3 tablespoons butter, melted
1/4 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon lemon-pepper seasoning
4 cod fillets (6 ounces each)
2 tablespoons minced fresh parsley
2 teaspoons grated lemon zest

Steps:

  • Preheat oven to 400°. In a shallow bowl, mix lemon juice and butter. In a separate shallow bowl, mix flour and seasonings. Dip fillets in lemon juice mixture, then in flour mixture to coat both sides; shake off excess., Place in a 13x9-in. baking dish coated with cooking spray. Drizzle with remaining lemon juice mixture. Bake 12-15 minutes or until fish just begins to flake easily with a fork. Mix parsley and lemon zest; sprinkle over fish.

2 tablespoons lemon juice
1/4 teaspoon garlic pepper blend
1/4 teaspoon grated lemon zest

4 cod or haddock fillets (6 ounces each)
1/2 teaspoon seafood seasoning
1 tablespoon crumbled feta cheese

Steps:

  • In a small microwave-safe bowl, combine the butter, lemon juice, garlic pepper and lemon zest. Microwave, uncovered, on high for 45-60 seconds or until butter is melted. Stir in capers., Place cod in an ungreased 13x9-in. baking dish; sprinkle with seafood seasoning. Spoon butter mixture over fillets. Sprinkle with cheese. 1/4 c butter or margarine
2 Tbsp lemon juice
1/4 c all-purpose flour
dash(es) paprika
salt & pepper, to taste

Steps:

  • 1. Cut cod fillets into serving sizes.
  • 2. Melt butter in saucepan or microwave. Add lemon juice to melted butter.
  • 3. In another dish, mix together flour, salt, and pepper.
  • 4. Dip fish into butter/lemon mix, coating well on all sides.
  • 5. Dip buttered cod into the flour mix, coating well on all sides. Shake excess flour off of the piece of fish.
  • 6. Place coated cod fillets in an ungreased baking dish.

175g cooking chorizo , skin removed, cut into chunks
50g slightly stale breadcrumb
25g blanched almond , toasted and roughly chopped
zest ½ lemon
1 ½ tbsp olive oil , plus extra for greasing
6 boneless, skinless sustainable cod fillets (about 175g each)
6 tbsp good-quality mayonnaise
½ garlic clove , crushed
2 tsp lemon juice

Steps:

  • Tip the chorizo into a frying pan and cook over a medium heat until it releases its oil and becomes crisp in places. Meanwhile, make the aïoli: stir together the ingredients with some seasoning, then chill.
  • Put the chorizo and its oil in a food processor and pulse until broken into small chunks. Add the breadcrumbs, almonds, lemon zest, seasoning and half the olive oil, then blitz to a crumb.
  • Heat oven to 200C/180C fan/gas 6. Put the cod fillets on a lightly greased baking tray, then brush with the remaining oil. Heap the crumbs onto the fish and pat down so that the fillets are well covered. Let them firm up in the fridge for at least 20 mins.
  • When you're ready to cook, pop the fish in the oven for 10-15 mins, depending on the thickness of your fillets, until the flesh has turned opaque and the chorizo crumb is golden.

  • Adjust an oven rack to the middle position and preheat the oven to 450°F

3 -4 garlic cloves
3 ripe tomatoes
1 teaspoon lemon juice

  • Preheat oven to 350*F.
  • Grease a baking pan with some olive oil and place the fish fillets in it.
  • In a bowl chop and crush the tomatoes, lemon juice and add a pinch of oregano, 4 tablespoons olive oil, and 3-4 crushed cloves of garlic. Mix everything together well.
  • Pour some of the tomato mixture over each fillet and add some salt and pepper to taste.

