and easy weeknight dinner. It calls for just five main ingredients (penne, broccoli, garlic, lemon, and Parmesan) and requires minimal cleanup.

Kosher salt and freshly ground pepper
1 pound penne
1 pound broccoli, head cut into florets (3 1/2 cups), stems peeled and thinly sliced (1 cup)
1 clove garlic, finely grated
1/3 cup extra-virgin olive oil
2 teaspoons finely grated lemon zest, plus 3 tablespoons fresh juice (from 1 lemon)
1/2 cup finely grated Parmesan (1 ounce), plus more for serving

Steps:

  • Bring a large pot of salted water to a boil. Add penne and cook 5 minutes. Add broccoli and cook until pasta is just under al dente and broccoli is crisp-tender and bright green, 3 to 4 minutes more. Drain, then add pasta and broccoli back to pot.
  • Toss with garlic, oil, lemon zest and juice, and cheese. Serve, topped with more cheese.

A quick and very tasty recipe from Fitness magazine. Everyone in my family loves this. The recipe is for one serving, but its easy to adjust.

4 ounces salmon
2 ounces dry whole wheat penne
1 1/2 cups frozen broccoli florets
4 tablespoons low sodium vegetable broth or 4 tablespoons water
1 tablespoon butter, melted
1 lemon, juice and zest of
1 garlic clove, minced

Steps:

  • broil or grill salmon for about 8 minutes per inch of thickness.
  • Cook pasta according to package directions.
  • Heat broccoli in microwave until warm, about 4 minutes.
  • Whisk together melted butter, broth or water, lemon zest and juice, and garlic.
  • Toss penne with broccoli and place cooked salmon on top.
  • Drizzle lemon-butter sauce over all.
