GREEN HERBED LEMON CHICKEN BURGERS WITH GOAT CHEESE



Green Herbed Lemon Chicken Burgers with Goat Cheese image

2 tablespoons olive oil
1/2 cup minced red onion
1 pound ground chicken
1 cup minced fresh basil
1/2 cup minced fresh parsley
1 tablespoon fresh oregano leaves, chopped
1/4 cup ricotta cheese
2 cloves garlic, minced
1 lemon, zested and juiced
Kosher salt and freshly ground black pepper
1/2 cup mayonnaise
4 brioche burger buns or hamburger buns
1/2 cup crumbled goat cheese
Arugula, for serving
Heirloom tomato slices, for serving

Steps:

  • Heat 1 tablespoon of the olive oil in a large nonstick skillet over medium-high heat and cook the onions until softened, about 3 minutes. Set aside to cool. Wipe out the skillet and reserve.
  • Combine the chicken, basil, parsley, oregano, ricotta, garlic, lemon zest, 1 teaspoon salt, 1/2 teaspoon pepper and the cooled onions in a large bowl. Mix well with your hands. Splash your hands with some cold water and mold the chicken mixture into 4 patties.
  • Combine the mayonnaise and lemon juice in a small bowl.
  • Heat the remaining 1 tablespoon olive oil in the reserved skillet and cook the patties until they're cooked through, 3 to 4 minutes on each side (see Cook's Note).
  • Meanwhile, toast the buns in a toaster or on a dry pan and set aside.
  • Spread the lemon mayo on each side of the buns. Place the bottom of the bun on a plate, top with the arugula, tomato, one patty, goat cheese and finally the top of the bun. Repeat with the remaining patties.

Olive oil (for brushing)
1 cup mayonnaise
1 1/4 cups chopped fresh basil plus 8 large leaves, divided
3 tablespoons chopped drained cornichons or dill pickle plus 1 1/2 tablespoons brine from jar
2 green onions, finely chopped
1 1/4 pounds ground chicken
4 1/2-inch-thick slices country white bread
4 1/3-inch-thick slices from large red or orange heirloom tomato

Steps:

  • Brush grill with oil; prepare barbecue (medium heat). Mix mayonnaise, 1 cup chopped basil, cornichons, brine, and onions in small bowl. Season basil mayonnaise with salt and pepper.
  • Mix chicken and 1/2 cup basil mayonnaise in large bowl. Using wet hands, shape chicken mixture into four 1/2-inch-thick patties. Sprinkle with salt and pepper. Brush bread with oil.
  • Grill bread until crisp and golden, about 1 minute per side. Transfer bread to plates. Grill burgers until firm to touch and cooked through, about 5 minutes per side.
  • Spread bread slices thickly with basil mayonnaise. Top each bread slice with tomato, 2 basil leaves, burger, and dollop of basil mayonnaise. Garnish with remaining chopped basil.

I came up with this recipe when I was trying to be cheap and healthy, and only use things I already had in my kitchen. Saffron isn't cheap, and I added it for flavor, but since it's expensive you can leave it out.

1 lb ground chicken
1 1/2 tablespoons sweet basil, dried
1 tablespoon black pepper, fresh ground
1 teaspoon sea salt
1 garlic clove, crushed
1 egg white
2 tablespoons lemon juice
5 -7 saffron strands
hamburger bun, whole grain
fresh basil
hamburger, toppings
olive oil

Steps:

  • Warm lemon juice. Add saffron threads. Let set aside to sit for at least 10 minutes until bright yellow.
  • Empty ground chicken into a mixing bowl. Add egg white, crushed garlic, black pepper, sea salt, and dried basil. Add the lemon juice/saffron mixture. Mix until well blended.
  • Separate the meat mixture into patties of desired size.
  • Add a small amount of olive oil to a pan or skillet and grill the ground chicken patties until cooked all the way through (you may want to use a meat thermometer).
  • Serve on toasted whole grain hamburger buns with fresh basil as a topping, along with any other hamburger toppings you desire.