1-1 1/2 lb cod filets, pollack, or haddock
1 1/4 c seasoned panko bread crumbs
1/4 tsp each salt and pepper
1 tsp dried parsley
1/4 tsp paprika
1/4 tsp oregano
1/2 tsp basil
2 Tbsp parmigiano-reggiano, grated
3 Tbsp butter melted
2 Tbsp or more of prepared pesto
BUTTER FOR DRIZZLING
2 Tbsp melted butter
SAUCE
1 Tbsp olive oil
1 1/2 Tbsp chopped garlic
1/8 tsp crushed red pepper flakes optional
3/4 c vegetable broth, white wine, or culinary broth. college in makes one . wine and herb.
1 Tbsp chopped green onion
4 Tbsp lemon juice( juice from 1 lemon)
4 Tbsp butter

Steps:

  • 1. Soak Cod in Milk for 30 minutes. This helps to sweeten the fish. You can skip this step if you want. Simply just rinse and pat dry the fish. Heat oven to 400 degree's. Take out all ingredients needed. Combine breadcrumbs, paprika, parsley, oregano, basil,salt, pepper and cheese together in a bowl. Toss crumbs with 3 TB melted butter.
  • 2. Place filets in a buttered casserole or pan. Place Skin side down. Divide and Spread pesto sauce over each fillet. You just want a very thin amount of pesto. Pesto a strong goes along way. Pat the breadcrumb mixture on top of the pesto onto the fish fillets.
  • 3. Melt the 2 TB butter and drizzle over fish. Place in oven uncovered. Bake about 20 minutes. Fish should flake when cut with fork.
  • 4. in a small pan. Add olive oil. Heat pan to medium high. Add the crushed cloves of garlic to the pan. Stir constantly until garlic is light golden brown. Do not let it brown to much. It sjould take less than 15 seconds. Uou want it to barely get brown. Remove from heat. Add green onion, and crushed red pepper if wanted.
  • 5. Stir in the wine or stock. Add the lemon juice. Cook and stir until sauce reduces to 1/2. I There won't be a lot of sauce after It reduces. Remove from heat. Add 4 TB's of chopped butter. Keep stirring until butter melts and sauce thickens.
  • 6. Remove fish from oven. Plate fish. Drizzle butter sauce around each serving.

  • Preheat oven to 400 degrees F. Mix lemon juice, olive oil, and melted butter in a shallow bowl. Set aside In another shallow bowl, mix all-purpose flour, spices, salt and pepper. Set next to the lemon juice mixture. Pat fish fillet dry. Dip fish in the lemon juice mixture then dip in the flour mixture. Shake off excess flour. Reserve the lemon juice mixture for later. Heat 2 tbsp olive oil in a cast iron skillet over medium-high heat (watch the oil to be sure it is shimmering but not smoking). Add fish and sear on each side to give it some color, but do not fully cook (about a couple minutes on each side) Remove from heat. To the remaining lemon juice mixture, add the minced garlic and mix. Drizzle all over the fish fillets. Bake in the heated oven for until it begins to flake easily with a fork (10 minutes should do it, but begin checking earlier). Remove from heat and sprinkle chopped parsley.

2 pieces of fresh cod or 2 pieces any flaky fish
3 teaspoons lemon juice, fresh
1 tomatoes, crushed I prefer KUMATO tomatoes above all others- they are very nice and intense with tomato flavor
3 -4 garlic cloves, crushed
1 teaspoon dill weed, if using dried herbs, rub between fingers first to release aroma
1 teaspoon parsley
1 teaspoon olive oil
3 tablespoons white wine
2 teaspoons olive oil
1 tablespoon butter, divided
1 -2 ounce Roquefort cheese, crumbled
2 lemon slices
2 pieces aluminum foil

Steps:

  • Preheat oven to 350°.
  • In a bowl, combine tomato, garlic, herbs, white wine, lemon juice, and 1 teaspoon olive oil.
  • Line a glass or ceramic baking dish (whatever size fits your pieces easily) with two pieces of foil, laid next to each other.
  • Use the rest of the olive oil to brush the foil all over before putting the fish inside.
  • Put one fish on each piece of foil.
  • Spoon tomato mixture over each piece until covered.
  • Lay a slice of lemon on each fish.
  • Dab a very little pat of butter on top of each fish.
  • Cover each piece into a little foil packet, but not too tightly.
  • Bake for 20 - 25 minute.
  • If fish is very full of liquid, drain as well as you can without removing the fish from the foil.
  • Open fish from foil so that the tops are exposed very well.
  • Crumble Roquefort cheese over the tops of the fish to cover lightly.
  • Salt and pepper to taste.
  • Broil fish on low under the broiler in your oven for another 10-15 minutes, or until a nice golden color appears on the fish, and the fish flakes well.
  • Remove from foil to plate.
  • Serve with lemon wedges.

Steps:

  • 1. Cut Fish into Serving Size Pieces.
  • 2. Mix Butter and Lemon Juice together
  • 3. In seperate Bowl, Mix, Flour, Salt and Pepper.
  • 4. Dip fish in Butter mixtue. Then Coat fish with flour Mixture.
  • 5. Place fish in ungreased baking dish (8X8X2 pan)
  • 6. Pour remaining Butter Mixture over the fish, Sprinkle with Paprika.
  • 7. BAKE @ 350 UNCOVERED in oven until fish flakes easily with fork. about 25-30 mi. depends on size of pieces of fish. Garnish with lemon, and serve wih Tartar sauce on the side. Menu Idea; Serve with Baked Taters, and Green Beans or Broccoli, or a cold Slaw.

44 cod fillets (6 ounces each)

Steps:

  • Preheat oven to 400°. In a shallow bowl, mix lemon juice and butter. In a separate shallow bowl, mix flour and seasonings. Dip fillets in lemon juice mixture, then in flour mixture to coat both sides; shake off excess. Place in a 13x9-in. baking dish coated with cooking spray. Drizzle with remaining lemon juice mixture. Bake 12-15 minutes or until fish just begins to flake easily with a fork. Mix parsley and lemon peel; sprinkle over fish. Yield: 4 servings.

1 tbl butter
24 Ritz crackers, crushed into coarse crumbs (about 1 cup)
2 tbl minced fresh parsley or dill or basil
3 tbl mayonnaise
2 small garlic cloves,1 tsp grated zest plus 1 tbl juice from 1 lemon
4 skinless cod fillets (about 2 lbs)
salt and pepper
lemon wedges for serving

Steps:

  • 1. Adjust oven rack to middle position and heat oven to 450 degrees. Greasse baking sheet with butter. Toss cracker crumbs and 1 tbl parsley (or dill or basil) together in medium bowl. Mix remaining 1 tbl herb, mayo, garlic, lemon zest, and lemon juice together in small bowl. 2. Pat fish dry with paper towels then season with salt and pepper. Place on buttered baking sheet, spacing pieces about 1/2 inch apart. Brush tops and sides of fish with mayonnaise mixture, then press cracker crumbs into mayonnaise. 3. Bake until crumbs are goldent brown and fish flakes apart with fork, about 15 minutes. Serve with lemon wedges.

5 garlic cloves, minced
1/4 cup parsley, chopped
5 tablespoons lemon juice
5 tablespoons olive oil
2 tablespoons butter, melted
1/3 cup flour
1 teaspoon ground coriander
3/4 teaspoon paprika
3/4 teaspoon ground cumin
3/4 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Preheat oven to 400.
  • Mix lemon juice, oil and butter in a shallow bowl and set aside.
  • In another shallow bowl, mix flour, spices, salt and pepper and set aside.
  • Pat fish dry. Dip in lemon juice mixture then flour mixture; shake off excess. Reserve the lemon mixture for later.
  • Heat 2 Tbl olive oil in oven proof skillet until shimmering but not smoking. Add fish and sear on each side to give it some color. Remove from heat.
  • Add minced garlic to remaining lemon juice mixture and drizzle over fish.
  • Bake until it begins to flake easily with a fork, about 10 minutes. Remove from heat and sprinkle with chopped parsley and serve immediately.
